2 tbsp butter 30 mL
1 tsp olive oil 5 mL
5 cups diced leeks (white part as well as 2 in./5 cm of the pale green part) 1.25 L
2 bay leaves
1/4 cup white wine 60 mL
1/2 tsp salt, divided 2 mL
2 lb. Atlantic salmon, skin on 1 kg
1/2 cup finely chopped fresh dill, loosely packed 125 mL
1/2 cup sour cream 125 mL
1 tbsp each lemon zest and juice 15 mL

Steps:

  • Place butter, olive oil, leeks, bay leaves, wine and 1/4 tsp (1 mL) salt in a skillet over medium heat. Cover and bring to a simmer until tender, stirring occasionally, 45 to 50 min., taking care not to scorch. Remove from heat, discard bay leaves, transfer leek mixture to a bowl to cool, then refrigerate for 15 min. Preheat oven to 350°F (180°C).
  • Place salmon, skin side down, on a parchment paper-lined rimmed baking sheet. Season with remaining salt and spread cooled leek mixture over salmon. Bake on middle rack of oven, 20 min. or until salmon is cooked through and flakes easily.
  • Meanwhile, prepare lemon sour cream. Mix together sour cream, lemon zest and juice and a pinch of salt. Sprinkle salmon with dill and cut into 8 equal portions and serve with lemon sour cream.

1 tablespoon fresh dill, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
12 ounces salmon fillets
2 tablespoons oil
2 leeks, white and green parts, cleaned and sliced

Steps:

  • Combine zest, dill, salt, pepper. Using 1 tablespoon oil, brush fish with oil and top with lemon-dill mixture.
  • Place salmon on pan and roast in 425 oven until cooked, about 15 minutes.
  • In skillet, saute leeks in remaining 1 tablespoon oil. Season with salt and pepper.
  • Transfer salmon to platter and top with leeks.

1 1/4 cups leeks, chopped
3 garlic cloves, minced
1 cup tomatoes, coarsely chopped
1/4 teaspoon kosher salt
1/4 teaspoon fresh coarse ground black pepper
1/4 cup dry white wine
2 (6 ounce) salmon fillets, skinned
3/4 teaspoon fresh dill, chopped

Steps:

  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add leek; sauté 3 minutes. Add garlic; sauté 2-3 minutes.
  • Add tomato, salt, and pepper; sauté 2-3 minutes.
  • Add wine and salmon; sprinkle with dill, and bring to a boil.
  • Cover, reduce heat, and simmer 8 minutes or until fish flakes easily when tested with a fork.

2 tablespoons butter
1 garlic clove, crushed
1 leek, thinly sliced
1 cup vegetable stock or 1 cup chicken stock
2 tablespoons fresh parsley, minced
salt and pepper
2 tablespoons chopped fresh dill
1 tablespoon olive oil
2 salmon fillets, skin on
2 cups Baby Spinach, packed
2 lemons

Steps:

  • Heat a saucepan to medium low and add a tablespoon of butter. Add garlic and saute until golden, 2-3 minutes. Add leeks and continue sauteing until soft but not browned, about 5 minutes. Turn the heat up the medium and add stock, parsley and a healthy amount of salt and pepper. Bring to a simmer and simmer for 5 minutes. Remove garlic, stir in dill, and taste for seasoning. Correct if necessary and keep warm.
  • Heat a saute pan to medium and add a tablespoon of olive oil, when hot add the other tablespoon of butter. Pat salmon dry with paper towels and put salmon in pan skin side down. Cook for 5-8 minutes or until cooked halfway through, flip and continue until salmon is medium rare about 30 seconds to 3 more minutes.
  • Put a cup of spinach on each plate and top with a salmon fillet and half the sauce.
  • Squeeze lemon juice over top and serve with an extra lemon wedge.

3 large leeks, white part only, thoroughly washed and cut into 1/4-inch slices
2 tablespoons water
1 tablespoon olive oil
1 teaspoon finely shredded lemon zest
2 teaspoons chopped fresh dill
4 salmon steaks, about 1/2 pound each
1/4 teaspoon ground pepper
2 tablespoons lemon juice
lemon wedge (for garnish)
fresh dill (for garnish)

Steps:

  • Preheat oven to 425°F In an ovenproof casserole dish large enough to hold all 4 steaks, combine leeks, water, olive oil, and lemon zest. Cover with aluminum foil and bake 20 minutes, stirring once half way through. Remove from oven, push leeks aside, and add steaks to the dish.
  • Spoon leeks evenly over the fish, season with salt, pepper, and lemon juice. Return to oven and bake, uncovered, until salmon is opaque, about 10 to12 minutes. To serve, divide the leeks onto four plates and top with the salmon steak.
