PAN-FRIED SALMON FILLETS WITH MANGO-AVOCADO SALSA

Pan-Fried Salmon Fillets With Mango-Avocado Salsa image

Delicious, quick and healthy meal full of good fats and tasty antioxidants! This recipe serves 8, but I usually halve it. Preparation time includes the hour of refrigeration that the salsa requires. Experiment with salsa ingredients to use those that you prefer - adjust salmon cooking time to achieve the doneness you desire. A family favorite!

Time 1h10m

Yield 8 serving(s)

Number Of Ingredients 13

6 tablespoons fresh lime juice
2 tablespoons honey
4 cups diced mangoes (1/4 inch cubes)
2 cups diced avocados (1/4 inch cubes)
1 1/3 cups minced red onions
2 tablespoons seeded and minced jalapeno peppers
salt
1 teaspoon ground cumin
1/2 teaspoon salt, plus more to taste
1/8 teaspoon cayenne, plus more to taste (optional)
32 ounces salmon fillets, in 8 pieces, skin and pin bones removed
1 tablespoon olive oil
black pepper (optional)

Steps:

  • To prepare salsa, whisk lime juice and honey in medium bowl until well combined. Add mango, avocado, onion, jalapeno and stir, gently, until well blended. Cover and refrigerate for an hour or more to let the flavors meld. Season with salt to taste. Serve either cold or at room temperature.
  • To prepare the salmon, mix cumin, 1/2 teaspoon salt and pinch of cayenne in a small bowl. Lightly film both sides of salmon fillets with olive oil. Sprinkle the spice mixture evenly over both sides.
  • Heat a nonstick skillet over medium-high heat. Cook the fillets until the outsides are lightly browned, 1-2 minutes per side. Lower heat to medium and cook until the salmon is a pale pink throughout, 2-3 minutes per side - depending on the thickness of the fillets.
  • Season with more salt, cayenne and black pepper to taste, if desired. Transfer each fillet to a plate. Top each with equal portions of salsa.

SALMON AND AVOCADO SANDWICHES

Salmon and Avocado Sandwiches image

What a great play of flavors - fresh salmon, fresh lime, smoked salmon, avocado and a bit of onion and tomato for back up all come together for a wonderfully messy, lush sandwich. Sandwiches and bruschette are a great way to serve salmon left over from the night before. Excerpted from Simply Salmon by James Peterson.

Time 15m

Yield 4 serving(s)

Number Of Ingredients 11

8 slices crusty French bread (or bruschette)
butter or extra virgin olive oil
4 salmon fillets, 1/4- to 1/2-inch thick (broiled, sauteed, or grilled)
salt
pepper
4 slices cold-smoked salmon (optional)
8 slices red onions
8 slices ripe tomatoes
4 pieces lettuce, preferably a crunchy variety such as romaine
1 ripe avocado, preferably Hass, peeled, pitted, and sliced
1/2 lime

Steps:

  • Toast the slices of bread. Butter 4 of the slices or brush them with olive oil on one side. If you didn't season the salmon when you cooked it, sprinkle it with salt and pepper.
  • Stack the salmon, smoked salmon (if using), onion, tomato, and lettuce on the 4 slices of buttered toast. Spread the avocado slices evenly over the other ingredients, squeeze a little lime juice over it, and season with salt and pepper. Cover with the remaining bread slices.

SALMON TACOS WITH LIME DRESSING

Salmon tacos with lime dressing image

Pack in the omega-3 with these barbecued salmon tacos served with avocado, tomato and lime yoghurt sauce. Kids will love assembling their own

Provided by Lulu Grimes

Categories     Dinner, Lunch, Supper

Time 25m

Number Of Ingredients 8

olive oil , for the foil
500g piece salmon fillet
8 soft corn tacos
2 limes , zested and juiced
200g natural yogurt
2 ripe avocados , peeled and cubed
10 cherry tomatoes , halved
1 small red chilli , deseeded and sliced (optional)

Steps:

  • Cut a piece of foil big enough to wrap the salmon in and brush with oil. Put the salmon on top, season and sprinkle with some of the lime zest and juice. Fold up the foil around the salmon so it all meets at the top and makes a handle to lift the parcel with.
  • Heat a barbecue until the coals are glowing white hot. Make sure the grill is set high above the coals and put the foil parcel on. Cook for 10 mins and then open it and have a look. The salmon should be opaque - if it isn't, wrap it up and continue cooking.
  • Wrap the tacos in foil and warm them at the side of the barbecue. Mix the remaining lime zest and juice with the yogurt and season. When the salmon is cooked, open out the foil and flake it into pieces. Serve the tacos with the salmon, tomato, avocado, chilli and sauce so people can stuff their own. Napkins are necessary.

SALMON FILETS WITH AVOCADO AND LIME

SALMON FILETS WITH AVOCADO AND LIME image

Categories     Fish     Low Carb     Quick & Easy     Wheat/Gluten-Free

Yield 2 people

Number Of Ingredients 7

2 Salmon Filets*
2 Limes
1 Ripe Avocado
1 Bunch Chives
3 TBSP Olive Oil
Salt and Fresh Ground Pepper
*This recipe is easily doubled or tripled. It is not really necessary to exactly double the oil though. And if necessary, a single bunch of chives can be stretched when the recipe is doubled without losing much flavor. Scallions can be substituted for the chives - but be sure to mince them very finely. Finally, salmon steaks can be used in place of filets - just be careful with the bones.

Steps:

  • Get enough salmon steaks or filets for the number of people you're serving. Squeeze lime juice over the salmon and salt very lightly. Let sit for about a half hour. Get half as many avocados as you have salmon filets. Dice. For every avocado add about one tablespoon olive oil and one teaspoon lime juice. [My family likes it a little heavier on the lime juice - so experiment. It's not a super strong lime flavor. It's kind of amazing how the avocado and salmon meld with lime.] Add a good amount of snipped chives. Lightly salt and add freshly ground pepper to taste. Stir and let rest while the salmon cooks. Coat salmon with olive oil. Broil, BBQ or pan-grill the salmon. Top each piece of salmon with the avocado-lime-chive mixture.
