GRILLED SALMON WITH SPICY MANGO SALSA



Grilled Salmon with Spicy Mango Salsa image

Toss diced mango with habanero, lime and cilantro for a spicy relish for gorgeous grilled salmon.

1 clove garlic
Kosher salt and freshly ground black pepper
2 tablespoons coarsely chopped fresh cilantro
1 tablespoon olive oil, plus more for oiling the grill grates
1 habanero chile, stemmed, seeded, and finely chopped
1 ripe mango, peeled, seeded and diced (about 1 1/4 cups)
2 limes, 1 juiced and 1 cut into wedges
2 scallions, thinly sliced
4 center-cut skin-on wild salmon fillets (about 6 ounces each)

Steps:

  • Preheat a grill to medium-high heat.
  • Crush the garlic clove, sprinkle with a pinch of salt, and mash into a coarse paste using flat side of a large knife. Mix the garlic paste with the cilantro, oil, habanero, mango, lime juice and scallions in a medium bowl. Season with salt and as much of the remaining habanero as desired for spiciness. Set aside.
  • Pat the fish dry and sprinkle with salt and pepper. Lightly oil the grill grates. Place the salmon, skin side-up, on the grill and cook until well-marked, 3 to 4 minutes. Turn the salmon and continue to cook until the fish is just cooked through, about 3 to 4 minutes more.
  • Serve the salmon with the salsa and a lime wedge.

Salmon With Salsa Fresca image

There was a time when the appearance of the first ripe tomatoes would have inspired me to make the southern Italian sauce of raw tomatoes, basil, garlic and olive oil. These days, I turn to a Mexican-style salsa fresca: tomatoes, white onion, chili and loads of cilantro and lime. I love salsa with fish, and since it is wild salmon season, the marriage seems opportune. Halibut and swordfish, whether grilled, broiled, roasted, or even steamed, are equally fine. Though the salsa is quick to prepare, it's best if allowed to sit for 15 to 30 minutes before serving. The tomatoes' juices will run, and the flavors will mingle. No more than an hour, though.

2 large fresh ripe tomatoes, or 3 or 4 ripe plum tomatoes, cored and diced
1/2 large white onion, peeled and minced
1/4 habanero or jalapeño chili, stemmed, seeded and minced, or to taste
1/2 cup roughly chopped cilantro or flat-leaf parsley leaves
Juice of 1 or 2 limes, to taste
Freshly ground pepper and salt to taste
1 salmon fillet, about 1 1/2 pounds, preferably with skin on
2 tablespoons neutral oil, like corn or canola

Steps:

  • Start a charcoal or gas grill; fire should be moderately hot and grill rack about 4 inches from heat source. Or, heat oven to 500 degrees.
  • Chop tomatoes and combine them in a bowl with onion, chili, cilantro, lime juice and some salt. Set aside.
  • Sprinkle fish with salt and pepper. If grilling, rub fish with a little oil as well; put it on grill, skin side down, and let it sit for 4 to 5 minutes, then turn once (don't worry if part of skin sticks to grill). Cook for about 3 minutes more, until medium-rare.
  • If roasting, heat a large nonstick skillet over high heat for a minute. Add oil and, a few seconds later, salmon, skin side up. Sear for a minute, then transfer to oven and roast until medium-rare, about 10 minutes. Allow to rest for a minute or so, then remove skin. Turn over and serve, passing salsa at the table.

1/2 small jicama, peeled and shredded
1 small cucumber, seeded and finely diced
1 small red sweet pepper, cut into matchstick strips
3 tablespoons white vinegar or rice vinegar
1/2 teaspoon sugar
12 ounces skinless salmon fillet, cut into eight 1-1/2-inch-thick pieces
1 tablespoon cooking oil
1/4 teaspoon salt
1/4 to 1/2 teaspoon ground red pepper
1 head Bibb lettuce

Steps:

  • In a large mixing bowl stir together jicama, cucumber, sweet pepper, vinegar, and sugar. Cover and chill. Rub salmon with oil; sprinkle with salt and red pepper. Heat a large cast-iron skillet or heavy, nonstick skillet. Cook fish, uncovered, over medium heat for 6 minutes per side or until fish just flakes with a fork. Serve immediately, or cover and chill before serving. To serve, overlap 2 or 3 lettuce leaves each on 4 dinner plates. Top with 2 salmon pieces. Spoon about 2 tablespoons of the jicama and sweet pepper salsa over fish. Makes 4 main-dish servings.

1 x 25g pack dill , roughly chopped
1 x 25g pack mint , tough stalks removed and roughly chopped
1 x 25g pack flat-leaf parsley , roughly chopped
1 x 25g pack chives , roughly chopped
1 ½ tbsp wholegrain mustard
2 tbsp caper
2 tbsp toasted pine nut
1 x 200g tin green olive stuffed with anchovies, drained (85g)
2 lemons , juice only
4 salmon fillets
175g wild and white basmati rice
50g stoned marinated black kalamata olive
75g toasted pine nut
1 red pepper , chopped

Steps:

  • Preheat the oven to 200C/fan 180C/gas 6. To make the salsa verde, put the herbs, mustard, capers, pine nuts, olives and the juice of the 1 ½ lemons in a food processor and pulse until roughly chopped.
  • Put the salmon fillets on a lightly oiled baking sheet. Squeeze over the juice of the remaining half lemon and season with freshly ground black pepper. Cook in the oven for 10 - 12 minutes or until cooked through.
  • If serving with the rice, cook the rice according to the packet instructions. Mix together the olives, pine nuts and red pepper. Once the rice is cooked, stir through the olive mix.
  • Pile the salsa verde on top of the salmon fillets. Serve with the rice.

4 (6 ounce) salmon steaks
3 tablespoons olive oil
1 large red onion, diced
2 cloves garlic, peeled and minced
2 tomatoes, diced
1 sprig fresh cilantro, chopped
2 mangos - peeled, seeded, and diced

Steps:

  • Preheat the oven broiler. Line a broiler pan with foil.
  • Broil salmon steaks on the prepared pan 12 minutes, or until easily flaked with a fork.
  • Heat olive oil in a medium saucepan over medium heat, and saute onion until tender. Stir in garlic, tomatoes, and cilantro. Cook until heated through, 1 to 2 minutes, and remove from heat. Mix in the mangos. Serve over the salmon steaks.

  • Preheat broiler. Place tomatillos, chiles, and garlic on a rimmed baking sheet. Broil, tossing once, until tomatillos are blistered in spots and starting to release some juices, 7–10 minutes. Transfer to a medium bowl and cover. Let sit until tomatillos are softened, about 5 minutes. Uncover and let sit until cool enough to handle, about 10 minutes.
  • Remove skins from chiles if desired and peel garlic; place in a molcajete or mortar and pestle along with cumin seeds and a pinch of salt. Grind until smooth. (Or you can use a blender if you grind the cumin seeds before adding.) Add tomatillos and grind until a coarse purée forms. Stir in spring onion, cilantro, and oregano. Season with more salt if needed; squeeze in lime juice to taste if desired.
  • Heat oil in a large skillet over medium-high. Sprinkle in cumin seeds. Season salmon with salt; arrange, skin side down, in skillet. Reduce heat to medium and cook, pressing down gently on fish, until skin is golden brown and crisp, 6–8 minutes. Turn over; cook until just cooked through, about 4 minutes.
  • Divide salmon among plates; spoon salsa over. Scatter some oregano and cilantro on top. Serve with avocado and lime wedges alongside.

  • Place the salmon fillets onto a plate or into a large bowl, and drizzle in about 2 tablespoon of the oil; then, sprinkle in the paprika, the granulated garlic and onion, the cumin, coriander, salt, pepper, cayenne and lemon zest, and toss everything gently to coat the fillets evenly and well; allow the salmon to marinate for at least 20 minutes, or even over night.
  • While the salmon marinates, prepare the Mediterranean salsa fresca: combine all ingredients up to and including the lemon juice in a small bowl, and add a couple of pinches and salt and pepper; mix with a spoon to combine; keep covered and in the fridge until ready to serve.
