This simple baked salmon really hits all the right notes: tangy, sweet, savory, a little spicy and crunchy. Cooking a larger piece makes for a nice presentation. Topped with buttery golden breadcrumbs and parsley, it's perfect for a weeknight dinner yet fancy enough to serve to guests.

2 tablespoons light brown sugar
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
1/4 cup panko breadcrumbs
1/2 cup parsley leaves, chopped
2 tablespoons unsalted butter, melted
1 1/2 pounds skin-on salmon fillet, preferably center-cut
1 tablespoon Dijon

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
  • Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.

This is quick and easy to make. Is more like a quiche though. I got this receipe from a free card at Wal-Mart. The only thing I changed about it was to use 2 C cheddar instead of 1 1/2 C that it called for, regular onions instead of green, added more pepper and used a can of salmon, instead of the filet it suggests. Enjoy

8 -9 slices bread, with crusts trimmed
2 cups cheddar cheese, grated
6 eggs
3/4 cup milk
1/2 teaspoon salt

14 ounces salmon, cooked and flaked
1/4 cup green onion, sliced

Steps:

  • Arrange bread in spiral pattern in a buttered 9 in pie plate, arranging edges to form a crown.
  • Sprinkle 1/2 C cheese over bread in bottom of the plate.
  • Whisk together eggs, milk, salt and pepper until well combined.
  • Stir in salmon, onions and remaining cheese.
  • Bake at 350 F for 35-40 mins or until center is set. Check after 15-20 minutes.

10 ounces frozen corn
3/4 cup quick-cooking brown rice
2/3 cup low-sodium low-fat chicken broth
2 tablespoons green onions, sliced

1/4 cup low-fat cheddar cheese, shredded
3 -5 dashes of your favorite hot sauce (optional)

Steps:

  • Pre-heat oven to 375°F.
  • Combine all but cheese in a 11/2 quart casserole.

1/4 teaspoon salt
3 tablespoons cold butter
3 tablespoons shortening
1/4 cup whole milk
FILLING:
1 can (14-3/4 ounces) salmon, drained, bones and skin removed
1 cup shredded cheddar cheese
1/4 cup chopped green pepper
1/4 cup chopped onion
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper
3 large eggs
1-1/4 cups whole milk

Steps:

  • In a large bowl, combine the flour and salt; cut in butter and shortening until crumbly. Stir in milk. , On a floured surface, roll dough to fit a 9-in. pie plate. Transfer pastry to an ungreased pie plate; trim and flute edges. Bake at 350° for 10 minutes., In a large bowl, combine salmon, cheese, green pepper, onion, flour, salt and pepper; spoon into crust. Take an ooey gooey smokey baked mac and cheese, and add some tender flaked salmon for a delicious meal; you could add your favorite steamed green veggie in there, or serve alongside a big green salad (because balance)! This is heavy on the gooey cheese and very rich - a little goes a long way! Change up the cheese if you want to try different flavors or combinations. Flavor will depend on the cheese you used, and how much seasoning you like!

nonstick cooking spray
9 ounces salmon fillets
1 teaspoon salt, or to taste
½ teaspoon ground black pepper
1 (16 ounce) package elbow macaroni
½ cup butter
½ cup all-purpose flour
2 ½ cups 2% milk
1 ½ cups half-and-half
¾ pound shredded smoked Gouda cheese
½ pound shredded smoked Cheddar cheese
½ teaspoon garlic powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with nonstick cooking spray and set aside.
  • Place salmon in a 2-quart baking dish and sprinkle with salt and pepper.
  • Cook salmon in the oven for 10 to 11 minutes. Salmon will only be partially cooked; it will continue cooking later. Leave the oven on.
  • While salmon cooks, bring a large pot of salted water to a boil. Add macaroni noodles and cook to al dente, 10 to 11 minutes. Drain and set aside.
  • While noodles cook, place a large pan on the stove over medium-high heat and add butter, stirring occasionally as it melts. If the butter is browning, reduce heat. You want the butter just to melt, but not to start browning.
  • Whisk flour into the melted butter. If it gets a little lumpy, just keep whisking until you have a smooth and creamy roux base. Cook the flour mixture for at least 1 minute, whisking regularly, and adjusting the heat if needed.
  • Begin whisking milk and half-and-half into the roux, start with about half of the liquid. Whisk until well incorporated and smooth, then continue whisking in remaining milk and half-and-half until everything is well blended into the roux. Increase heat until mixture begins to bubble and thickens, then reduce heat and stir in the cheeses (reserve about 1/2 cup of grated cheese for the top). Whisk until smooth, thick, and creamy. Season with garlic powder, salt, and pepper.
  • Stir the drained macaroni noodles into the cheese sauce; break the par-cooked salmon up into large chunks and add that to the pan as well. Stir gently to evenly distribute the salmon and coat all of the noodles in the sauce. Transfer to the prepared baking dish. Sprinkle with reserved grated cheese.
  • Bake in the preheated oven until hot and bubbly, 25 to 30 minutes.

1 lb cooked salmon, canned or fresh
1 small onion
1 beaten egg
1/2 cup soft breadcrumbs
1 tablespoon Worcestershire sauce
1/4-1/2 teaspoon hot sauce
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
1 tablespoon parsley
1/4 cup flour
4 tablespoons butter or 4 tablespoons margarine

Steps:

  • If using canned salmon, drain and pick over to remove hard cartilage and bones.
  • Finely chop onion.
  • Using fork, flake the salmon and then combine in a medium bowl with onion, egg, bread crumbs, Worcestershire, hot sauce, black pepper, cheese and parsley.
  • Using about 1/3 cup salmon mixture for each cake, shape the mixture into rounds about 1/2" thick.
  • Sprinkle flour on a plate and dredge the patties, coating well, but dusting off excess flour.
  • Place patties in the refrigerator and let set for 30 minutes.
  • Heat the butter in a large skillet until foamy and hot.
  • Add the patties and brown both sides, cooking about 5 minutes.
  • Remove the patties from the pan and drain on paper towels.

Take a fresh look at broccoli with this creamy pasta bake

250g penne
300g broccoli, cut into large florets
25g butter
25g plain flour
600ml milk
100g mascarpone
8 sundried tomatoes (preserved in olive oil), drained and thickly sliced
2 tbsp small capers (optional) rinsed to remove excess salt or vinegar
8 anchovy fillets, halved (optional)
10 large fresh basil leaves, roughly torn
4 fresh skinless salmon fillets
50g mature cheddar, finely grated

Steps:

  • Preheat the oven to 190C/gas 5/fan 170C and get out an ovenproof dish (measuring 20 by 30cm, and about 5cm deep). Meanwhile, put a large pan of water on to boil for the pasta. When it is boiling rapidly, tip in the pasta with a generous sprinkling of salt. Give it a stir, return to the boil and cook for 6 minutes. Add the broccoli, then return the water to the boil and cook for 4 minutes more, until the broccoli is on the firm side of just tender. Drain well.
  • While the pasta is cooking, put the butter, flour and milk in a large pan and heat, whisking or stirring continuously, until it thickens to make a smooth sauce. Remove from the heat and stir in the mascarpone, sun-dried tomatoes, capers (if using), anchovies (if using) and basil, then add the pasta and broccoli and season well.
  • Halve the salmon fillets widthways (you will see that there is an obvious divide on each fillet) then place the pieces in a single layer on the base of the ovenproof dish. Spoon the broccoli mixture on top, then scatter with the grated cheddar. (You can chill this for up to 4 hours if you want to get ahead.)
  • Bake for 30 minutes until the mixture is just starting to bubble round the edges and the mixture is pale golden - don't let it go too dark or the fish will overcook.

I designed this for 2 but you can easily double or even triple this yummy recipe for your family or guests.

1 lb salmon fillet
paprika
4 ounces cream cheese, softened
2 teaspoons garlic, minced really fine
1/2 teaspoon parsley
pepper (to your taste)
1/4 cup onion, chopped very fine
fresh Baby Spinach
olive oil
garlic powder
salt

Steps:

  • Preheat oven to 400. Spray a 9x9 baking pan with olive oil. Place salmon fillets in pan. Sprinkle lightly with paprika.
  • In a small bowl, mix together the cream cheese, minced garlic, parsley and a sprinkle of pepper. Spread this over the salmon fillets. (I usually micrwave this for 20 to 30 seconds to make it easier to spread).
  • Sprinkle the chopped onion evenly over the cream cheese.
  • Layer the baby spinach leaves evenly and neatly over the onions (I make 4 layers of leaves).
  • Spray or drizzle the spinach leaves with olive oil. Sprinkle lightly with garlic powder, salt and pepper.
  • Cover tightly with foil and bake 25-35 minutes depending on the thickness of your salmon. It takes a little longer than usual because of all the toppings.
