Time 15m

Number Of Ingredients 15

12-14 ounces cooked salmon
2 eggs
1/2 cup breadcrumbs
1 teaspoon salt
1/2 teaspoon garlic powder
1/4 cup chopped fresh herbs, like chives, parsley, or dill
a squeeze of lemon juice
olive oil for pan-frying
1 head green cabbage, finely shredded
1 cup plain Greek yogurt
2-3 tablespoons white distilled vinegar (more to taste)
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 cup chopped fresh herbs like chives, parsley, or cilantro
a drizzle of olive oil

Steps:

  • Flake the salmon apart. Mix all burger ingredients together and form into 3 large or 4 medium patties. Heat olive oil over medium heat, ideally in a nonstick skillet. Fry the burgers for a few minutes on each side until golden brown and crispy. Place on a paper towel lined plate and sprinkle with salt.
  • Mix all slaw ingredients together. Taste and adjust.
  • Serve up those hot salmon burgers on a bed of creamy slaw. I top mine with a dollop of extra yogurt and a swizzle of oil and more herbs. Can't stop me.

SALMON BURGERS WITH SRIRACHA-SESAME MAYO

Salmon Burgers with Sriracha-Sesame Mayo image

Pulsing skinless salmon in a food processor makes homemade salmon burgers easier and fresher than ever. These are flavored with red onion and jalapeno, but you can add almost any aromatic you'd like. A spicy sesame-laced mayonnaise takes these burgers to the next level.

Provided by Justin Chapple

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 11

Vegetable oil, for brushing
1 1/2 pounds skinless salmon fillet
1/2 cup panko
3 tablespoons minced red onion, plus thinly sliced red onion for serving
1 jalapeno, stemmed, seeded and minced
Kosher salt and freshly ground black pepper
1/2 cup mayonnaise
2 tablespoons sriracha
1 tablespoon toasted sesame oil
4 large hamburger buns, split
Lettuce and sliced cucumber, for serving

Steps:

  • Preheat a grill pan, large cast-iron skillet or grill over medium-high heat. Oil the grill grates if using a grill.
  • Cut the salmon into 1- to 2-inch chunks and transfer to a food processor. Pulse in 1-second intervals until the salmon is finely ground but not yet a paste. Scrape the salmon into a medium bowl. Add the panko, minced onion, jalapeno, 1 teaspoon salt and 1/2 teaspoon pepper; mix well. Form the mixture into 4 patties.
  • Brush the salmon patties with oil and cook until nicely browned on the bottom, 3 to 4 minutes. Flip the patties and cook until browned and firm to the touch, 3 to 4 minutes longer.
  • Meanwhile, whisk together the mayonnaise, sriracha and sesame oil in a small bowl; season with salt and pepper.
  • Transfer the salmon patties to a plate or baking sheet; tent with foil. On the grill, grill pan or in the skillet, toast the buns until lightly browned, 1 to 2 minutes. Put the salmon patties in the buns. Top the patties with sriracha-sesame mayo, lettuce, sliced onion and cucumber and serve.

ASIAN SALMON BURGERS WITH PROVOLONE, GREEN ONION AND SOY SAUCE M

Asian Salmon Burgers With Provolone, Green Onion and Soy Sauce M image

Packed with ginger, garlic and green onions and topped with Sargento Deli Style Sliced Provolone Cheese, these salmon burgers are light and juicy and look gorgeous on a toasted bun. Pair with juicy summer fruits like mango and pineapple for a fresh and healthy meal, and don't forget the cheese. "Cheese is the grill accessory that never goes out of style," says Diane Morgan, author of Dressed to Grill, Savvy Recipes for Girls Who Play with Fire and Salmon. "You can add it to almost anything to enhance the taste of your meal. Natural cheeses, in particular, give the best flavor."

Time 45m

Yield 4 serving(s)

Number Of Ingredients 18

1 lb salmon fillet, skin and pin bones removed, cut into 1-inch pieces
1 tablespoon peeled minced fresh ginger
1 1/2 tablespoons minced garlic
2 green onions, including 2 inches of green tops, very thinly sliced
2 tablespoons chopped fresh cilantro
1 teaspoon kosher salt
1 1/2 tablespoons fresh lemon juice
2 tablespoons soy sauce
1/2 cup cracker meal
2 large eggs, lightly beaten
2 tablespoons vegetable oil
4 slices sargento deli style sliced provolone cheese
4 hamburger buns with sesame seeds, split and toasted
lettuce leaves or baby spinach leaves
1/2 cup mayonnaise
1 green onion, including green tops, very thinly sliced
1 teaspoon fresh lemon juice
2 teaspoons soy sauce

Steps:

  • For salmon burgers, in a food processor fitted with the metal blade, pulse the salmon until coarsely ground, scraping down the sides of the work bowl once or twice. (Be careful; it's easy to go from chopped to a mashed paste in seconds!) Transfer the salmon to a medium bowl. Add the ginger, garlic, green onions, cilantro, salt, lemon juice and soy sauce. Using a rubber spatula, mix to combine. Mix in the cracker meal; add the eggs. Stir to combine.
  • Dividing the salmon mixture evenly, form into 4 1-inch-thick patties. Refrigerate for at least 20 minutes before cooking. (The patties can be prepared up to 8 hours ahead. Transfer to a covered container and refrigerate.).
  • In a large, heavy skillet, preferably cast-iron, heat the oil over medium-high heat and swirl to coat the pan. (You can also use a grill pan.) Add the salmon patties and cook until golden brown on one side, about 3 minutes. Turn and cook until opaque throughout and golden brown on the other side, about 3 minutes longer. Top each burger with a slice of cheese. Serve the salmon burgers on the toasted buns with the lettuce and Green Onion and Soy Sauce Mayonnaise.
  • For the Green Onion and Soy Sauce Mayonnaise, in a small bowl mix the mayonnaise, green onion, lemon juice and soy sauce until well blended. Cover and refrigerate for up to 1 day.
  • Makes about 2/3 cup.

Time 30m

Yield 6 serving(s)

Number Of Ingredients 24

2 3/4 lbs salmon fillets, skinned, pin bones removed
1/2 cup japanese panko breadcrumbs or 1/2 cup other dried breadcrumbs
1/2 cup minced scallion
1/4 cup finely chopped fresh cilantro leaves
2 teaspoons minced fresh ginger
1 egg, slightly beaten
1 teaspoon sambal oelek chili paste (optional)
1 teaspoon minced garlic
1 teaspoon salt
1 1/2 teaspoons soy sauce
1/4 cup soy sauce
1/4 cup sugar
3/4 cup mayonnaise
3 cups shaved purple cabbage
3 cups shaved green cabbage
1/2 cup shaved red onion
1/4 cup vegetable oil or 1/4 cup peanut oil
2 tablespoons vegetable oil or 2 tablespoons peanut oil
3 tablespoons rice wine vinegar
2 tablespoons toasted sesame oil
1/2 teaspoon toasted sesame seeds
1/4-1/2 teaspoon crushed red pepper flakes
kosher salt
6 sesame seed rolls or 6 other soft hamburger buns, for serving

Steps:

  • SALMON BURGERS:.
  • Using a sharp knife, cut the salmon into 1" pieces and transfer to the bowl of a food processor. Pulse slowly until the fish is finely chopped.(Take care not to over process or salmon will become a paste).
  • Transfer to a mixing bowl and add the panko, 1/4 cup of the scallions, 2 tablespoons of the cilantro, minced ginger, egg, sambal oelek (if using), garlic, 1/2 teaspoon salt, and 1-1/2 teaspoons of the soy sauce.
  • Using a rubber spatula, mix gently but thoroughly to combine. Divide the mixture into 6 even portions and shape into patties about 4" wide and 3/4" thick. Transfer to a parchment-lined baking sheet and cover with plastic wrap. Refrigerate while you prepare the mayonnaise and the slaw.
  • SOY MAYONNAISE:.
  • In a very small saucepan combine the remaining soy sauce and the sugar and cook until reduced to a syrup, 2 to 3 minutes. The soy-sugar mixture should coat the back of a spoon. Set aside to cool completely.
  • When cooled add 1-1/2 tablespoons of the soy glaze to the mayonnaise and refrigerate until ready to serve with the burgers. (The remaining soy glaze may be kept indefinitely at room temperature and used to drizzle on grilled salmon, grilled tuna, or pork to name a few.).
  • SESAME SEED SLAW:.
  • Combine the purple and green cabbages, remaining 1/4 cup of scallions, red onion, 1/4 cup vegetable oil, rice wine vinegar, remaining 2 tablespoons cilantro, sesame oil, remaining 1/2 teaspoon salt, and crushed red pepper, and toss throughly to combine. Transfer to a serving bowl and sprinkle with sesame seed. Refrigerate while you prepare the burgers.
  • COOK BURGERS AND ASSEMBLY:.
  • Heat a large skillet over medium-high heat and add the remaining 2 tablespoons of oil. When the oil is hot, season both sides of the burgers lightly with kosher salt and add the burgers to the skillet and cook, turning once, until golden brown on both sides and salmon is just cooked through, about 3-1/2 minutes per side.
  • Serve the salmon on warm buns, buttered with soy mayonnaise on the bottom side of bun, garnish top with smidgen of soy mayonnaise and the sesame slaw.
  • Enjoy!
