SWEET CHILLI TOFU WITH PINEAPPLE STIR-FRIED NOODLES



Sweet chilli tofu with pineapple stir-fried noodles image

Stir-fry chunks of firm tofu and serve over noodles and canned pineapple pieces for a budget-friendly homemade Chinese inspired dinner

250g egg noodles
396g pack firm tofu
4 tbsp sweet chilli sauce
4 tbsp soy sauce
540g can pineapple pieces in juice, drained but keep the juice
1 tbsp vegetable oil
8 spring onions , finely sliced (keep the green parts separate)
250g frozen sliced mixed peppers

Steps:

  • Pour boiling water over the noodles and set aside to soften for 15 mins. Cut the tofu in half through the centre to make 2 thinner pieces, then in half the other way to make 4 rectangles, and in half on the diagonal to make 8 triangles. In a frying pan, mix the chilli sauce, 2 tbsp soy and 3 tbsp pineapple juice. Add the tofu and cook until the sauce is thick and sticky, turning the tofu halfway through cooking. Tip into a serving dish with any sauce and keep warm.
  • Drain the noodles. Heat the oil in the pan, add the peppers and the white parts of the spring onions and and fry for 8-10 mins until the peppers have defrosted and softened. Add the pineapple, noodles and remaining soy sauce, then toss together and heat through. Serve with the tofu, scattered with the green parts of the spring onions.

If you thought tofu was bland, this is the recipe to convince you otherwise

250g fresh firm tofu , drained
2 tbsp groundnut oil
1cm piece ginger , sliced
200g pak choi , leaves separated
1 tbsp Shaohsing rice wine
1 tbsp rice vinegar
½ tsp dried chilli flakes
cooked jasmine rice , to serve
1 tbsp grated ginger
1 tsp dark soy sauce
2 tbsp light soy sauce
1 tbsp brown sugar

Steps:

  • Gently prick a few holes in the tofu with a toothpick (this will help the marinade to soak into it, giving better flavour), then cut into bite-size cubes.
  • Mix the marinade ingredients together in a bowl and toss in the tofu pieces. Set aside to marinate for 10-15 mins.
  • Heat a wok over high heat and add half the groundnut oil. When the oil starts to smoke, add the ginger slices and stir-fry for a few secs. Add the pak choy leaves and stir-fry for 1-2 mins. Add a small splash of water to create some steam and cook for 2 mins more. When the leaves have wilted and the stems are cooked but still a little crunchy, season with salt and transfer to a serving dish.
  • Rinse the wok under cold water, then reheat it and add the remaining oil. When it starts to smoke, add the tofu pieces (retaining the marinade liquid) and stir-fry for 5-10 mins. Take care not to break up the tofu as you toss it to get it browned evenly on all sides. Season with the rice wine and rice vinegar. Add the remaining marinade liquid, bring to the bubble and let the liquid reduce. Sprinkle over the chilli flakes and toss well. Spoon onto the pak choy and serve immediately with jasmine rice, if you like.

Get children to help you chop the vegetables and make the sauce for this colourful, simple tofu stir-fry. It's perfect when you need a quick and easy family meal

3 tbsp low-sodium soy sauce
1½ tbsp honey
1 tbsp white wine vinegar
300g tofu, cut into chunks
2 tbsp sunflower oil
2 garlic cloves, sliced
2cm piece ginger, sliced
2 carrots, sliced into thin batons
300g broccoli, cut into small florets
1 red pepper, sliced into strips
1 tsp cornflour
1 spring onion, sliced
2 tsp sesame seeds
small bunch of coriander, chopped

Steps:

  • Stir together the soy sauce, honey and vinegar in a bowl, then set aside.
  • Pat the tofu chunks dry, then season well. Heat half the oil in a wok or large frying pan over a high heat. Fry the tofu for 5 mins until golden, stirring occasionally. Add the garlic and ginger and fry for 1 min more. Tip the tofu mixture into a bowl, pour over half the soy dressing and set aside.
  • Add the remaining oil to the wok. Add the vegetables and cook for 5 mins until beginning to turn golden, then add a good splash of water and cook for 3-5 mins more until tender.
  • Stir the cornflour and 1 tbsp water into the remaining soy dressing, then tip into the wok, allow to bubble for 30 seconds, stirring to coat everything in the sauce. Sprinkle over the spring onion, sesame seeds and coriander. Serve with rice.

Crunchy veg, smooth noodles and soft tofu, combined with a sweet and spicy sauce. This healthy vegetarian dinner for two is ready in just 30 minutes

100g fine rice noodle
140g firm tofu
2 tbsp sunflower oil
3 spring onions , shredded
1 small chunk fresh root ginger , finely chopped
1 red pepper , thinly sliced
100g mangetout
100g beansprouts
1 tsp tikka masala paste
2 tsp reduced-salt soy sauce
1 tbsp sweet chilli sauce
roughly chopped coriander and lime wedges, to serve

Steps:

  • Put the noodles in a bowl and pour over boiling water to cover. Leave for 4 mins, then drain and rinse under running cold water until cold. Drain well, then snip into short lengths with scissors.
  • Rinse the tofu in cold water, then cut into small chunks. Pat dry with kitchen paper. Heat 1 tbsp of the oil in a wok or large frying pan, add the tofu, then stir-fry for 2-3 mins, stirring until lightly browned. Drain on kitchen paper.
  • Add the remaining oil to the wok and heat up. Add the spring onions, ginger, pepper and mangetout, then stir-fry for 1 min. Add the noodles and beansprouts, then stir to mix. Blend together the curry paste, soy, chilli sauce and 1 tbsp water, then add to the wok, stirring until everything is well coated in the sauce. Serve sprinkled with coriander, with lime wedges for squeezing over.

  • Start by pressing the tofu if you want to (I sometimes don't bother). If you don't have a tofu press, just sandwich it between two clean tea towels and place a few heavy books or pans on top, and leave for 30 minutes.
  • Cut the tofu into triangles or cubes. Heat the oil in a frying pan, and add the tofu. Cook over a medium heat for 5-10 minutes, turning regularly, until the tofu is golden brown and crispy all over.
  • Meanwhile, combine the sweet chilli sauce, soy sauce, chopped chilli, garlic and ginger in a bowl. Season with salt and pepper, and mix well.
  • Add the sauce to the crispy tofu, and allow to cook for another 5 minutes or so, stirring regularly, until the sauce has become thick and sticky.

  • Make the sweet chili sauce. In a medium bowl, whisk the garlic, cornstarch, maple syrup, coconut sugar, chili powder, tamari and sesame oil until combined. Set aside.
  • In a large bowl, toss the tofu, cornstarch and salt until evenly coated. In a frying pan, heat sesame oil until ripples form and fry the tofu until crisp and golden, rotating as needed, remove when golden and crisp, 8-10 minutes. In the same pan, sauté peppers and onions until softened, 5 minutes. Add tofu and sauce to pan and cook until sauce is slightly thickened and aromatic, 2-3 minutes.
