This recipe has been in my family for years. It's easy to cook, but tastes like it took hours to make! I usually make enough extra sauce to pour over mashed potatoes. YUM!

- In a large bowl, mix together 1/3 cup condensed French onion soup with ground beef, bread crumbs, egg, salt and black pepper. Shape into 6 oval patties.
- In a large skillet over medium-high heat, brown both sides of patties. Pour off excess fat.
- In a small bowl, blend flour and remaining soup until smooth. Mix in ketchup, water, Worcestershire sauce and mustard powder. Pour over meat in skillet. Cover, and cook for 20 minutes, stirring occasionally.

- In a large bowl, combine the first five ingredients. Crumble beef over mixture and mix well. Shape into four oval patties. In a large skillet, brown patties in oil on both sides. Drain., In a small bowl, combine diced tomatoes and tomato sauce. Pour over patties. Bring to a boil. Reduce heat; cover and simmer for 10-15 minutes or until meat is no longer pink. Freeze option: Freeze individual cooled steaks with some tomato mixture in resealable freezer bags. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little water if necessary.

CHEF JOHN'S SALISBURY STEAK
When I was a kid, we didn't have smartphones or the internet, all we had was a TV. But we didn't care because as we watched, we got to enjoy a little something called a "TV dinner." The king of those dinners, in my opinion, was the Salisbury steak, which is what I'll show you how to make here, along with one of the greatest gravies ever invented. Serve with buttered mashed potatoes and a vegetable side of your choice.

- Combine beef, black pepper, dry mustard, ketchup, Worcestershire, soy sauce, egg, cayenne, and bread crumbs in a mixing bowl. Use a fork or your hands to stir the ingredients until very evenly distributed.
- Cover with plastic wrap and refrigerate for 2 hours, or up to overnight.
- While the meat is resting, melt 2 tablespoons butter in a large nonstick pan over high heat; add mushrooms, onions, and a pinch of salt. Saute, stirring occasionally, until very nicely browned, 5 to 8 minutes. Reduce heat to medium and add flour. Cook and stir for 3 minutes.
- Stir in ketchup, Worcestershire sauce, and beef broth; increase heat to high. Bring to a simmer; reduce heat to medium and cook, stirring occasionally, until the gravy thickens slightly and reduces, about 10 minutes. Taste and adjust salt as needed. Transfer to a glass measuring cup, scraping the pan clean with a spatula, and reserve.
- Remove meat from the refrigerator and divide into 4 equal portions. Moisten hands and form into oval patties, about 1/2 inch thick. Season both sides of the patties lightly with salt.
- Melt 2 tablespoons butter in the previously used nonstick pan over medium-high heat. Add the patties and cook until browned, 2 to 3 minutes per side. Pour in gravy and bring to a simmer; reduce heat to medium and continue to cook until gravy is piping hot, and the meat is just cooked through and springs back lightly when touched, about 5 minutes.

- Preheat oven to 350°F.
- Using a meat mallet, pound meat to ½″ thickness.
- Combine flour, paprika, garlic powder, pepper & salt to taste. Dredge meat in flour mixture.
- Heat 1 tablespoon of olive oil over medium heat in a dutch oven. Brown steaks on each side (adding additional olive oil if needed). Set aside.
- Place onion & carrot in the bottom of the pot. Top with browned steaks.

- In a large mixing bowl, add ground beef, grated parmesan, breadcrumbs, minced garlic, salt, and pepper. Mix with fingers until the mixture becomes a bit "pasty". This will ensure your patties hold together nicely.
- Divide into 4 portions and pat firmly into oval patties (about 3/4-inch thick).
- Heat oil in a large cast-iron skillet over high heat until it begins to simmer. Add the steak and cook for about 3 minutes per side (6-8 minutes total). Remove onto a plate.
- In the same skillet, add sliced onions and mushrooms. Reduce the heat to medium. Cook for about 4 minutes or until onions are a bit translucent.
- Add tomato paste, Worcestershire sauce, and beef broth. Reduce heat and simmer for about 3 minutes.
- Pour in heavy cream, cook for a few more minutes until the sauce is slightly thickened. Season with salt and pepper to taste.
- Add the patties back to the skillet. Spoon the juices over the patties.
- Remove steaks onto a serving plate. Garnish with chopped parsley. Serve and enjoy!

SALISBURY STEAK
This recipe originated from a Cambell's Soup recipe for Salisbury Steak, but it has been modified from the original. LOL! I can never remember not to add the water into the soup mixture. It's automatic and I do it before I can stop myself. I have also used cream sherry in place of the burgundy wine. Mainly it depends on what I have on hand.

- Mix beef, bread crumbs, 1-can of French onion soup & egg together thoroughly.
- With damp hands, form oval shaped patties about 5" long and about 2.5" wide.
- (Forms 6 large salisbury steaks).
- In skillet on medium heat, add olive oil and brown patties on top and bottom.
- Remove from skillet and discard drippings.
- Preheat oven to 350°F.
- Add remaining cans of soup, burgundy wine, Worcestershire sauce, mustard & to skillet, stirring thoroughly.
- Add flour to cool water to dissolve it and then stir it into the skillet mixture.
- Heat until mixture is steaming.
- Slice onions in to rings.
- Place patties into a 4-quart baking dish and
- layer onions over the steaks.
- Then pour soup mixture from skillet over onions and bake covered for 30 minutes or until beef is cooked thoroughly.

Salisbury Steak is an easy comfort food dinner that's reminiscent of tv dinners, but SO much better!

- Add breadcrumbs to a large mixing bowl. Grate onion over the bowl and stir grated onion into the breadcrumbs. There will likely be some onion "juice" that goes into the bowl as well, and that's good. It will add moisture as well as flavor.
- Add remaining patty ingredients and use hands to mix until just combined.
- Use the side of your hand to lightly score the meat in half. Then score each half into 3 sections. Now you have 6 roughly equally sized sections. Scoop out the meat in each section and form into oval shaped patties.
- Heat 1 Tbsp each butter and olive oil in a large skillet over MED HIGH heat. Once hot, add patties and sear about 4-5 minutes per side, until cooked through. Transfer patties to a plate and keep warm.
- Reduce skillet heat to MED and add 1 Tbsp butter. Add sliced onions and cook for 3 minutes. Add mushrooms and cook another 4-5 minutes.
- Stir in beef broth, scraping the bottom of the skillet to loosen any browned bits. Add tomato paste, soy sauce, Worcestershire sauce, dijon mustard, salt and pepper and whisk or stir to combine well.
- In a small bowl combine cornstarch and water and whisk until smooth. Whisk mixture into the beef gravy and simmer until thickened to your liking, about 2-3 minutes.
- Add patties back to the skillet and spoon gravy over the top of the patties. Cook another minute or two, until everything is heated through.
- Serve patties hot, over mashed potatoes or noodles if you like, with a generous spoonful or two of gravy over the top, sprinkled with minced fresh parsley (if desired).

- For the meat mixture: Combine the ground beef, breadcrumbs, ketchup, dry mustard, Worcestershire sauce, bouillon and some salt and pepper. Knead until all combined. Form into 4 to 6 oval patties, and then make lines across the patties to give them a "steak" appearance.
- Fry the patties in a skillet with the butter and oil over medium-high heat on both sides until no longer pink in the middle. Remove from the skillet and pour off any excess grease.
- For the gravy: Reduce the heat to medium and add in the sliced onions. Stir and cook until golden brown and somewhat soft, for several minutes. Add the beef stock, ketchup, seasoning sauce, if using, and the Worcestershire. Then combine the cornstarch with a little beef broth and add to the sauce if using. Stir and cook to reduce.
- Add a sprinkle of salt and pepper and more broth if needed for thinning. Then return the patties to the gravy. Spoon the gravy over the top and let them simmer and heat back up for a couple of minutes.

- In a mixing bowl, combine the Beef, Black Pepper, Salt, Garlic Powder, Worcestershire Sauce, Bread Crumbs and one whole Egg. Stir mixture together well.
- Shape into 4 equal sized patties.
- Heat a skillet over medium heat for about a minute, and then add Butter.
- Place meat patties in skillet and brown on both sides for about 4-5 minutes each. Remove from skillet and set aside.
- Add the sliced Onion into the skillet, right on top of the browned bits.
- Reduce the heat and cook the onions on medium-low heat until the onions turn translucent and brown. Don't rush this step. Cook the onions low and slow for about 20-25 minutes.
- Sprinkle 2 Tablespoons of flour over the onions. Stir. Let cook and brown for about 2 minutes.
- Add 2 cups of warm Water. Stir well. Raise the heat back up to about medium.
- Add 2 teaspoons of Beef Bouillon Granules. Stir Well.
- Place the meat patties back in the pan. Cover. Reduce heat just a little and let simmer for about 15 more minutes. Remove from heat and serve warm.
- Enjoy!

- In a large skillet cook bacon over moderatly-high heat;cook until crisp and browned, about 5 minutes.
- Transfer bacon to paper towels and set aside; reserve drippings in the skillet.
