GRILLED PIZZA WITH OLIVES, SALAMI AND HONEY



Grilled Pizza with Olives, Salami and Honey image

1 pound refrigerated pizza dough
All-purpose flour, for dusting
Semolina flour, for dusting (optional)
1/2 cup jarred marinara sauce
6-ounces low-moisture whole milk mozzarella, thinly sliced or shredded
7 to 8 slices Calabrese salami
1/2 cup Castelvetrano olives, pitted
Extra-virgin olive oil, for drizzling
1/2 teaspoon crushed red pepper
Parmesan cheese wedge, for grating
Orange blossom honey, for drizzling
Freshly ground black pepper
2 to 3 sprigs oregano

Steps:

  • An hour before you want to make the pizza, remove the dough from the refrigerator. Shape the dough into a ball and place on a baking sheet dusted with all-purpose flour. Dust the top with more flour then cover with a clean tea towel (not terry cloth). Place somewhere warm to rise, about 1 hour.
  • When ready to cook the pizza, prepare a grill or large grill pan for high heat (about 500 degrees F). Clean the grill grates.
  • On a work surface lightly dusted with all-purpose flour, press and stretch the dough out to about a 12-inch round. If it tears, just pinch it back together.
  • Liberally sprinkle a pizza peel or an inverted baking sheet with all-purpose flour and semolina flour, if using. Carefully transfer the dough onto the floured side and reshape into a round, if necessary. Make sure the dough can easily slide around on the surface.
  • Slide the dough onto the grill or grill pan, cover and cook until the bottom is charred and the top has puffed up, 3 to 4 minutes (or 5 to 7 minutes, for the grill pan).
  • Transfer the crust, grilled-side up, to the pizza peel. Top with the marinara sauce and spread it to the edges. Arrange the cheese on top, followed by the salami and olives, in that order. Drizzle with extra-virgin olive oil.
  • Reduce the grill temperature to 450 degrees F (or keep the grill pan over high heat). Add the pizza, cover and cook until the cheese is bubbly and the bottom of the crust is golden brown and crispy, 5 to 6 minutes.
  • Remove from the heat and sprinkle with the crushed red pepper and freshly grated Parmesan. Drizzle with honey then freshly grind black pepper over the top. Pick the oregano leaves from the sprigs and sprinkle over the pizza. Slice and serve.

The sweetness of honey brings out the flavor of thin-sliced salami in this easy-to-make pizza. Drizzle it on as soon as the pie comes out of the oven.

1 Tbsp. semolina or cornmeal
1 lb. Pizza Dough (homemade or purchased)
3/4 cup CLASSICO Traditional Pizza Sauce (homemade or purchased)
7-8 ounces (about 2 cups) KRAFT Shredded Mozzarella Cheese
4 slices KRAFT Provolone Cheese
12 thin slices hard salami
2 Tbsp. mild honey (or more to taste)

Steps:

  • PREHEAT the oven to 475°F.
  • DRIZZLE 2 tablespoons of olive oil over the bottom of a rimmed half sheet pan. Sprinkle the semolina or cornmeal over the surface evenly. Use oiled hands to press the pizza dough over the bottom of the half sheet pan, stretching the dough as thinly as possible without tearing it. Try to get the dough to reach into the corners and up to the edges of the pan. If the dough is fighting you, let it rest for 10 minutes then try again. The dough should be more relaxed at that point.
  • SPREAD the pizza sauce evenly over the crust, then scatter the mozzarella over the top. Tear the provolone slices into 2-inch pieces and distribute that evenly over the mozzarella. Arrange the salami slices on top. Bake the pizza for 15 minutes, or until the crust is deep golden brown around the outside, the cheese is melted and bubbly, and the salami pieces have curled and are crisp on the edges. As soon as the pizza comes out of the oven, drizzle the honey mainly over the salami pieces, but also over the outer edges of the crust. Cut into rectangles and serve immediately with many, many napkins.

Spicy salami and sweet honey are perfect partners on this Neapolitan-style pizza with fresh mozzarella and sliced chilies.

1 recipe Neapolitan Pizza Dough or 2 pounds store-bought pizza dough
1 (14-ounce) can whole peeled San Marzano tomatoes
Kosher salt
12 ounces fresh mozzarella, torn into rough chunks and drained
4 ounces grated Parmesan cheese
6 to 10 ounces sliced hot soppressata or salami
1 small serrano chili, thinly sliced
12 to 15 fresh basil leaves
4 tablespoons extra-virgin olive oil
4 tablespoons honey

Steps:

  • Divide dough into four equal parts and place each in a covered quart-sized deli container or a zipper-lock freezer bag. Allow to rest at room temperature for at least 2 hours before baking. Transfer tomatoes to a medium bowl and roughly crush by hand. Season to taste with salt and set aside.
  • Adjust oven rack to 6 inches under broiler and place stone or steel on rack. Preheat oven to highest possible temperature (500 or 550°F) for at least 45 minutes. Alternatively, use a KettlePizza and Baking Steel grill insert .
  • When ready to bake, turn one dough ball out onto a lightly floured surface. Gently press out dough into a rough 8-inch circle, leaving the outer 1 inch higher than the center. Gently stretch dough into a 10- to 12-inch circle, about 1/4 inch thick, by draping over knuckles and gently stretching. Transfer to floured wooden pizza peel.
  • Preheat broiler to high. Spread a thin layer of crushed tomatoes over the pizza, leaving the 1-inch border around the edge. Spread 1/4 of mozzarella over pizza, followed by 1/4 of Parmesan, 1/4 of sliced soppressata, 1/4 of chilies, and 1/4 of basil leaves. Sprinkle lightly with salt and drizzle with 1 tablespoon olive oil.
  • Transfer pizza to hot stone or steel and broil, rotating regularly for even cooking, until edges are puffed and lightly charred and bottom is crisp, 3 to 6 minutes total. Retrieve pizza with a metal peel and transfer to a cutting board. Allow to rest 1 minute. Meanwhile, switch oven back to 550°F to reheat stone or steel for remaining pizzas.
  • Drizzle pizza with 1 tablespoon honey, slice, and serve.
  • Repeat steps 3 through 6 for remaining pizzas.

Sheet-Pan Pizza Dough
1 28-ounce can whole peeled tomatoes, drained
2 tablespoons extra-virgin olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon hot honey, plus more for drizzling
Kosher salt and freshly ground pepper
1/4 cup grated parmesan cheese
12 ounces whole-milk mozzarella cheese, shredded (about 3 cups)
1 1/2 6-ounce logs pepperoni in natural casings, sliced 1/8 inch thick
1/2 cup sliced hot pickled cherry peppers, drained

Steps:

  • Make Sheet-Pan Pizza Dough. During the final rise, put a pizza stone or inverted baking sheet in the lower third of the oven and preheat to 500˚ for 1 hour.
  • Meanwhile, make the tomato sauce: Put the tomatoes in a medium saucepan and break them up with your hands or a wooden spoon. Add the olive oil, garlic, oregano, hot honey, 1/2 teaspoon salt and a few grinds of pepper. Bring to a simmer, stirring often and crushing the tomatoes with a wooden spoon. Continue to simmer, crushing the tomatoes, until the sauce thickens slightly, about 5 minutes. Let cool.
  • Sprinkle 2 tablespoons parmesan over the dough. Sprinkle the mozzarella on top, leaving a 1/2-inch border. Spoon the tomato sauce over the top. Top with the pepperoni and cherry peppers.
  • Put the baking sheet directly on the hot stone and bake until the crust is browned around the edges and the pepperoni is crisp, 15 to 20 minutes. Sprinkle the remaining 2 tablespoons parmesan over the pizza. Let cool slightly.
  • Loosen the edges of the pizza with an offset spatula, then loosen the bottom. Slide the pizza onto a cutting board; cut into squares. Drizzle with hot honey.

Whole Multigrain Pizza Dough, recipe follows
White whole-wheat flour, for work surface
1/3 cup pizza sauce
6 thin slices of salami (about 1 1/2 ounces)
6 ounces fresh mozzarella, cut into thin slices
Fresh basil leaves, for garnish
Crushed red pepper
2 tablespoons whole-grain bulgur
2 tablespoons quinoa
1 tablespoon flaxseeds
3/4 cup warm water (100 to 110 degrees F)
1 teaspoon agave syrup or honey
1 teaspoon active dry yeast
1 1/2 cups white whole-wheat flour (6 ounces), plus more for kneading
Kosher salt
1 tablespoon extra-virgin olive oil
1 tablespoon toasted sunflower seeds

Steps:

  • Set a pizza stone or a baking sheet on the middle rack of the oven and preheat to 500 degrees F.
  • Divide the pizza dough into 2 balls. Put one ball on a heavily floured surface and roll and shape into a thin 11-inch circle with a thicker edge. Transfer to a floured pizza peel or floured upside-down baking sheet. Spread half the pizza sauce evenly on the dough round. Top with 3 slices of salami and half the cheese. (Make sure the dough, with all its toppings, can slide back and forth easily on the pizza peel; if not, add more flour.)
  • Carefully slide the dough onto the hot pizza stone (the dough may not be perfectly round when it slides onto the stone). Bake until the bottom of the crust is lightly browned and very crisp and the cheese is melted, about 7 minutes.
  • Remove the crust from the oven, top with basil and sprinkle with some crushed red pepper. Cut into 4 pieces. Repeat with the second ball of dough and remaining toppings.
  • Bring 2 cups of water to a boil in a small pot. Add the bulgur and quinoa and simmer for 10 minutes. Transfer the grains to a fine-mesh strainer and hold under cold running water to stop the cooking. Let the grains drain in the strainer for 15 minutes, then spread them out on a thick layer of paper towels to absorb any extra moisture. Meanwhile, coarsely grind the flaxseeds in a spice grinder, just to break them open.
  • Stir together the warm water, agave and yeast in a measuring cup or small bowl. Let sit until a small layer of foam develops at the top, 3 to 5 minutes. (If this doesn't happen, discard and try again with new yeast.)
  • Whisk the flour and 1/2 teaspoon salt together in a medium bowl; add the foamy yeast mixture and olive oil and mix together with a stiff rubber spatula. When the dough starts to come together, mix in the cooked grains, ground flaxseeds and sunflower seeds; form the dough into a uniform ball in the center of the bowl. Be sure to scrape and use any dough stuck to the sides. The dough will be very sticky at this stage. Cover the bowl tightly with plastic wrap and keep in a warm place until the dough has doubled in size, about 2 hours.
  • Lightly dust a baking sheet with flour. Sprinkle a generous amount of flour on a clean, dry work surface. Scrape the dough onto the floured surface and knead for a couple of minutes, working in just enough flour to make the dough less sticky but still moist to the touch. Flour your hands periodically to prevent sticking. Form the dough into one single ball or divide it into smaller balls. Place the dough ball(s) on the prepared baking sheet. Cover loosely with plastic wrap or a dish towel and let the dough rest for 30 minutes. After the 30 minutes, the dough can be shaped and cooked as desired.
