Steps:
- Working one wrapper at a time, fold a piece of salami in half and place it diagonally on a wrapper. Top with a piece of string cheese and a pinch of oregano--the cheese ends should point in the direction of 2 opposite wonton corners. Brush the edges of the wrapper with beaten egg. Orient the wrapper in a diamond, with the cheese parallel to you. Pull one corner of the wrapper up and over the cheese. Tuck in the side corners and roll the wrapper up like a package, making sure the edges and corners are well sealed. Repeat with the remaining wrappers and filling.
- Place the egg rolls on a plate and refrigerate for at least 30 minutes.
- Fill a Dutch with 2 inches of vegetable oil; fit with a deep-frying thermometer. Heat over medium heat until the oil reaches 350 degrees F.
- Fry the egg rolls in batches of 3 to 5 until golden brown, 1 to 2 minutes, turning with a slotted spoon for even browning. Remove to a paper towel-lined tray to drain.
- Serve the egg rolls with warm marinara alongside, for dipping.

HOMEMADE BREAKFAST SANDWICHES WITH HOMEMADE MAPLE SAUSAGE, EGG AND CHEESE

Steps:
- Preheat the oven to 350 degrees F.
- Brush the inside of each roll with the melted butter and toast in the oven until slightly crispy and golden brown, 5 to 6 minutes. Remove from the oven and set aside until you are ready to build your sandwich.
- Heat the olive oil in a cast-iron or nonstick skillet over medium heat. Brown the sausage patties for 3 to 4 minutes per side. Once they are browned and cooked through, remove the patties to a paper towel-lined plate. In the sausage drippings, add the remaining tablespoon of butter and crack 4 eggs into the skillet. Sprinkle the eggs with salt and pepper and cook them to your desired doneness. For this I prefer a fried egg, cooking 2 minutes per side, but you can do whatever you like best. Once the egg is cooked to your liking, top each egg with a slice of American cheese. Place a lid over the skillet to melt the cheese.
- To assemble a sandwich, place a sausage patty on the bottom half of the toasted roll and top with the egg and cheese. Have it plain or dressed with the condiments you prefer. I like to eat mine with ketchup and a little hot sauce!
- In a large bowl mix the pork, maple syrup, sage, salt, fennel seeds, garlic, onion and red pepper. Cook the sausage however you like - make patties and sear or crumble and cook in a skillet like hash.
- Cook's Notes: You can use all different types of meats and spices to make the sausage your own!
- Make sure you form the sausage patties in the same size and shape of the bread you are using, that way every bite you take of the sandwich has every component it.

BACON, SAUSAGE, EGG, CHEESE SANDWICH
Pat: A breakfast sandwich should be a thing of beauty, a stackable, delectable, calorie-laden gut-buster of a meal. This one is all those things. I usually have this sandwich on a warm buttermilk biscuit, but you can also split a glazed doughnut in half and use it as the "bread" (you're already down the rabbit hole with the bacon, sausage, and cheese, so you might as well go whole hog with the biscuit or doughnut). Butter and hot sauce are the only condiments that I need, but feel free to add a slather of mayo, mustard, or ketchup, if you like. Have a fresh pot of coffee ready when you prepare this one.

Steps:
- Fry the bacon in a large skillet over medium heat until crisp. Transfer the bacon to a plate lined with paper towels, to drain. Fry the sausage patty in the bacon grease until it is just cooked through, 3 to 4 minutes on each side; transfer the patty to the plate with the bacon.
- Pour all but 1 tablespoon of the bacon grease from the skillet, and return the skillet to the heat. Fry the egg as desired (I like mine over medium, so the yolk is still fairly runny), and season it with salt and pepper. Just before the egg is cooked to the desired doneness, place the slice of cheese on top of the egg, and remove the skillet from the heat. Split a warm biscuit, and butter both sides. Break the two pieces of bacon in half, then top the bottom of the biscuit with the bacon halves and the sausage patty. Gently place the egg on the sausage patty, and top with a dash or two of hot sauce, if desired. Top with the remaining biscuit half, press gently to adhere, and eat immediately.

- Crack egg and egg white into a bowl, add water and whip with a fork for about 10 seconds or until mixed well. Add egg to a small skillet over medium heat. Let sit for about a minute. Now lift one edge of the cooked egg with a spatula while tilting the pan so that the uncooked egg in the middle of the pan can seep under the raised egg. Do this for all four edges. See picture in post for clarification. Add red onion. Top with lid for about 30 seconds.
- Fold the eggs to fit your bread. For large bread or a tortilla simply fold once into a half moon. For biscuits or English muffins fold again into a quarter moon.Top with cheese, put the lid back on to melt the cheese faster, for about 30 seconds to a minute, until egg is cooked through.

- Coat a small nonstick skillet with cooking spray and heat over medium heat. Add egg and cook, tilting the pan and lifting the edges to let the egg run under, until the egg forms a thin even layer. Continue to cook, reducing the heat if starting to brown, until the omelet is just slightly wet, 1 to 2 minutes.
- Split roll and hollow it out (reserve the extra breadcrumbs for another use). Spread olive salad (or muffuletta mix) over 1 roll half. Top with cheese, salami and the omelet.
