1-1/2 teaspoons rubbed sage
1 teaspoon salt
1/2 teaspoon poultry seasoning
1/2 teaspoon pepper
Pinch ground allspice
1 pound ground pork

Steps:

  • In a large bowl, combine the first five ingredients. Crumble pork over mixture and mix well. Shape into six patties. Chill at least 1 hour. , Fry in a skillet for 3-4 minutes on each side or until a thermometer reads 160°.

Number Of Ingredients 8

4 tablespoons olive oil, divided
1 small onion, finely chopped
1 clove garlic, finely chopped
2 teaspoons whole fennel seeds
2 tablespoons whole-grain mustard
2 tablespoons finely chopped fresh sage leaves
1 pound ground pork
Salt and freshly ground black pepper

Steps:

  • Heat 2 tablespoons of oil in a medium saute pan or griddle over medium heat. Add the onions and cook until soft. Add the garlic and fennel and cook for 1 minute. Remove from the heat, stir in the mustard and sage, and let cool for 5 minutes. Place the pork in a bowl, add the onion mixture, and gently toss to combine. Season with salt and pepper.
  • Heat 2 tablespoons of oil in a large nonstick skillet over high heat. Form the sausage mixture into 8 equal size patties. Cook on both sides until golden brown. Reduce the heat, cover, and continue cooking until just cooked through. Serve warm.

1 tablespoon kosher salt
2 teaspoons ground black pepper, or to taste
1 ½ teaspoons dried sage
1 ½ teaspoons dried thyme
1 teaspoon red pepper flakes
1 teaspoon onion powder
1 teaspoon chopped fresh parsley
¾ teaspoon ground nutmeg
½ teaspoon fennel seeds
½ teaspoon ground cayenne
½ teaspoon ground allspice

Steps:

  • Combine pork, molasses, salt, black pepper, sage, thyme, red pepper flakes, onion powder, parsley, nutmeg, fennel seeds, cayenne, and allspice in a large bowl; mix well by hand.
  • Divide pork mixture into 16 portions; shape into patties 1/4-inch thick.
  • Heat a nonstick skillet over medium heat; pan-fry patties, in batches, until golden and no longer pink in the center, about 5 minutes per side.

1/4 cup buttermilk
1 tablespoon finely chopped onion
2 teaspoons rubbed sage

1/8 teaspoon dried oregano

Steps:

  • In a bowl, combine all ingredients, mixing lightly but thoroughly. Shape into eight 1/2-in.-thick patties. Refrigerate 1 hour., In a large cast-iron or other heavy skillet, cook patties over medium heat until a thermometer reads 160°, 6-8 minutes on each side.

Number Of Ingredients 10

1 pound ground pork
1 garlic clove, minced
1 tablespoon dried sage, crumbled
3/4 teaspoon dried thyme
1/2 teaspoon dried fennel, crushed
Pinch of ground nutmeg
1 1/2 teaspoons coarse salt
1/2 teaspoon freshly ground black pepper
1 large egg white
2 teaspoons vegetable oil

Steps:

  • Mix together the pork, garlic, sage, thyme, fennel, nutmeg, salt, and pepper in a medium bowl. Add the egg white and combine thoroughly. Cover and chill for at least 15 minutes.
  • To easily form the sausage patties, rinse your hands in cold water. Divide the mixture into eighths and shape each portion into a 2 1/2-inch disk. Patties can be made to this point and refrigerated or frozen until ready to use.
  • Heat a skillet over high heat, and then swirl in the oil. Fry the sausages on both sides until completely cooked through and golden brown, about 4 minutes per side. Drain and serve immediately with pancakes, waffles or eggs. Sausage patties can be fully cooled, wrapped, and frozen for microwave reheating.

¼ teaspoon dried marjoram
1 tablespoon brown sugar

Steps:

  • In a small, bowl, combine the sage, salt, ground black pepper, marjoram, brown sugar, crushed red pepper and cloves. Mix well.
  • Place the pork in a large bowl and add the mixed spices to it. Mix well with your hands and form into patties.
  • Saute the patties in a large skillet over medium high heat for 5 minutes per side, or until internal pork temperature reaches 160 degrees F (73 degrees C).
