8 tablespoons unsalted butter, divided
4 eggs
1/2 cup plus 2 tablespoons granulated sugar
2 tablespoons light brown sugar
1/8 teaspoon salt
2 1/2 teaspoons baking powder
1 1/2 cups cake flour
1/4 teaspoon pure vanilla extract
1 tablespoon honey
2 madeleine or mini-madeleine pans
A pastry bag with a plain 1/2-inch tip
A pastry brush

Steps:

  • Melt 6 tablespoons of the butter in a heavy pan over medium heat. After it melts, continue to cook the butter, watching carefully. It will foam and subside, then separate into golden butterfat and cloudy white milk solids. The milk solids will begin to brown. When they are lightly browned and the butter smells nutty and toasted, remove from the heat and set aside for 5 minutes to cool. Strain the butter through a fine strainer to remove the larger brown bits.
  • Whip the eggs and sugars until light and fluffy in a mixer fitted with a whisk attachment. Mixing at low speed, add the dry ingredients. dd the vanilla extract, honey, and brown butter and mix to combine well. (The recipe can be made up to this point and kept refrigerated up to 3 days in advance.)
  • When ready to bake, melt the remaining 2 tablespoons of butter. Double-butter your baking pans by using a pastry brush to thickly coat the pans with melted butter, then chill in the freezer until firm. Repeat to make a thick coat of cold butter. Heat the oven to 375 degrees F. Pipe or spoon the batter into the madeleine molds, filling them no more than 3/4 full. The recipe can be made up to this point early in the day, then refrigerated until ready to bake. Add 1 minute to the baking time.)
  • Bake until firm, about 5 to 8 minutes for large madeleines and 5 minutes for miniatures. Immediately knock them out of the pan and serve, or let cool to room temperature, store in an airtight container and serve later the same day.

BUFFALO CHICKEN MEATLOAF

3 tablespoons ketchup
1 tablespoon hot sauce
Nonstick cooking spray, for spraying the loaf pan
3 tablespoons unsalted butter
3 stalks celery, small diced (about 1 cup), celery leaves reserved for garnish
1/2 medium onion, small diced (about 1 cup)
3 tablespoons hot sauce
1 1/2 pounds ground chicken, 50/50 light and dark
1 cup blue cheese crumbles
1 1/2 teaspoons kosher salt
2 teaspoons coarsely ground black pepper
2 large eggs
2 1/4 cups panko breadcrumbs
1/4 cup grated Parmesan

Steps:

  • For the sauce: Whisk together the ketchup and hot sauce in a small bowl and set aside.
  • For the meatloaf: Preheat the oven to 350 degrees F. Grease a 9-by-5-by-3-inch loaf pan with cooking spray and set aside.
  • Melt the butter in a medium saute pan over medium-high heat. Once melted, saute the celery and onion until softened, 3 to 5 minutes. Transfer the mixture, with the drippings, to a large bowl. Add the hot sauce to the bowl and stir to combine. Add the chicken, blue cheese, salt, pepper, eggs and 1 1/2 cups of the panko and mix until well combined.
  • Press the mixture into the prepared loaf pan, pressing more in the center of the loaf to create a divot. This will allow the meatloaf to bake evenly and not create a mound after it is baked. Spread the sauce over the top of the meatloaf. Mix the Parmesan with 1/2 cup of the panko and sprinkle the mixture on top of the sauce. Bake until the center is set and the top is golden brown, 45 minutes to an hour. Let rest about 15 minutes before cutting to serve.
  • Meanwhile, toast the remaining 1/4 cup panko in a dry pan until lightly golden and set aside.
  • Garnish the meatloaf slices with the toasted panko and chopped celery leaves.

1 1/2 sticks unsalted butter, melted and cooled, plus 2 tablespoons for greasing pan
3/4 cups unbleached all-purpose flour, plus more for dusting
1 teaspoon baking powder
4 large farm fresh eggs
Pinch fine salt
2/3 cups sugar
Zest of 1 large lemon
Juice of 1/2 a lemon
1 vanilla bean, seeded
Powdered sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Butter the madeleine molds and dust them with flour.
  • Add the flour and baking powder to a medium bowl and whisk well.
  • Add the eggs and the salt in the bowl of a stand mixer with a whisk attachment and whip at high speed until they triple in volume, about 3 minutes. Pour in the sugar and then the vanilla seeds. Continue beating for a few moments, and then add the lemon zest and juice Slow down the mixer to medium-low and gradually add the flour mixture. When all the flour has been incorporated, add the melted butter.
  • As soon as the butter has been absorbed by the mixture, turn off the mixer and pour the batter into a large measuring cup. Pour the batter into the molds, filling each mold two-thirds of the way full.
  • Bake the madeleines until the edges are golden brown, 13 to 14 minutes. Remove from the oven and unmold immediately. Cool on racks and dust with powdered sugar.

1 ounce drained capers (about 1 tablespoon)
3 cloves garlic
1 teaspoon kosher salt
2 tablespoons Dijon mustard
3/4 cup mayonnaise
1 tablespoon toasted sesame oil
1/8 to 1/4 teaspoon cayenne pepper, depending on how spicy you like it
Small pinch ground cloves
1 lemon, juiced (about 3 tablespoons)
Freshly ground black pepper
1 1/2 bunches kale, stemmed and torn into bite-size pieces
1 cup croutons
1/4 cup shaved Parmesan

Steps:

  • For the dressing: Mince the capers and the garlic; add the salt and use the back of your knife to grind into a paste. Add the paste to a medium mixing bowl along with the mustard, mayonnaise, sesame oil, cayenne and cloves. Whisk to combine. Stir in lemon juice, and add pepper to taste.
  • For the salad: Combine the kale and 1 cup of the dressing in a large bowl, and toss to coat. Let sit for about 30 minutes in the refrigerator to help tenderize the kale.
  • Before serving, top the salad with the croutons and shaved Parmesan. If the kale is too dry, add more dressing as needed. Serve immediately, with remaining dressing on the side.

  • Spoon a heaping teaspoon of batter into each mold; it should rise two-thirds of the way up the sides of the molds. If you only have 1 madeleine pan, chill remaining batter (you'll need to wash and dry pan before greasing and flouring again).
