GERMAN BRATKARTOFFELN RECIPE BY TASTY

German Bratkartoffeln Recipe by Tasty image

Here's what you need: bacon, yellow onion, vegetable oil, yukon gold potatoes, salt, pepper, fresh parsley

Provided by Kiano Moju

Categories     Sides

Yield 4 servings

Number Of Ingredients 7

1 cup bacon, diced
½ cup yellow onion, diced
½ cup vegetable oil
3 yukon gold potatoes, boiled whole until just tender and cut into quaters
1 teaspoon salt
½ teaspoon pepper
2 tablespoons fresh parsley, chopped

Steps:

  • Sauté the bacon in a large pan over medium heat until golden brown, about 10 minutes. Remove the bacon from the pan with a slotted spoon, leaving as much grease as possible in the pan, and set aside to drain on paper towels.
  • In the pan with the bacon fat, sauté the onions until translucent, for about 5 minutes.
  • Remove the onions from the pan, leaving behind any remaining bacon fat.
  • Add the vegetable oil to the bacon fat and heat over medium-high heat.
  • Add the potatoes to the pan. Season with salt and pepper and sauté the potatoes until they begin to get a golden crust, 15-20 minutes.
  • Return the bacon and cooked onions to the pan and toss gently with the potatoes. Sauté for another 5 minutes, until everything is heated through and golden brown.
  • Transfer to a serving bowl and garnish with parsley.
  • Enjoy!

KARTOFFELPUFFER (POTATO PANCAKES)

Kartoffelpuffer (Potato Pancakes) image

Just like Gramma used to make on the old wood-burning stove! Excellent to serve with bacon and eggs for breakfast or as a side-dish for a light supper during Advent. Similar to hash-browns ONLY BETTER!

6 medium potatoes, scrubbed
1 medium onion
2 eggs, lightly beaten
1/3 cup flour
1/2 teaspoon salt
cooking oil or bacon fat

Steps:

  • Grate potatoes and onion. Stir in eggs, flour and salt immediately.
  • In preheated electric frying pan (350 F)or frying pan over medium high stove-top, add cooking oil or bacon fat--about 2 T per batch.

KARTOFFELKLOESSE (GERMAN POTATO DUMPLINGS)

Kartoffelkloesse (german Potato Dumplings) image

Just what the name implies - these are German-style potato dumplings, as found everywhere in the South of Germany, Austria and Bohemia. These are traditionally served with any roast with gravy, but most well-known as an accompaniment for a hearty Sauerbraten and red cabbage. Like polenta, second-day leftovers are a treat when sliced into slabs and fried in butter.

Provided by LastBaron

Categories     Potato

Time 40m

Yield 12 dumplings, 6 serving(s)

Number Of Ingredients 9

1 1/2 lbs russet potatoes (about 2 large)
1 1/2 teaspoons salt
1/8 teaspoon ground nutmeg
1/2 cup all-purpose flour (or more)
1/8 cup cornstarch (or potato starch, much preferred, if you can get it)
1 large egg
2 slices sourdough bread or 2 slices white bread (good quality, not supermarket foam crap)
1 tablespoon unsalted butter
1 tablespoon corn oil or 1 tablespoon vegetable oil

Steps:

  • Trim crusts off bread and save them for another use.
  • Cut bread into 1/2-inch cubes and fry in butter and oil mixture until golden brown, transfer to paper towel to dry.
  • Cook scrubbed, unpeeled potatoes in large pot of boiling salted water until tender, about 45 minutes.
  • Drain.
  • Cool slightly.
  • Peel.
  • Cut potatoes into large pieces.
  • Refrigerate until cold, about 30 minutes.
  • Mash potatoes with fork or run through ricer into large bowl.
  • Mix in salt and nutmeg.
  • Add 1/2 cup flour and cornstarch.
  • Using hands, knead mixture in bowl until smooth dough forms, adding more flour by tablespoonfuls if dough is sticky.
  • Mix in egg.
  • Form dough into balls, using 1/4 cupful for each.
  • Insert bread cube into center of each dumpling; roll dumpling between palms to enclose bread cube completely and form smooth balls.
  • Working in batches, cook dumplings in large pot of nearly boiling salted water 10-15 minutes (or until dumplings rise to top).
  • Using slotted spoon, transfer dumplings to large bowl.
  • Keep covered with a damp kitchen towel as remaining dumplings are cooked.
  • You should place no more than 4-5 dumplings in your pot at any one time in order to prevent them from sticking together or touching during cooking, which will cause them to fall apart.

KARTOFFELSALAT - GERMAN POTATO SALAD

Kartoffelsalat - German Potato Salad image

This recipe is from German Deli.com and they recommend using Schaller and Weber bacon, but any smoked bacon (not maple "flavor") will do. This salad can be served hot or cold.

Provided by DeSouter

Categories     Potato

Time 50m

Yield 8 serving(s)

Number Of Ingredients 9

5 lbs potatoes (baking potatoes are NOT recommended, as they are too flaky)
1/2 cup diced smoked bacon
1/2 cup vegetable oil
3 tablespoons white vinegar
1 teaspoon sugar
1 teaspoon sea salt
1/4 teaspoon fresh ground pepper
3/4 cup sliced green onion
1/4 cup chopped chives

Steps:

  • Place unpeeled potatoes in cold salt water and bring to a boil.
  • Boil gently until potatoes are tender, but still firm.
  • Do not overcook.
  • Pour off the boiling water and allow potatoes to cool until easy to handle.
  • (The drained, unpeeled Potatoes can also be placed in a refrigerator overnight).
  • Peel cooled potatoes, slice, then place in a large bowl.
  • Slowly sauté the bacon in a skillet until the bacon pieces are crisp and golden brown.
  • Do not burn the bacon and do not drain the fat in the skillet.
  • Remove the skillet from the heat and add the oil, vinegar, sugar, salt and pepper.
  • Pour this mixture over the sliced potatoes in the bowl.
  • Add the green onions and the chives.
  • Gently toss the potatoes so all ingredients are evenly blended.
  • Taste and adjust seasonings, if necessary.

GERMAN SAVORY POTATO CAKE (KARTOFFELKUCHEN)

German Savory Potato Cake (Kartoffelkuchen) image

Germans love to serve rich, savory pastries - especially with potatoes and/or onion. This one is flavored with ham, garlic, and rosemary. This makes a great appetizer or if served with a salad, a nice accompaniment for lunch. This would be nice as a brunch item. Translated directly from the German version I found in "Schoener Essen" magazine.

Categories     Ham

Time 1h40m

Yield 16 serving(s)

Number Of Ingredients 14

2 1/2 kg starchy potatoes, divided
salt & pepper, to taste
caraway seed, to taste
1 medium onion, diced
175 g butter or 175 g margarine, divided
50 g ham, in small cubes
100 g flour
dry breadcrumbs, for dusting the pan
3 -4 sprigs fresh rosemary
1 garlic clove, chopped finely, more to taste
250 g sour cream or 250 g creme fraiche
5 -6 eggs (medium-large)
additional sour cream, to garnish
rosemary, to garnish

Steps:

  • Peel and wash the potatoes.
  • Divide the potatoes into two even portions; take one portion cut them into halves, then place in salted water and cook about 20 minutes, until soft enough to mash.
  • Shred the remaining raw potatoes.
  • Place 50 grams of the butter in a heated pan.
  • Sauté the onion and the ham chunks together in the butter.
  • Add the shredded potato and turning them over occasionally with a spatula, cook together for about 5-8 minutes.
  • Remove from the pan and let cool.
  • Drain the potatoes that have been cooking in the water and mash them (using a potato ricer).
  • Mix together with the remaining 125 grams of butter, the flour, and some salt & pepper, kneading together to make a dough.
  • Using the wrapper from your butter, grease a large rectangular rimmed baking tin about 32 x 39 cm in size (or use a rimmed cookie sheet) and then dust pan with breadcrumbs (If you already tossed your wrapper, just grease the pan with a little butter or oil).
  • Press out the potato dough evenly to form a crust in the pan.
  • Strip the rosemary leaves from their stems and chop them.
  • Whisk together the eggs, rosemary, garlic, sour cream, caraway seeds (optional), and combine with the shredded potato mixture.
  • Season with salt& pepper to taste.
  • Spread this mixture on top of the potato pastry.
  • Place on a lower rack in the oven (preheated to around 200°C) and bake approximately 50 minutes.
  • Cool slightly (about 5-10 minutes), then cut into 16 squares.
  • Garnish with a small dollop of sour cream and a bit of fresh rosemary, if desired.

SAARLäNDISCHER DIPPELAPPES OR KARTOFFEL CHARLES - PO

Saarländischer Dippelappes or Kartoffel Charles - Po image

My grandmother had to provide during WWII for her children. Her husband was on a Ship on the Spanish coast. She had to take on odd jobs, which she was paid in potatoes, eggs, bacon, and or vegetables. She was able to make fantastic meals with little ingredients. This is my favourite, it is great for those cold, rainy days. If you would like the complete story of this recipe you may can go to http://grannyjam.blogspot.com/
