EASY RYE SANDWICH ROLLS
Delicious rolls for any type sandwich.

Steps:
- Add the warm water and yeast to a large bowl with a pinch of sugar and set aside.
- In a medium bowl, stir together the rye flour, the whole wheat flour, 1/2 cup of the bread flour, the salt, and the sugar.
- Add those dry ingredients and the warm dill pickle juice to the yeast mixture and beat well for 1 to 2 minutes until the mixture is stringy but smooth.
- Cover and set aside for 20 minutes.
- Stir in the oil, then add the remaining 1-1/2 cups of bread flour, 1/2 cup at a time. When the dough is so stiff that you can't stir in anymore flour, start kneading it in by hand, either in the bowl or on a countertop.
- Knead for 3 to 5 minutes until the dough is smooth; don't add any more flour as that will make the rolls dry.
- Lightly oil a clean bowl, add the dough and turn it over to oil all the surfaces then cover the container, and let the dough rise until doubled, about 30 minutes.
- Line a large baking sheet with parchment paper and preheat the oven to 375°F.
- Turn the dough out onto a lightly oiled surface and divide into 16 equal pieces; if you have a scale, they'll weigh about 2 ounces each.
- Round into smooth balls and place on the prepared sheet pan.
- Cover with a tea towel and let the rolls rise until they've doubled in size, about 45 minutes, and when you poke a finger into the side of a roll the dough doesn't immediately spring back.
- Gently brush the risen rolls with the egg wash then liberally sprinkle with your desired topping.
- Bake for 18 to 20 minutes, until an instant-read thermometer inserted into the middle of the rolls reads 190°F to 200° F.
- Remove the rolls from the oven, and set the pan on a cooling rack for 5 minutes, then set the rolls directly on the rack to cool.
- To freeze, double wrap in plastic.

- In a large bowl, dissolve yeast in warm water. Add 3 eggs, milk powder, butter, brown sugar, molasses, salt, baking soda and 2 cups all-purpose flour. Beat until smooth. Add rye flour and enough remaining all-purpose flour to form a soft dough (dough will be sticky)., Turn onto a well-floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Divide dough into 30 pieces; shape each into a ball. Place 2 in. apart on greased baking sheets. , In a small bowl, whisk cold water and remaining egg; brush over dough. Sprinkle with caraway seeds and/or kosher salt. Cover and let rise until doubled, about 45 minutes. , Bake at 350° for 14-16 minutes or until golden brown. Remove to wire racks.

PUMPKIN RYE ROLLS
I had some leftover pumpkin and thought I'd try to make a bread...then remembered I had alot of rye flour left from a previous bread making day. So decided to combine them. :o) Taste super good...this make a dense more heavy bread verses light and fluffy.

- 1. In a large bowl mix together warm milk and 1-2 tsp sugar. Sprinkle with yeast and gently mix in. Allow to stand for 3-5 minutes, until starts to foam.
- 2. Add butter, brown sugar, pumpkin, eggs, salt and rye flour. Using paddle attachment mix for 3 minutes on medium speed.
- 3. Switch to dough hook, turn mixer on low and slowly add AP flour 1 cup at a time, when you hit 3 cups, continue to knead dough for 2 minutes, if dough is still to wet/really sticky add a couple tablespoons of flour at a time until dough is only slightly sticky and pulling away from sides of bowl. At that time, continue to knead dough another 2-3 minutes.
- 4. Dump dough into a buttered, sprayed or oiled bowl. Cover with plastic wrap or a clean lint free dish towel, such as a tea towel. Place in warm area to rise. Once doubled in size, about an hour, punch down and shape into golf ball or little larger size balls. Place onto sprayed jelly roll pan, cover with tea towel, and let rise again, until doubled in size.
- 5. Then bake at 375 for 20 minutes a little less if you like a doughy roll, a little more if you like a thicker crust. You may brush the tops with melted butter for a softer crust when they come out of the oven.
CARAWAY RYE DINNER ROLLS

Add to dry ingredients; beat on medium speed 3 minutes. - Line a baking sheet with parchment paper; set aside. Butter a large bowl; set aside. Put yeast, warm water, sugar, egg, and 3 tablespoons butter in the bowl of an electric mixer fitted with the dough hook. Mix on medium speed 1 minute.
- Reduce mixer speed to low. Mix in salt, flours, and caraway seeds. Raise speed to medium-high, and beat until dough comes together, about 10 minutes. Turn out dough onto a lightly floured work surface. Knead until smooth, 15 to 20 minutes, then transfer to buttered bowl. Cover dough with a clean kitchen towel, and let rise in a warm place until doubled in bulk, about 1 hour.
- Using a butter knife, cut dough into 12 equal pieces. Roll into balls, and space 1 1/2 inches apart on prepared baking sheet. Cover dough with buttered plastic wrap. Let rise in a warm place until doubled in bulk, about 1 hour.
- Preheat oven to 350 degrees. Using a sharp knife, cut an X in the top of each roll. Bake rolls until golden brown, about 35 minutes. Transfer rolls to a wire rack set over a baking sheet, and brush with remaining 3 tablespoons butter. Sprinkle tops with sea salt. Serve.

- Line a cookie sheet with parchment paper and set aside.
- Butter a large bowl and set aside.
- In a large bowl combine yeast, water, sugar, egg and 3 tablespoons butter and mix on medium speed using a dough hook for one minute.
- Reduce mixer to low and add salt, flours and caraway seeds. Increase speed to med high and beat until dough comes together (10 minutes).
- Turn dough onto a lightly floured board and knead until smooth.
- Transfer dough to buttered bowl and turn to grease all sides and then cover with plastic wrap and/or a towel. Let rise in a warm place until double (1 hour).
- Turn dough onto floured board and cut into 12 equal pieces and then roll pieces into balls.
- Place balls on prepared cookie sheet and let rise for one hour.
- Preheat oven to 350°F.
- Cut an "x" in the top of each roll.
- Bake for 30-40 minutes or until golden.
- Transfer rolls to cooling rack and brush each roll with 3 tablespoons melted butter and then sprinkle with salt.

TRADITIONAL FRENCH PISTOLETS - LITTLE ONION AND RYE BREAD ROLLS
These lovely little dinner or breakfast rolls are found everywhere in Belgium, and in most parts of France too. The last time I had them was a cosy Bed and Breakfast in Bruges, where they were served warm with fresh butter and boiled eggs for breakfast. They can vary in what type of flour is used, but they must always have the distinctive split, due to them being cut with the handle of a wooden spoon before baking. They are crusty and yet light inside, and make great sandwiches for picnics or a light lunch. This recipe is the result of numerous trial and error baking sessions, and the pistolets bread rolls are nutty and full of onion flavour. I start these off in the bread machine for ease when I am pushed for time, but they are just as easily made the more traditional way, mixing and proving by hand. NB: As one reviewer found out, baking can be a challenge, and in most cases an exact science. Do try to stick to the recipe as written - you won't be disappointed! Thanks!

- To start the dough in the bread machine, add the ingredients in the order posted - except the topping and extra flour for dusting. Put on "dough" setting to mix, prove and rise.
- Pre-heat the oven to 220C/425F/Gas mark 7.
- Once the dough has risen, turn out of the tin on to a floured board and knock back, then knead for a minute or two. Cut into 12 pieces and shape into ovals. Place on well greased and floured baking sheets and cover with oiled cling-film; leave them in a warm place to rise for 30 minutes, or until almost doubled in size.
- Brush the rolls with water and then sprinkle with onion salt or normal salt, before dusting with flour. Using an oiled handle of a wooden spoon, split each roll almost in half lengthways, see photo. Allow to rest for 3 to 5 minutes before baking in pre-heated oven for 15 to 20 minutes. The pistolets should sound hollow when tapped and have a crusty finish. Allow them to cool slightly on a wire rack then serve warm with butter and fillings to taste. These freeze very well.
RYE BREAD
This rye bread recipe is lower in gluten than your average white loaf - this recipe uses white or wholemeal flour to give a light texture but you can experiment with ratios

- Tip the flours, yeast and salt into a bowl. In a jug, mix the honey with 250ml warm water, pour the liquid into the bowl and mix to form a dough. Rye flour can be quite dry and absorbs lots of water, if the dough looks too dry add more warm water until you have a soft dough Tip out onto your work surface and knead for 10 mins until smooth. Rye contains less gluten than white flour so the dough will not feel as springy as a conventional white loaf.
- Place the dough in a well oiled bowl, cover with cling film and leave to rise in a warm place for 1-2 hrs, or until roughly doubled in size. Dust a 2lb/900g loaf tin with flour.
- Tip the dough back onto your work surface and knead briefly to knock out any air bubbles. If using caraway seeds work these in to the dough. Shape into a smooth oval loaf and pop into your tin. Cover the tin with oiled cling film and leave to rise somewhere warm for a further 1 - 1.5 hr, or until doubled in size.
- Heat oven to 220C/200C fan/gas 7. Remove the cling film and dust the surface of the loaf with rye flour. Slash a few incisions on an angle then bake for 30 mins until dark brown and hollow sounding when tapped. Transfer to a wire cooling rack and leave to cool for at least 20 mins before serving

- Put all ingredients in bread maker in that order (unless your bread maker has a special requirement).
- Put on dough cycle.
- After dough cycle is complete, turn out onto a lightly floured surface.
- Roll into a log.
- Cut log into 6 equal sized pieces, make each piece into a roll.
- Place on a parchment sheet. I like to flatten them so they are more like hamburger rolls and better for sandwiches. Brush with oil. Cover with a cloth or piece of plastic wrap and allow to rise in a warmish place for 50-60 minutes or until doubled in size.
- Bake in a 200 degree oven for 12 minutes.
