COPYCAT GOLDEN CORRAL'S ROLLS

Copycat Golden Corral's Rolls image

A clone recipe of the soft dinner rolls from the Golden Corral restaurant. The rolls are made with yeast, sugar, butter, flour, egg, and milk.

Provided by smithfamilyrecipes

Time 3h

Yield 24

Number Of Ingredients 9

1 envelope active dry yeast
1/4 cup very warm water
1/3 cup sugar
1/4 cup butter or margarine
1 teaspoon salt
1 cup scalding hot milk
1 egg, lightly beaten
4 1/2 cups sifted all-purpose flour
2 tablespoons melted butter or margarine, for brushing rolls

Steps:

  • Sprinkle the yeast over very warm water in a large bowl (Very warm water should feel comfortably warm when dropped on wrist.) Stir until yeast dissolves. Add sugar, the 1/4 cup butter or margarine and salt to hot milk and stir until the sugar dissolves and butter or margarine is melted. Cool mixture to 105 to 115 degrees F. Add milk mixture to yeast, then beat in egg. Beat in 4 cups of the flour, 1 cup at a time, to form a soft dough. Use some of the remaining 1/2 cup of the flour to dust a pastry cloth. Knead the dough lightly for 5 minutes, working in the remaining flour (use it for flouring the pastry cloth and your hands). Place dough in a warm buttered bowl; turn greased-side up. Cover and let rise in a warm place until doubled in bulk, about 1 1/4 to 1 1/2 hours. Punch dough down and knead 4 to 5 minutes on a lightly floured pastry cloth. Dough will be sticky, but use as little flour as possible for flouring your hands and the pastry cloth, otherwise the rolls will not be as feathery light as they should be. Pinch off small chunks of dough and shape into round rolls about 1 1/2 to 1 3/4 inches in diameter. Place in neat rows, not quite touching, in a well-buttered 13- by 9- by 2-inch pan. Cover rolls and let rise in a warm place until doubled in bulk, 30 to 40 minutes. Brush tops of rolls with melted butter or margarine, then bake in a 375 degrees F oven for 18 to 20 minutes or until nicely browned. Serve warm with plenty of butter.

QUINCY'S YEAST ROLLS

Quincy's Yeast Rolls image

I've finally tried this recipe and tweaked it enough to get it reasonably close. These are the closest I've seen to my favorite rolls in places like Quincy's, Grandy's, etc. It's a nice soft squishy yeast roll, perfect with any meal. To clarify the directions since one reviewer mentioned that they had a problem with their first batch: Make sure that your machine's dough cycle includes the rising time! I thought everyone's did, but apparently not. (My own personal machine mixes up the ingredients and then there's a total rise time of a little over an hour (closer to 1.5 hours). So, if you think your ABM just mixes things up but doesn't allow for rising time, add a 2 hour (approx) rise time between steps 1 and 2. If your machine's dough cycle DOES have a built in rising time, then you're all set, and you can follow the instructions exactly, no need for extra rising time.

Yield 12 serving(s)

Number Of Ingredients 7

1 cup water
2 tablespoons melted butter
1 egg
3 1/2 cups bread flour
1/4 cup sugar
1 teaspoon salt
3 teaspoons yeast

Steps:

  • Place all ingredients in above order in bread machine.
  • After dough cycle completes, remove and shape as rolls, placing them in a pan lined with parchment paper.
  • Let rise for 30 minutes.
  • Brush tops with butter prior to baking (I use about 2 tbl spoon melted margarine).
  • Bake 20 to 25 minutes at 350 degrees until golden brown, on the highest rack possible in your oven.
  • Brush the tops with honey butter to give it a slightly sweet taste, as soon as you get them out of the oven. Now eat, and enjoy!

YEAST ROLLS

Yeast Rolls image

My sister-in-law gave me this recipe. She makes these during the holidays and they are melt-in-your-mouth delicious. I hope she doesn't mind me sharing it here.

Provided by Lori Fleming

Categories     Other Breads

Number Of Ingredients 6

6 c warm water (use 1 cup to mix with yeast)
3 Tbsp salt
4 Tbsp (or 4 packages) yeast (dissolve and mix with liquids)
1 c sugar
1 c oil
5 lb flour

Steps:

  • 1. Mix ingredients together and knead with hands. If sticky, add a handful of flour. Roll into a ball and press a hole in the middle with a spoon. Pour oil into hole and then spread over the top. Cover with wax paper and set in a warm place to rise. Let it double in size.
  • 2. Grease pans with shortening. Squeeze off a small ball of dough. Knead and roll in shortening. Place in pan in rows, 1/2 inch apart. Let dough rise to top of pan. Bake at 350F for 30 minutes. Smear shortening on top of rolls and let cool for 15 minutes in the pan and then turn them out onto a towel and let bottoms cool. Then return to pan.

GOLDEN CORRAL ROLLS RECIPE - (3.9/5)

Golden Corral Rolls Recipe - (3.9/5) image

Provided by Foodiewife

Number Of Ingredients 12

2 1/4 teaspoon fast acting yeast (or 1 package)
1/4 cup warm water, 105°F to 110°F
2 teaspoon sugar
1 cup milk, just to scalding hot, do not simmer or boil
1/3 cup sugar
1/4 cup butter
1 teaspoon salt
1 egg, lightly beaten
3 1/2 cup bread flour (dough will be somewhat sticky, but the less you use, the lighter the rolls)
1 cup whole wheat flour
1/4 cup vital wheat gluten (optional)
2 tablespoon butter, melted, for brushing

Steps:

  • Dissolve yeast in 1/4 cup warm water. Stir in the 2 teaspoons of sugar. Let sit for about 5 minutes until mixture foams up. Heat milk in microwave or in small saucepan on stove top. Add sugar, butter, and salt to hot milk and stir until butter is melted. Cool to 105°F to 110°F. Pour milk mixture into bowl of stand mixer. Add the yeast mixture and egg. Mix together. Mix in all-purpose flour, whole wheat flour, vital wheat gluten. Beat to form a soft dough. Knead with mixer for 5 minutes, adding extra flour, if needed. Place dough in warm oiled or buttered bowl, turning greased side up. Cover with a clean towel and let rise in warm place* until doubled in bulk, about 60 minutes. Punch dough down and hand-knead for 5 minutes on lightly floured surface. Divide dough into 12 pieces and shape into round rolls. Place them, not touching, in greased 13x9x2 baking pan. Cover with a clean towel; let rise in a warm place until doubled in bulk, about 30-45 minutes. Bake at 375°F for 18 to 20 minutes or until tops are golden brown. Brush tops of rolls with melted butter. You can use your oven as a dough incubator, turning it on to 400°F for one minute, then turning it off, and placing bowl of dough in the oven for the two rising times. I also like to place a pan of water on the bottom of my oven. I've read that it mimics a convection oven and helps bread to bake moist.

YEAST ROLLS

Categories     side-dish

Time 4h15m

Yield 24 rolls

Number Of Ingredients 9

1/2 cup sugar, plus a pinch
1/2 cup warm water (105 to 115 degrees F)
2 packages active dry yeast
2 teaspoons salt
1/3 cup solid vegetable shortening
1 cup cold water
1 egg, well beaten
4 1/2 cups all-purpose flour
2 tablespoons butter, melted

Steps:

  • In a large bowl, add a pinch of sugar to the warm water. Sprinkle the yeast over the top and let stand until foamy, about 5 minutes. Stir to dissolve yeast. Beat in the remaining sugar, salt, shortening, cold water, and egg until well blended. On low speed, beat in 2 cups of flour and beat for 2 minutes. Beat in enough of the remaining flour, 1/2 cup at a time, to make soft dough. Place the dough in a well-greased bowl and turn to coat the dough. Cover with a towel and let rise until doubled in bulk, about 1 1/2 hours.
  • Punch the dough down and refrigerate for 2 hours. The dough will almost double in bulk. Grease 2 (9-inch) cake pans. Turn the dough out onto a floured surface. Pull off pieces of the dough, about a 1/4 cup each and shape into 24 rolls. Place 12 rolls, sides touching in each of the 2 prepared pans. Brush with butter. Let rise in a warm place for 1 hour or until doubled.
  • Preheat oven to 425 degrees F. Bake the rolls until well browned on the top, about 15 minutes. Transfer the pan to wire racks to cool for 5 minutes.
