This Sweet Potato Beet and Goat Cheese Galette pairs the earthy flavor of beets and sweet potatoes, combined with the creaminess of goat cheese, encompassed in a delightful, toasted herbal pastry shell.

1 cup gluten free flour
1/4 cup coconut flour
1/2 tsp sea salt
1 tsp dried basil
1/4 tsp garlic powder
1/4 tsp onion powder
1/2 cup butter (works best if cold and cut into 1" pieces)
1/4 cup ice cold water
1/4-1/3 cup sliced onions
1-2 small beats (peeled and thinly sliced)
2 small sweet potatoes (peeled and thinly sliced)
1 garlic clove (minced)
2 oz goat cheese

Steps:

  • Preheat oven to preheat for 400 degrees.
  • While the oven heats, add gluten-free flour, coconut flour, sea salt, dried basil, garlic powder, and onion powder to bowl of food processor. Pulse 4-5 quick pulses to blend ingredients.
  • Add in the cubed butter pieces and pulse until you have a small crumbly texture (see photos), then gradually add in the icy water until mixture comes together, do not over-blend.
  • Flour a clean, dry surface, using gluten-free flour or coconut flour, then turn the mixture out and use your hands to form a 2" round, flat form. Wrap the dough in plastic wrap and put in refrigerator for 20-30 minutes (or longer).
  • While the dough refrigerates, peel and thinly slice sweet potatoes and beets. Then slice onions and set aside.
  • After 30 minutes, roll the dough out on to your floured surface to create a thin (approx 1/8"-1/4") 10" circle.
  • Layer the center of the dough with the sliced onions, then add a layer of sweet potatoes, then beets, reserving the most consistent and attractive beets and sweet potatoes to alternate for the top later. Make sure to leave about 1 1/2"-2" border around the outside edge of the dough.
  • Sprinkle with goat cheese and crushed garlic, then gather the edges of the dough, and fold them over the inner fillings. Bake for about 40 minutes or until beets and sweet potatoes are soft and cooked through. Let cool 5-10 minutes, then serve.

Thinly sliced sweet potatoes and ruby-red beets top a tender sea salt and herb coconut oil crust. This vegan entree is definitely worthy of a spot at your holiday table - and the best part is you don't have to worry about making it look perfect. The more rustic the better!

3-6 tablespoons ice cold water
2 cups 272 g white whole wheat flour + a little more for rolling
1 teaspoon dried Italian herb seasoning
1 teaspoon fine-grain sea salt
2/3 cup 160 g coconut oil (solid/scoopable, NOT MELTED)
1 medium sweet potato (peeled and very thinly sliced*)
2 medium beets (peeled and very thinly sliced*)
2 tablespoons olive oil
Pinch + 1/4 teaspoon coarse sea salt or kosher salt (divided)
2 tablespoons olive oil
1 medium clove garlic (finely chopped)
3 tablespoons finely chopped parsley (either curly or flat - both work)
1/8 teaspoon kosher salt or sea salt

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Brush a little olive oil on a large baking sheet.
  • Make the crust. Fill a bowl with 6 tablespoons water. Add 3-4 ice cubes and stir. Set aside.
  • In a medium bowl, mix together the flour, herbs, and sea salt. Add the coconut oil in dollops. Make sure your coconut oil is in solid, scoopable form. If it's in a liquid state (which happens right around 76 degrees Fahrenheit), refrigerate it until it's solid but stirrable, then proceed.
  • Using a pastry blender, two knives, or your clean hands, cut the coconut oil into the flour mixture, mixing until it is the texture of coarse crumbs or wet sand. Grab a wooden spoon and drizzle in the ice-cold water, a tablespoon at a time, stirring just until the dough starts to come together. Use your hands to form one cohesive ball of dough in the bowl. If it falls apart, add a bit more water.
  • Lay out a pastry sheet or large piece of parchment paper and sprinkle a little flour on it (I find it much easier to transfer the crust using a sheet or parchment). Place the dough on the sheet or counter top. Sprinkle a little flour on top of the dough. Roll it out into a circle about 14 inches diameter. With a knife, cut the rough edges off so that your pastry is in the form of a circle(ish - remember - rustic!) Reserve scraps. Using the parchment paper, carefully transfer the crust to the baking sheet. Don't worry if it rips or comes apart a bit - you can repair it right on the baking sheet. The crust is pretty forgiving.
  • Layer the beets and sweet potatoes on the dough, leaving about a 2-inch border. Start with a large circle of beets around the perimeter, then sweet potatoes, then repeat until you reach the center. Sprinkle with a pinch of salt and repeat with another layer, this time starting with sweet potatoes. Fold the edges of the dough up over the edges of the vegetables. If any of the dough tears or breaks, press it back together, or use your leftover scraps to patch it up if needed.
  • Brush the entire galette with 2 tablespoons olive oil and sprinkle the 1/4 teaspoon salt over the entire thing.
  • Bake until the crust is golden-brown and the vegetables are fork-tender, about 40 minutes.
  • In a small bowl, stir together the parsley, olive oil, garlic, and salt. Brush the mixture over the galette while it's still piping hot.
  • Cut into six wedges and serve.

Pre-cooked beets are widely found in supermarkets and are the perfect ingredient for a quick weeknight meal. In this recipe, you simply slice the beets and toss them with some seasoning before layering it in a store-bought pie dough to make an impressive looking, yet super simple, dish.

2 8.8-ounce packages fully cooked beets, cut into 1/4- to 1/8-inch-thick rounds
1 1/2 teaspoons fresh thyme, chopped
3 tablespoons extra-virgin olive oil, plus more for brushing
Kosher salt
1 round refrigerated pie dough (half of a 14-ounce package)
All-purpose flour, for dusting
4 ounces soft garlic-and-herb cheese (such as Boursin)
1 small onion, thinly sliced
2 tablespoons balsamic vinegar
2 tablespoons chopped walnuts
1 tablespoon finely chopped chives
4 cups mesclun greens

Steps:

  • Preheat the oven to 425˚ F. Pat the beets very dry with paper towels. Toss in a large bowl with the thyme, 1 tablespoon oil and 1/2 teaspoon salt.
  • Roll out the pie dough on a lightly floured surface into a 13-inch round; place on an inverted baking sheet. Spread the cheese evenly on the dough, leaving a 1 1/2-inch border. Shingle the beet rounds over the cheese. Fold in the edges of the dough over the beets, pleating as needed. Lightly brush the dough with olive oil. Bake until the edges and bottom of the galette are golden brown, 25 to 30 minutes.
  • Meanwhile, heat 1 tablespoon olive oil in a small skillet over medium heat. Add the onion, season with salt and cook, tossing occasionally, until the onion is golden and caramelized, about 15 minutes. Add 1 tablespoon balsamic vinegar and cook until the liquid is absorbed, 1 more minute.
  • Top the galette with the caramelized onion, walnuts and chives. Cut into 4 wedges and divide among plates.
  • Whisk the remaining 1 tablespoon balsamic vinegar and 1 tablespoon olive oil in a large bowl. Add the greens, season with salt and gently toss. Serve with the galette.

Every part of this simple galette has its charms. The crust is easy to pull together and since it's rolled out flat - no crimping or fluting - it's doable even if you're not a pie-hand. The topping is thin slices of sweet potato and apple brushed with maple syrup. And the filling is a hidden gem, a mix of cream cheese, Parmesan and maple syrup spiked with chile powder. Here, it's piment d'Ville, a California chile grown from the seeds of piment d'Espelette, native to French Basque Country. This type of chile is warm and toasty, a little hot and a little sweet and a jazzy partner that swings sweet and savory, just like the rest of the galette.

1 1/2 cups/192 grams all-purpose flour
2 tablespoons granulated sugar
1/2 teaspoon fine sea salt
8 tablespoons/113 grams very cold unsalted butter, cut into 16 pieces
About 1/4 cup/60 milliliters ice water
3 ounces/85 grams cream cheese, at room temperature
3 tablespoons grated Parmesan, plus more for sprinkling
1 tablespoon milk
1 tablespoon plus 2 teaspoons pure maple syrup
1 to 2 teaspoons piment d'Ville, piment d'Espelette or other ground red chile
1/2 teaspoon fine sea salt
1 medium sweet potato, scrubbed and dried
1 medium red apple, rinsed and dried
1 tablespoon olive oil
2 to 3 tablespoons chopped pecans, for sprinkling (optional)
Snipped chives, for sprinkling (optional)

Steps:

  • Make the crust: Pulse the flour, sugar and salt in a food processor to mix. While pulsing, drop the butter through the feed tube. Continue pulsing, scraping the bowl occasionally, until the mixture looks like coarse meal dotted with small and large chunks. Add water a little at a time, mixing in short and longer pulses between additions, until bumpy curds form. They should hold together when pinched. Press the dough into a ball, then flatten into a disk and place between parchment paper.
  • Roll the dough into a circle a bit larger than 11 inches in diameter, then trim to 11 inches; prick all over with a fork. Refrigerate between parchment on a baking sheet for at least 2 hours (or freeze for 1 hour).
  • Center a rack in the oven and heat oven to 400 degrees.
  • Cover the chilled crust (still between parchment on the baking sheet) with another baking sheet. Bake for 15 minutes, remove the top baking sheet and parchment paper and bake for another 8 minutes or so, until lightly golden. Set aside. (You can make this up to 8 hours ahead.)
  • Make the galette: In a medium bowl, with a flexible spatula, beat together the cream cheese, Parmesan, milk, 2 teaspoons maple syrup, 1 teaspoon chile powder and the salt. Taste and add more chile, if you'd like. (It will get hotter when it bakes.) Cut the potato and the apple into very thin rounds using a mandoline or sharp knife.
  • While you don't want the cheese mixture to completely cover the crust, you do want the potato and apple slices to go right to the edge of the crust, so spread the cheese mixture over the crust, leaving a 1/2-inch border. Then, cover the entire crust with the potato and apple slices in slightly overlapping concentric circles. (You may have some slices left.) Mix together the remaining 1 tablespoon of maple syrup, the oil and 1/4 teaspoon chile powder. Brush this mixture over the galette (just gloss the top - you might not need all of the mixture). Sprinkle with Parmesan and pecans, if using.
  • Bake for about 20 minutes, or until the potatoes are softened and cooked through (test with the point of a knife). Scatter with chives, if using, and let cool for at least 10 minutes before serving. The galette is also good warm or at room temperature.

Steps:

  • Melt butter in heavy medium saucepan over medium heat. Add brown sugar, ginger, lemon peel and salt; stir until sugar dissolves, about 4 minutes. Keep warm.
  • Position rack in top third of oven and preheat to 400°F. Line 9- to 10-inch-diameter, 13/4-inch-deep ovenproof skillet with foil. Spray foil with nonstick spray. Toss sweet potatoes and yams with flour in large bowl. Add brown sugar mixture; stir to coat potatoes and yams. Arrange sweet potatoes and yams alternately in overlapping circles in prepared skillet. Spoon any remaining brown sugar mixture over potatoes. Press on potatoes to compact. Cover with foil.
  • Bake potatoes until just tender, about 1 hour. Uncover and press potatoes with metal spatula to compact. Continue baking until potatoes are very tender, pressing on potatoes occasionally, about 30 minutes longer. (Can be made 4 hours ahead. Let stand at room temperature. Rewarm in 400°F oven about 30 minutes.) Let stand 10 minutes. Using oven mitts, invert skillet onto platter. Remove skillet. Peel off foil. Replace any pieces of sweet potatoes and yams that may have become dislodged. Cut galette into wedges; serve with lemon wedges.
