A yummy delight which has become a holiday tradition in our family as it will in yours! It is surprisingly easy to prepare! Rum may be omitted or substituted with 1 teaspoon rum extract.

1 (4.6 ounce) package non-instant vanilla pudding mix
¼ teaspoon ground nutmeg
1 ½ cups eggnog
2 teaspoons rum
2 cups heavy cream
1 (9 inch) pie shell, baked
1 pinch ground nutmeg

Steps:

  • In a medium saucepan, combine pudding mix, 1/4 teaspoon nutmeg, and eggnog; mix well. Cook over medium heat, stirring constantly, until thick and bubbly. Remove from heat, and stir in rum. Transfer mixture to a large bowl, cover, and refrigerate until thoroughly chilled.
  • In a medium bowl, whip the cream to soft peaks. Remove the cold pudding from the refrigerator, and beat until smooth; fold in whipped cream. Spoon into baked pie shell. Sprinkle additional nutmeg over the top for garnish. Refrigerate 4 hours, or until set.

This is an OLD recipe for eggnog pie. The recipe calls for making eggnog from scratch like my grandmother used to. You can put this in a traditional crust or Pecan Nut Crust from this site. Boiling the rum before adding to the recipe will remove almost all the alcohol. This really is an easy pie to make, and once you get the hang of it you can just about make it with your eyes closed! I guarantee rave reviews at Thanksgiving or Christmas!

1 (9 inch) pie crust, baked
1 ½ (.25 ounce) packages unflavored gelatin
¼ cup dark rum
4 egg yolks
⅓ cup white sugar
1 ⅓ cups scalded milk
1 ½ teaspoons vanilla extract
1 pinch salt
4 egg whites
¾ cup heavy cream, chilled
1 cup heavy cream, chilled
3 tablespoons confectioners' sugar
2 tablespoons rum, or to taste
⅛ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1 pinch ground nutmeg, for garnish

Steps:

  • Sprinkle gelatin over 1/4 cup dark rum to soften for about 10 minutes.
  • Beat egg yolks and sugar with an electric mixer until the egg mixture falls like ribbon off the beaters, 3 to 5 minutes. Continue mixing on medium-high speed, and pour in scalded milk in a thin stream, mixing constantly.
  • Transfer mixture into a saucepan. Cook over medium-low heat, stirring constantly, until the custard coats a spoon, about 20 minutes. Do not allow to boil. Take the pan off the heat, and transfer to a bowl. Stir in softened gelatin mixture and vanilla, stirring until gelatin is completely melted. Chill custard over a bowl of ice until room temperature. Stir occasionally; do not let the custard set up.
  • Beat egg whites with a pinch of salt until stiff but not dry; set aside. Whip 3/4 cup heavy cream until medium-stiff peaks form. Gently fold whipped cream into the whipped egg whites. Fold in custard. Spread filling into prepared pie crust. Chill for 45 minutes in the refrigerator, or until filling is set.
  • Combine 1 cup chilled whipping cream, confectioner's sugar, 2 to 3 tablespoons rum, nutmeg, and cinnamon. Whip until soft peaks form. Spread over the top of the chilled pie, mounding in an attractive fashion. Dust the top of the pie with additional nutmeg.

I found this recipe last year on the back of an eggnog gift set. This pie is easy to make and compliments a Thanksgiving or Christmas dinner well. It keeps for days in the refrigerator so it can be made ahead of time. You can use eggnog with or without alcohol in it. I like to use Evan William's eggnog which has a lot of booze in it. Enjoy!

1 prepared 9-inch pie crust
1 (3 ounce) package vanilla pudding mix (not instant)
1/4 teaspoon ground nutmeg
1/4 teaspoon cinnamon
1 1/2 cups eggnog
2 tablespoons light rum (if using alcohol-free eggnog, or omit if you prefer a non-alcoholic pie)
2 cups heavy cream, whipped
nutmeg, for dusting

Steps:

  • In meduim saucepan combine pudding mix, 1/4 tsp nutmeg, and eggnog; mix well.
  • Cook over medium heat until thick and bubbly.
  • Remove from heat and stir in rum (if using); cool thoroughly.
  • Beat until smooth; fold in whipped cream.
  • Spoon into pie shell.
  • Dust with additional nutmeg to make it look nice.
  • Chill at least 4 hours.

2 cups eggnog
1 cup milk
1 package (4.6 ounces) cook-and-serve vanilla pudding mix

Whipped topping and additional ground nutmeg, optional

Steps:

  • Preheat oven to 425°. Unroll crust into a 9-in. pie plate; flute edge. Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool on a wire rack., In a large saucepan, cook the eggnog, milk and pudding mix over medium heat until thickened and bubbly. Remove from the heat and cool slightly. Stir in rum and nutmeg. Like eggnog? Then this pie will be a hit on your holiday table for both Thanksgiving and Christmas. The mixture has primarily the eggnog you buy at the store with a chocolate mixture for the bottom layer, and a plain layer for the top with a light rum flavoring mixed in. I first got this recipe when I tried this pie at a friend's traditional Black Friday pie party. They have family and friends bring their favorite pies, and the first time I attended this was one of them.

1 tablespoon knox unflavored gelatin
1/4 cup cold water
1/3 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
2 cups eggnog
1 teaspoon vanilla
1 1/2 baker's semi-sweet chocolate baking squares
1/2 pint whipping cream
1/4 cup sugar
1 teaspoon rum extract

Steps:

  • In a small bowl dissolve gelatin in cold water.
  • Cook in saucepan on stove until thick stirring constantly: 1/3 cups sugar, 2 TBSP cornstarch, 1/4 tsp salt and 2 cups eggnog.
  • When cooked add softened gelatin, and stir until dissolved. Add 1 tsp vanilla.
  • Divide cooked mixture in half. Melt 1 1/2 squares chocolate and stir into one half of the cooked mixture and cool the plain half of the mixture.
  • Pour chocolate half into 9" baked pie shell.
  • Whip 1/2 pint of whipping cream along with 1/4 cups sugar and 1 tsp rum extract. Fold into plain half of cooked mixture.
  • Layer plain mixture on top of chocolate mixture.
  • Garnish with additional whipped cream, chocolate shavings, or nutmeg if desired.
  • Chill and serve.

20 gingersnap cookies
¼ cup pecan pieces
3 tablespoons sugar
¼ teaspoon McCormick® ground ginger
¼ teaspoon McCormick® nutmeg
½ teaspoon kosher salt
½ stick unsalted butter, melted
½ cup sugar
¼ cup cornstarch
2 cups eggnog
6 large egg yolks
1 teaspoon McCormick® Ground Nutmeg
½ teaspoon kosher salt
3 tablespoons unsalted butter, cold, cubed
4 tablespoons brandy, optional
4 tablespoons rum, optional
2 cups heavy cream
⅓ cup powdered sugar
1 teaspoon McCormick® vanilla extract

Steps:

  • Make the crust: Preheat the oven to 350˚F (180˚C). Lightly grease a 9-inch pie tin with nonstick spray.
  • Add the gingersnap cookies and pecans to a food processor and pulse until finely ground. Transfer to a medium bowl and stir in the sugar, ginger, nutmeg, and salt. Make a well in the center and pour in the melted butter, then mix until well incorporated.
  • Transfer the cookie crumb mixture to the prepared pie tin, then use a flat-bottomed measuring cup or drinking glass to press evenly against the bottom and up the sides. Refrigerate for 15 minutes.
  • Bake the pie crust for 15 minutes, until golden brown and set. Remove from the oven and let cool while you make the filling.
  • Make the filling: Add the sugar and cornstarch to a medium saucepan and whisk very well to remove any lumps. Gradually pour in the eggnog, whisking between additions, to prevent lumps. Whisk in the egg yolks, nutmeg, and salt. Cook over medium heat, whisking constantly, until the custard thickens to the consistency of pudding and starts to boil, 4-6 minutes. Remove the pot from the heat and whisk in the butter, brandy, and rum, if using, until smooth.
  • Pour the custard over the cooled crust and cover the pie with plastic wrap, pressing directly against the surface of the custard to prevent a skin from forming. Refrigerate for 2-3 hours, until completely set.
  • Just before serving, make the whipped cream: In a medium bowl, whip the cream with an electric hand mixer on medium speed until soft peaks form, 1-2 minutes. (Alternatively, use a whisk to whip the cream until soft peaks form, 2-3 minutes.) Add the powdered sugar and vanilla and whip until medium peaks form and the cream holds its shape, 1-2 minutes more; do not over whip.
  • Dollop the whipped cream on top of the pie. Top with caramel syrup, gingersnap cookie crumbs, toasted pecan pieces, and nutmeg.
  • Enjoy!
