This is good, and I like the unusual mix of ingredients, but I will stop short of saying this is the best recipe I have; however, I like it enough that I want to post it here so I can remember to cook it. Incidentally, I cooked the catfish with the basil cream sauce recently, YUM.

1 (16 ounce) package bow tie pasta
3 boneless skinned chicken breasts
3/4 teaspoon salt
1/4 teaspoon pepper
1/3 cup olive oil
1 (8 1/2 ounce) jar sun-dried tomatoes packed in oil, drained
3/4 cup chicken broth
1/2 cup white wine
1/4 cup chopped fresh basil
4 garlic cloves, minced
1 teaspoon dried Italian seasoning
1/8 teaspoon dry crushed red pepper
1 (12 ounce) package fresh broccoli florets

Steps:

  • Cook pasta according to package directions; drain and keep warm.
  • Cut chicken into 1-inch cubes. Sprinkle evenly with salt and pepper. Sauté chicken in hot oil in a large skillet over medium-high heat 5 minutes or until done. Remove from skillet; drain on paper towels.
  • Add sun-dried tomatoes and next 6 ingredients to skillet; bring to a boil over medium heat. Stir in broccoli, and cook 5 minutes or until broccoli is tender. Stir in cooked chicken and warm cooked pasta. Serve immediately.

1 cup three-cheese pasta sauce (from 15-oz jar)
1 1/2 cups uncooked bow-tie (farfalle) pasta
2 cups deli rotisserie chicken, cut into 1/2-inch pieces (about 9 oz)
3/4 cup frozen sweet peas
1 teaspoon Italian seasoning
Sliced fresh basil, if desired
Shredded Parmesan cheese, if desired

Steps:

  • In 10-inch skillet, heat water, pasta sauce and pasta to boiling, stirring occasionally. Reduce heat to medium; cover and simmer 8 minutes, stirring occasionally.
  • Add chicken, frozen peas and Italian seasoning. Cover; simmer 5 to 7 minutes longer or until pasta is tender.
  • Remove from heat. Garnish with fresh basil. Serve with Parmesan cheese.

3 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup skim milk
1 cup chicken broth
1/2 cup parmesan cheese, grated
3 cups bow tie pasta
2 garlic cloves, minced
2 chicken breasts, cut into 3/4 inch pieces
2 cups uncooked vegetables (broccoli, carrots, sweet peppers etc)
salt, to taste
pepper, to taste

Steps:

  • In a 2 quart saucepan stir together flour, salt, pepper, milk and chicken broth. Cook on medium heat, stirring often, until mixture is thick and bubbly. Add 1/4 cup parmesan cheese; cook and stir 2 minutes more.
  • Cook pasta according to package directions. After approximately 6 minutes, add vegetables and allow to cook for 3 minutes longer. Drain.
  • While sauce and pasta are cooking, cook garlic and seasoned chicken in skillet on medium heat for 5-6 minutes.
  • Combine chicken and sauce with pasta and veggies. Garnish with remaining parmesan cheese.

8 ounces bow tie pasta
2 garlic cloves, minced
2 tablespoons olive oil
1 lb chicken breast halve, cut into thin bite-size strips
1 teaspoon dried basil
1/8 teaspoon crushed red pepper flakes
3/4 cup chicken broth
1/2 cup sun-dried tomato packed in oil, drained and cut into thin strips
1/4 cup dry white wine
1/2 cup whipping cream
1/4 cup grated parmesan cheese
additional parmesan cheese
additional chopped fresh parsley (to garnish)

Steps:

  • Cook pasta according to package directions; drain.
  • Meanwhile, in a large skillet, cook the garlic in hot oil over medium-high heat for 30 seconds. Add chicken, basil and crushed red pepper. Cook and stir for 6-8 minutes or until browned.
  • Add chicken broth, dried tomatoes and white wine. Bring to boiling; reduce heat. Simmer, uncovered, about 10 minutes or until chicken is tender and no longer pink.
  • Stir in whipping cream and the 1/4 cup of parmesan cheese; simmer 2 minutes more.
  • Stir pasta into chicken mixture. Heat through.
  • Garnish with fresh chopped parsley and additional parmesan cheese.

4 boneless, skinless chicken breast halves
1 (12 ounce) package farfalle (bow tie) pasta
1 (14 ounce) can chicken broth
1 head broccoli, cut into florets
1 medium red bell pepper, thinly sliced
2 cloves garlic, minced
salt and pepper to taste
2 (8 ounce) containers chive and onion cream cheese
¼ cup freshly grated Parmesan cheese

Steps:

  • Place chicken in a saucepan, and add water to cover. Boil 20 minutes. Allow to cool, then pull meat into shreds.
  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • In a large skillet over medium-high heat, combine chicken broth, red pepper, garlic, broccoli, salt and pepper. Cover, and simmer for 8 to 10 minutes, until broccoli is crisp-tender. Stir in cream cheese until smooth. Mix in chicken and pasta until evenly coated. Garnish with Parmesan cheese.

2 cups cooked chicken, cut into bite sized pieces
1 onion, chopped
1 teaspoon seasoning salt
12 ounces cooked bow tie pasta
2 (10 ounce) cans cream of chicken soup or 2 (10 ounce) cans cream of mushroom soup
2 cups crushed Ritz crackers (1 sleeve)
8 ounces sour cream
4 tablespoons butter

Steps:

  • Saute onion in 1 tablespoon butter.
  • Combine chicken, onion, salt, soups and bow tie pasta and mix well.
  • Put into a 9 X 13 inch casserole.
  • Combine crackers, 3 tbsps. butter and sour cream and mix well. Spread over chicken mixture. The mixture will be very thick.
  • Bake at 350 degrees for 30 minutes.

4 boneless skinless chicken breasts, cut into bite-size pieces
8 ounces uncooked bow tie pasta
1 cup chicken broth
1/2 cup chopped celery
1/2 cup chopped onion
1 (10 3/4 ounce) can cream of mushroom soup
1 (8 ounce) package Velveeta cheese, cubed

Steps:

  • Add water (throw in some salt) to a large pot and bring to a boil.
  • Add in chicken and cook 12 minutes or until done.
  • Remove chicken from water using a slotted spoon.
  • Add pasta to water; cook 10 minutes or until tender; drain and keep warm.
  • Heat 1/4 cup broth over med-high heat in a Dutch oven.
  • Add in celery and onion; cook 5 minutes or until tender.
  • Stir in chicken, soup, cheese, and remaining 3/4 cup broth; continue stirring until cheese is melted.
  • Toss with pasta and serve immediately.

4 large chicken breasts (or shred the meat from bone-in chicken breasts)
1 (16 ounce) box bow tie pasta
1 (10 ounce) can chicken broth
1 head broccoli (or frozen broccoli florets)
1 large red bell pepper
2 garlic cloves
salt and pepper
2 (8 ounce) containers chive & onion cream cheese
1/2 cup parmesan cheese

Steps:

  • Cook chicken until cooked through and browned. Cool and cut into cubes.
  • Cook pasta in boiling water until al dente. Drain.
  • In a large skillet over medium heat, combine the chicken broth, thinly sliced red pepper, minced garlic, and the broccoli cut into small florets. Add salt and pepper to taste.
  • Cover and simmer for 10 minutes until broccoli is crisp tender.
  • Stir into above the cream cheese until smooth and add the chicken cubes and pasta until evenly coated. Put into serving dish.
