Found this recipe in a magazine and it looked wonderful so I decided to try it and it's absolutely great.

2 tablespoons olive oil
4 boneless skinless chicken breast halves
1 medium onion, chopped
3 garlic cloves, minced
2 cups sliced fresh mushrooms
1 (10 ounce) can rotel diced tomatoes and green chilies (Original)
1/4 cup shredded part-skim mozzarella cheese

Steps:

  • In large skillet, cook chicken in hot oil until brown. Add onion and garlic, saute until tender, about 5 minutes.
  • Add mushrooms and Rotel tomatoes; reduce heat. Cover and simmer 25 minutes, stirring occasionally until meat is done.
  • Sprinkle with cheese. Replace cover and heat until cheese melts.
  • Serve over rice.

1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner
1 Tbsp. olive oil
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 can (14-1/2 oz.) diced tomatoes and green chiles, drained
1 can (14-1/2 oz.) diced tomatoes, drained
1 can (10-3/4 oz.) condensed cream of chicken soup
1/2 cup KRAFT Mexican Style Finely Shredded Four Cheese

Steps:

  • Prepare Dinner as directed on package.
  • Meanwhile, heat oil in large skillet on medium-high heat. Add chicken; cook and stir 5 min. or until lightly browned. Stir in tomatoes and soup; cook on medium heat 5 min. or until chicken is done, stirring occasionally.
  • Add Dinner; stir until blended. Sprinkle with cheese; cover. Cook 5 min. or until cheese is melted.

1 to 2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
4 boneless skinless chicken breasts (about 1 1/4 lb)
1 tablespoon vegetable oil
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 can (11 oz) whole kernel corn with red and green peppers, undrained
1/3 cup Old El Paso™ Thick 'n Chunky salsa
2 cups hot cooked rice

Steps:

  • In small bowl, mix chili powder, salt and pepper; sprinkle evenly over both sides of chicken breasts.
  • In 10-inch nonstick skillet, heat oil over medium heat. Add chicken; cook 8 to 10 minutes, turning once, until juice of chicken is clear when center of thickest part is cut (170°F).
  • Stir in beans, corn and salsa. Heat to boiling. Reduce heat. Cover and simmer 3 to 5 minutes or until vegetables are hot. Serve with rice.

Microwave briefly to melt cheese.

2 cans rotel (I like one hot and one regular)
1 (11 ounce) can mushrooms, drained
2 bell peppers
1 onion
1 (16 ounce) package linguine
1/2 cup butter
1 can cream of chicken soup
1 lb Velveeta cheese

Steps:

  • Boil chicken.
  • Chop onion and pepper and saute in butter.
  • Add both cans of rotel and velveeta.
  • After melted add mushrooms.
  • Boil noodles in chicken broth, drain and add cream of chicken soup to the noodles.
  • Mix everything together Bake at 350 for 45 min.
  • or until bubbly.
