Rosy Rosé Berries: Strawberries and Raspberries in Wine image

A favourite "grown-up" summery and romantic dessert in our home! Summer berries - raspberries and strawberries, steeped in Rosé wine with a little sugar. Great by themselves or with whipped cream or crème fraiche. So easy to make - and they work better if made up to 48 hours beforehand. These berries are stunning if used in trifles or fruit fools! Please adjust the sugar to your personal taste and also according to the sweetness of the fruit.

Ingredients

750 ml rose wine
2 -4 tablespoons sugar, depending on sweetness of fruit
400 g fresh hulled strawberries
400 g fresh raspberries
cream (optional)
creme fraiche (optional)

Steps:

Pour the bottle of wine into a large bowl - add the sugar, and stir to dissolve.
Add the berries and mix thoroughly - but gently as not to bruise them or break them.
Cover and store in the fridge for 12 to 48 hours.
When you are ready to serve them, spoon the berries into a large wine glass or a parfait/pudding glass or bowl.
Pour the sugared wine over the top and serve straight away, with whipped cream or creme fraiche. Ice cream is also good with this dessert.
These berries can also be served with shortbreads or cake - and are amazing in trifles!

500ml rosé wine , chilled
500ml pink raspberry lemonade , chilled
a dash of rosewater (optional)
handful raspberries

Steps:

Mix together the rosé wine and pink raspberry lemonade. Add a dash of rosewater, if you like. Put a few raspberries in each glass before topping up with the spritzer mix.

1/2 cup fresh or frozen raspberries, thawed
1/3 cup sugar
2-1/2 cups club soda, chilled
1/4 cup lemon juice
Ice cubes
2 lemon slices

Steps:

Place raspberries and sugar in a food processor; cover and process until pureed. Strain, reserving juice and discarding seeds., In a small pitcher, combine the club soda, lemon juice and raspberry juice. Serve in tall glasses over ice. Garnish with lemon slices.

Recipe I found in US magazine, and want to try. By Padma Lakshmi, author of Tangy Tart Hot & Sweet. Seems easy, and I'm going to try it with a sparkling juice.

6 strawberries, diced
8 strawberries, whole, beautiful for garnish
6 tablespoons raspberry sorbet
15 mint leaves, torn apart
1 (24 ounce) bottle Brut champagne or 1 (24 ounce) bottle prosecco

Steps:

Slice the whole strawberries vertically, just halfway up to the crown. Set aside to use as garnish.
Just before serving, place a tablespoon of sorbet in the bottom of a champagne flute. Place the mint leaves and some chopped strawberries in the glass and pour in the champagne, being careful not to full it so much that it froths over.
Garnish each glass (makes 4-6 with a sliced strawberry and serve immediately.
*I had to enter a size for the bottle of champagne, but I'm not sure how much is in a bottle. Just use a standard size bottle of champagne.

3 ounces pink prosecco
2 ounces seltzer
1 ounce bitter orange liqueur, such as Aperol
1/2 ounce grapefruit juice
1 grapefruit twist
1 sprig fresh mint

Steps:

Fill a white wine glass halfway with ice. Add the prosecco, seltzer, orange liqueur and grapefruit juice and stir. Garnish with a grapefruit twist and a sprig of mint.

1 bottle (750 ml) French dry rose wine, such as Tavel or Bandol
6 tablespoons creme de cassis (black-currant liqueur)
1 Chanterais melon or 1/2 large cantaloupe, cut into chunks
1 peach or nectarine, pitted and cut into 8 wedges
1/2 pint blackberries or raspberries
1 bottle (750 ml) sparkling water

Steps:

Stir together all the ingredients except sparkling water in a large pitcher. Refrigerate at least 1 hour or until ready to serve, up to 3 hours. Stir in the sparkling water, and serve over ice.
