Refrigerator cookies with my favorite herb, rosemary! I developed the recipe for Christmas baking, but it would be wonderful any time of year!

½ cup butter, softened
¾ cup white sugar
1 medium egg
1 cup whole wheat flour
¾ cup all-purpose flour
1 tablespoon finely chopped fresh rosemary
½ teaspoon baking powder

Steps:

  • Beat the butter and sugar together in a bowl until creamy and smooth, and stir in the egg until well incorporated. Stir in the whole wheat flour, all-purpose flour, rosemary, and baking powder until well blended. Cut the dough into 2 equal-sized pieces, and shape each piece into a log about 1 1/4-inch in diameter. Wrap the logs in plastic wrap, and refrigerate at least 2 hours, or place in freezer for about 1 hour.
  • Preheat an oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  • Cut the logs of dough into thin slices, 1/8 to 1/4-inch thick. Place the slices on the prepared baking sheets, and bake in the preheated oven until the cookies are set and the edges turn golden brown, 10 to 12 minutes. Cool for 1 minute on baking sheets before removing to wire racks to finish cooling.

2 pounds red potatoes
2 tablespoons chopped fresh rosemary (or 1 tablespoon dried), plus more to garnish
1/2 large lemon
2 tablespoons olive oil
1/2 teaspoon garlic powder
1 teaspoon kosher salt
Fresh ground black pepper

Steps:

  • Preheat the oven to 450 degrees Fahrenheit.
  • Wash the potatoes, then dice them into 1/2 to 3/4 inch cubes. Finely chop the rosemary. Thinly slice the half lemon.
  • In a large bowl, stir together potatoes, olive oil, garlic powder, kosher salt, and several grinds of fresh ground black pepper.
  • Line a baking sheet with parchment paper or aluminum foil. Spread the potatoes in an even layer on the sheet. Top with the lemon slices and sprinkle with rosemary. Roast for about 30 to 40 minutes, until potatoes are cooked through and browned, stirring once (the exact timing depends on how thick the pieces are). If desired, garnish with another 1 tablespoon finely chopped rosemary.

1/2 cup butter or margarine, softened
1/2 cup sugar
2 teaspoons grated lemon peel
1/2 teaspoon finely chopped fresh or 1/8 teaspoon crumbled dried rosemary leaves
1 egg
1 1/2 cups Gold Medal™ all-purpose flour
1/4 teaspoon baking soda
1/8 teaspoon salt
3 tablespoons sugar
1 teaspoon grated lemon peel

Steps:

  • In large bowl, beat butter, 1/2 cup sugar, 2 teaspoons lemon peel, the rosemary and egg with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda and salt.
  • Divide dough in half. Shape each half into 9-inch roll, 3/4 to 1 inch in diameter. Flatten sides to form triangle. Wrap and refrigerate about 2 hours or until firm.
  • Heat oven to 375°F. Mix 3 tablespoons sugar and 1 teaspoon lemon peel. Roll dough in sugar mixture to coat. Cut rolls into 1/4-inch slices. Place about 2 inches apart on ungreased cookie sheet. Bake 5 to 8 minutes or until edges are light brown. Immediately remove from cookie sheet to wire rack. Cool completely.

4 (6 -8 ounce) boneless skinless chicken breasts (6 to 8 oz. each)
3 tablespoons balsamic vinegar (or eyeball it, just enough to coat chicken lightly)
3 tablespoons extra virgin olive oil
2 stalks rosemary, leaves stripped and chopped (about 2 Tablespoons)
salt
coarse black pepper
4 -5 garlic cloves, cracked away from the skin with a whack against the flat of your knife

Steps:

  • Place balsamic vinegar in one pie plate (or similar container).
  • Place the olive oil in another pie plate (or similar container).
  • Coat chicken with balsamic vinegar, then olive oil.
  • Season chicken with rosemary, salt and pepper and let stand 10 to 15 minutes.
  • Heat a medium nonstick skillet over medium heat .
  • Add chicken breasts and cracked garlic to the pan.
  • Cook chicken 12 minutes, or until juices run clear, turning occasionally. The balsamic vinegar will produce a deep brown, sweet finish on the chicken as it cooks.
  • Slice each chicken breast and serve on plate.

Small bundle fresh rosemary
Extra-virgin olive oil
4 slices rustic bread, like sourdough, 1-inch thick
1 clove garlic, peeled
Zest of 1/4 lemon
Juice of 1 lemon
Kosher salt and freshly ground black pepper
2 cups arugula
Shaved Parmesan, for serving

Steps:

  • Set up your grill for indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only.
  • Tie the bundle of fresh rosemary together using butcher's twine. Pour 1/4 cup of olive oil into a small dish for basting. Using the rosemary bundle as a pastry brush, dip in the olive oil and brush the bread on both sides. Place the bread slices on the direct heat side of the grill to char on both sides, about 1 minute per side.
  • Once both sides of the bread are charred, move the bread to the indirect heat side of the grill, place the rosemary bundle in between the bread slices, close the lid of the grill and cook until the bread is more crispy and golden brown on the outside, but still soft and chewy on the inside, 3 to 5 more minutes. Remove the bread slices from the grill and, while still warm, rub the entire surface with the garlic clove.
  • Add 1 tablespoon of olive oil, the lemon zest and lemon juice to a small mixing bowl and mix to combine. Season with salt and pepper. Dress the arugula with the olive oil dressing. Top the grilled bread slices with the arugula. Using a vegetable peeler, shave Parmesan over the top. Cut into rustic pieces, sprinkle with some charred rosemary leaves and serve.

This is so flavorful with the fresh rosemary and lemon. I make this when my garden is growing so I have the fresh rosemary. You can substitute dried rosemary for the fresh, just use 3/4 tsp. I usually serve this with a rice pilaf and veggies.

1 1/2 teaspoons fresh rosemary, finely chopped
1/4 teaspoon salt
1 dash pepper
1 1/2 teaspoons olive oil
1 small garlic clove, minced
2 boneless skinless chicken breast halves

Steps:

  • Cut 2 thin slices from lemon; set aside.
  • Squeeze 2 tsp lemon juice from remaining lemon into small bowl.
  • Add rosemary, salt, pepper, oil and garlic; mix well.
  • Add chicken breast halves; turn to coat.
  • Arrange chicken on broiler pan.
  • Top with lemon slice on each.
  • Broil 4 to 6 inches from heat for 5 minutes.
  • Turn chicken, placing lemon slices under chicken.
  • Broil an additional 5 to 7 minutes or until chicken is fork tender and juices run clear.
  • Discard lemon slices.
