2 cups semisweet chocolate chips
1 cup peanut butter
4 cups miniature marshmallows

Steps:

  • Grease a 9 x 9 inch pan.
  • Heat chocolate chips and peanut butter over low heat in a medium saucepan until chips are completely melted. Remove from heat. Stir in marshmallows.
  • Pour into prepared pan. Cool. Can be put into refrigerator to cool. Cut and Enjoy!

8 oz/230 g ((1 and 1/3 cups) chopped bittersweet or semi-sweet chocolate)
½ cup (1 stick/115 g) unsalted butter
1/2 teaspoon vanilla extract
1 and ½ cups miniature marshmallows ((if you only have large marshmallows, cut them into small pieces))
¾ cup (75 g) hazelnuts (or use your favorite - salted peanuts, walnuts, almonds, pecans)
¾ cup (75 g) digestive biscuits or cookies (any kind)

Steps:

  • Line an 8x8-inch baking pan with foil or parchment paper. Set aside.
  • In a medium heatproof bowl, combine chocolate and butter. Heat in the microwave for 30 seconds. Heat more, at 20-second intervals, stirring in between each interval, until melted. Stir in vanilla extract. Fold in marshmallows, nuts, and cookies.
  • Spread mixture into prepared pan. Refrigerate for at least 2 hours, or until set. Lift from pan using the foil or parchment paper, and cut into squares. Keep in the fridge. I like to take it out of the fridge 15 minutes before serving.

225 g Butter or Block Margarine
125 g Dark Chocolate
2 tbsp Golden Syrup
2 tbsp Caster Sugar
2 tbsp Cocoa Powder
320 g Digestive Biscuits
50 g Marshmallows ((mini or cut-up))
50 g Glace Cherries ((halved))
50 g Blanched Almonds or Hazelnuts
50 g White Chocolate

Steps:

  • Line a 20x20cm baking tray with some greaseproof paper and set aside.
  • Crush the digestive biscuits, either by pulsing in a blender or placing them in a freezer bag and hitting with a rolling pin. You want to leave some reasonable sized bits of biscuit to add some texture and crunch to your Rocky Road.
  • Place into a large bowl. Add about 3/4 of the marshmallows and all of the cherries & nuts. Set aside.
  • Melt the dark chocolate, butter/margarine, golden syrup, sugar and cocoa powder over a bain-marie or in short bursts in the microwave.
  • Once completely melted, add to the bowl of digestives, marshmallows (ect...) and mix well, ensuring everything is coated in the chocolate mixture.
  • Spoon the mixture into your pre-lined tray, pressing it down and paying special addition to the corners. Scatter the remaining marshmallows on top, pressing them into place.
  • Melt the white chocolate over a bain-marie or in short bursts in the microwave, before drizzling over the top of your Rocky Road to finish.
  • Leave to set in the fridge for at least 4 hours or ideally overnight, before cutting into individual portions.

No one is ever going to complain about having one of these in their lunchbox, and they're pretty handy to have around in a kitchen for a quick, snatched burst of energy at any time. I'm not claiming them to be a health food, but when you're talking about lunch on the run, packing quite a few calories into a small parcel can be viewed as a positive advantage. That's my view, and I'm sticking to it.

1 stick plus 1 tablespoon soft unsalted butter
10 ounces semisweet chocolate, broken into pieces
3 tablespoons golden syrup or 1/4 cup corn syrup
8 ounces plain hard and crunchy cookies
2 cups mini marshmallows
2 teaspoons powdered sugar

Steps:

  • Melt the butter, chocolate and syrup in a heavy based saucepan. Scoop out about 1/2 cup of this melted mixture and put aside.
  • Put the biscuits/cookies into a freezer bag and then bash them with a rolling pin. You are looking for both crumbs and pieces of cookies.
  • Fold the cookie pieces and crumbs into the melted chocolate mixture, and then add the marshmallows.
  • Pour into a 9-inch square foil tray; flatten as best you can with a spatula. Pour over the reserved 1/2 half cup of melted chocolate mixture and smooth the top.
  • Refrigerate for about 2 hours or overnight.
  • Cut into 24 fingers and dust with powdered sugar by pushing it gently through a tea strainer or small sieve.

75g digestive biscuits
25g walnut pieces
150g pink and white marshmallows
100g butter
2 tbsp golden syrup
300g dark chocolate, chopped into small pieces
50g milk chocolate, chopped into small pieces
1-2 tsp icing sugar

Steps:

  • Line a 20cm x 20cm brownie tin with foil. Crumble the biscuits and the walnuts into a large bowl (you want a good mixture of pieces and fine crumbs). Snip the marshmallow into halves or quarters with scissors and add those to the bowl too. Set aside.
  • Put the butter and golden syrup in a saucepan and heat gently until the butter has melted. Put the chopped chocolate in a heatproof bowl then pour the melted butter and syrup mixture over it and leave to sit for a couple of minutes without stirring. Now stir until the chocolate is smooth and has melted then pour the whole lot over the biscuits and marshmallows. Stir to coat all the pieces in the chocolate then pour into your prepared tin in an even layer. Don't press it down too much, you want quite a bumpy 'rocky road' surface. Leave to set in the fridge for 1-2 hours or overnight then dust with icing sugar and chop into bars or squares to serve. Keeps in the fridge for up to a week.

I thought I was gonna show you how to make a famous candy, based on a famous ice cream, but as it turns out, it's actually the other way around. The ice cream flavor was inspired by an Australian candy that goes by the same name, which used the same signature ingredients--chocolate, marshmallows, and nuts. Regardless, this is super easy to make, and would be an absolutely wonderful edible gift for the upcoming holidays. Keep unused portions in the fridge.

1 ½ cups dark chocolate chips
3 tablespoons unsalted butter, cubed
2 teaspoons maple syrup
1 ½ cups miniature marshmallows
1 ¼ cups lightly salted roasted almonds
¼ cup unsweetened cocoa powder

Steps:

  • Combine dark chocolate chips, butter, and maple syrup in a heat-safe bowl and place over a saucepan filled with about 1 inch of hot water set over the lowest heat setting on the stovetop. Allow mixture to melt; do not stir.
  • While mixture melts, line an 8x8-inch baking pan with plastic wrap.
  • Slowly stir melted chocolate mixture together with a spatula until shiny and smooth. Remove from heat and stir in marshmallows and almonds until combined.
  • Quickly transfer mixture into the prepared baking pan. Distribute evenly but do not smooth or press down the top--try to preserve a rough texture on the top. Let cool to room temperature, about 30 minutes. Wrap in plastic wrap and refrigerate until well chilled and firm, about 2 hours.
  • Sift cocoa over the top and cut into 16 squares.
