This is a recipe from my soon to be Mother in Law. It's a family favorite that I made for the first time with rave reviews. I've been told it was originally a Pillsbury Bake-Off recipe.

1/2 cup butter
1 cup sugar
1/2-3/4 cup chopped nuts
1 teaspoon vanilla
1 ounce unsweetened chocolate
1 cup flour
1 teaspoon baking powder
2 eggs
8 ounces cream cheese (reserve 2 oz for frosting)
1/2 cup sugar
1/4 cup butter
1 egg
1/2 teaspoon vanilla
6 ounces semi-sweet chocolate chips
2 tablespoons flour
1/4 cup chopped nuts
2 cups mini marshmallows
1/4 cup butter
1 ounce unsweetened chocolate
1/4 cup milk
1 teaspoon vanilla
2 ounces cream cheese
3 cups powdered sugar

Steps:

  • Heat oven to 350.
  • Grease 9x13 pan.
  • In large saucepan, melt butter and chocolate over low heat.
  • Add remaining bar ingredients and spread into pan.
  • In small bowl combine all the filling ingredients except for the nuts and chocolate chips.
  • Beat one minute at medium speed and stir in the nuts.
  • Spread over bar mixture.
  • Sprinkle with chocolate chips.
  • Bake at 350 for 25-35 minutes or until toothpick comes out clean.
  • Sprinkle with Marshmallows and bake 2 minutes longer.
  • Meanwhile in large saucepan, melt the remaining butter, chocolate and cream cheese and milk over low heat.
  • Remove from heat and stir in powdered sugar and vanilla until smooth.
  • Pour over marshmallows and swirl together.
  • Chill until firm, cut into squares.

1-1/2 teaspoons plus 1 tablespoon butter, divided
2 cups semisweet chocolate chips
1 can (14 ounces) sweetened condensed milk
2 cups salted peanuts, plus more for topping
1 package (10 ounces) miniature marshmallows, plus more for topping

Steps:

  • Line a 13x9-in. baking pan with foil, letting ends extend over sides by 1 in. Grease the foil with 1-1/2 teaspoons butter; set aside., In a large saucepan, combine chocolate chips, milk and the remaining butter. Cook and stir over medium heat until mixture is smooth. Remove from the heat; stir in 2 cups peanuts. Place marshmallows in a large bowl; add chocolate mixture and stir well. Spread into prepared pan. Sprinkle with additional peanuts and marshmallows. Refrigerate until firm., Using foil, lift fudge out of pan. Cut into 1-1/2-in. squares.

½ cup butter, melted
1 (1 ounce) square unsweetened chocolate, melted
1 cup white sugar
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract
2 eggs
¾ cup chopped walnuts
1 (8 ounce) package cream cheese, softened
½ cup white sugar
1 egg
2 tablespoons all-purpose flour
½ teaspoon vanilla extract
¼ cup butter, softened
¼ cup chopped walnuts
1 cup semisweet chocolate chips
2 cups miniature marshmallows
¼ cup butter
1 (1 ounce) square unsweetened chocolate, chopped
¼ cup milk
3 cups confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a medium saucepan, melt chocolate and butter over low heat, stirring occasionally. Remove from the heat and add 1 cup sugar, 1 cup flour, baking powder, vanilla, 2 eggs and walnuts. Stir until well blended. Spread evenly into the bottom of the prepared pan.
  • For the next layer, in a medium bowl, beat the 6 ounces of cream cheese (reserve 2 ounces of the package of cream cheese for the next layer) with the 1/2 cup of sugar, egg, 2 tablespoons of flour, 1/2 teaspoon of vanilla, and 1/4 cup of butter. Mix until fluffy and smooth. Spread evenly over the first layer.
  • Sprinkle the 1/4 cup of chopped nuts and chocolate chips over the second layer. Bake for 25 to 35 minutes in the preheated oven. Then sprinkle the miniature marshmallows over the top and bake for 2 minutes longer.
  • Begin to prepare the icing while the bars are in the oven. In a medium saucepan, melt together the 1/4 cup of butter, 1 square of chocolate, remaining 2 ounces of cream cheese and 1/4 cup of milk. Remove from heat and stir in 3 cups of confectioners' sugar and 1 teaspoon of vanilla. Beat until smooth. Pour over the marshmallows and swirl together. Refrigerate until firm, cut into squares.

The recipe makes about 2 1/2 pounds of tangy fudge. It will keep for a week in a cool place, in airtight container lined with waxed paper. Be sure to toast the walnuts, they are so much more flavorful. I have carried this recipe ripped from a magazine for 10 years. (Cook time is chill time)

6 ounces unsweetened chocolate
8 ounces cream cheese, softened
1 teaspoon vanilla
1/8 teaspoon salt
4 cups confectioners' sugar (a 1 lb box)
1/2 cup light brown sugar, firmly packed
1 1/2 cups walnuts, toasted then coarsly chopped
1 1/2 cups miniature marshmallows

Steps:

  • Melt the chocolate in a double boiler over barely simmering water.
  • Once it is completely melted, let it cool slightly.
  • In a bowl beat the cream cheese with a mixer, adding the vanilla and salt.
  • Gradually beat in the confectioners sugar and the brown sugar to the cheese mix.
  • Now beat in the chocolate and beat until thoroughly combined.
  • Stir in the marshmallows and walnuts.
  • Press the fudge into a 8 inch pan lined with wax paper.and chill for 1 hour or until firm.
  • Turn the fudge out of the pan and discard the wax paper. Cut into squares.

1/3 cup unsalted butter, cut into chunks
1 cup evaporated milk
1 1/2 cups sugar
1/4 teaspoon salt
12 ounces semisweet chocolate, chopped
1/2 cup slivered almonds, toasted
1 cup mini marshmallows

Steps:

  • Combine butter, evaporated milk, sugar, and salt in a medium saucepan. Bring to a hard boil for 5 to 7 minutes, stirring constantly. Remove from heat. Stir in the chocolate until melted and smooth. Fold in the almonds and marshmallows. Pour into an 8 by 8-inch square baking pan. Chill until firm, about 2 to 4 hours. Cut into 12 squares.

3 cups whole milk
3 cups half-and-half cream
9 ounces semisweet chocolate, chopped
2-3/4 cups sugar
3/4 teaspoon salt
6 cups heavy whipping cream
3 cups miniature marshmallows
2-1/4 cups miniature semisweet chocolate chips
1-1/2 cups chopped pecans
6 teaspoons vanilla extract

Steps:

  • In a large saucepan, combine milk and half-and-half; heat to 175°. Add chocolate, sugar and salt; stir until chocolate is melted and sugar is dissolved. Remove from heat. , Quickly transfer to a large bowl; place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Stir in remaining ingredients. Press plastic wrap onto surface of custard. Cover and refrigerate for 30 minutes., Fill cylinder of ice cream freezer two-thirds full; freeze according to the manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm. Repeat with remaining ice cream mixture.
