POTATO FRITTATA WITH SPINACH AND RICOTTA



Potato Frittata with Spinach and Ricotta image

Rustic Italian potato frittata recipe, a thick skillet cake with eggs, potato, spinach and cheese. The easiest supper or brunch dish!

½ pound Yukon Gold potatoes (about 2 medium unpeeled, halved lengthwise *)
Kosher salt
8 large or extra-large eggs
¼ cup plain yogurt (sour cream or creme fraiche)
¼ cup freshly grated Parmesan cheese (divided)
2 tablespoons extra-virgin olive oil
½ cup chopped onion
3 cups spinach (kale, or other leafy greens, torn into pieces)
4 ounces whole milk ricotta cheese (drained of excess water (goat cheese, herbed cream cheese or feta can be substituted))

Steps:

  • Preheat the oven to 350 (180 C) degrees.
  • Bring a saucepan of water to a boil and add 2 tablespoons salt. Add the potatoes and cook 15-20 minutes, until just tender when poked with a fork. Drain, and slice into 1/2-inch wide pieces when they're cool enough to handle.
  • Crack the eggs into a mixing bowl and add the yogurt, 2 tablespoons of the Parmesan cheese and 1 teaspoon salt. Whisk together until well blended.
  • Heat the oil in a 10-inch cast iron or oven-proof nonstick skillet over medium heat. Add the onion and cook until soft and translucent, 3-5 minutes. Add the potatoes and spinach. Stir gently to avoid crushing the potatoes, and cook until the greens start to wilt, about 2 minutes.
  • Pour the egg mixture into the pan. Use a spoon to nudge the egg evenly into the vegetables, then cook until the eggs are set on the bottom, about 3 minutes. Turn off the heat.
  • Dot the ricotta cheese in blobs evenly over the top of the frittata and sprinkle with the remaining Parmesan. Bake 15-20 minutes, until the eggs are set and no longer runny on top.
  • Cool 10 minutes before slicing. Frittata can be served warm or at room temperature.

Potato Frittata, similar to a spanish frittata or tortilla recipe, has sliced potatoes, eggs, and cheese. This savory breakfast or dinner recipe is easy to make and extremely versatile by adding a variety of vegetables, meats, or cheeses.

1 pound russet or red potatoes, (sliced 1/4" medallions )
1 small onion, (halved and sliced)
1 1/2 tablespoon olive oil
6 large eggs
3/4 cup ricotta cheese* ((whole or part skim))
1/4 cup freshly grated Parmesan cheese
salt & pepper

Steps:

  • Preheat oven to 400ºF. On a large baking sheet mix together sliced potatoes, onions, and olive oil. Arrange potatoes in a single layer potatoes and season with salt and pepper.
  • Roast for 20 minutes, flipping potatoes halfway through. Remove from oven when potatoes are golden brown. Turn down the oven to 375ºF. Set potatoes aside to cool slightly.
  • When the potatoes and onions are cool enough to handle, arrange them in a greased pie plate (see pic in post). Spread half the potatoes and all the onions on the bottom of the pie plate. Arrange remaining potatoes, standing up and overlapping, around the edge to form a "potato crust."
  • Whisk together the eggs, ricotta, parmesan cheese, 1/4 teaspoon salt, and 1/8 teaspoon pepper until smooth. Gently pour over potatoes and onions. If desired, drizzle additional olive oil on top.
  • Put frittata back into 375ºF oven for 30 minutes or until middle is set and eggs are cooked through. If crust is becoming overly browned before eggs are cooked, use a pie shield or loosely tent foil around crust. Serve hot or at room temperature.

2 ounces pancetta, medium diced
1 tablespoon olive oil
7 tablespoons unsalted butter, divided
2 cups Yukon Gold potatoes, 1/2-inch-diced (4 potatoes)
8 extra-large eggs
15 ounces ricotta cheese
3/4 pound Gruyere cheese, grated
1/2 cup whole milk
1/3 cup all-purpose flour
3/4 teaspoon baking powder
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
6 fresh basil leaves, julienned

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium (10-inch) oven-proof omelet pan over medium-low heat, cook the pancetta in the olive oil for 5 to 10 minutes, until browned. Remove the pancetta from the pan with a slotted spoon and set aside.
  • Melt 2 tablespoons of the butter in the pan (don't wipe it out). Add the potatoes and fry them for 6 to 8 minutes, until cooked through and lightly browned, turning occasionally. Melt the remaining 5 tablespoons of butter in a small dish in the microwave.
  • Meanwhile, whisk the eggs in a large bowl, then stir in the ricotta, Gruyere, melted butter, and milk. Combine the flour, baking powder, salt and pepper and stir into the egg mixture. Add the basil.
  • Put the pancetta back into the pan with the potatoes and pour in the egg mixture. Place the pan in the center of the oven and bake for 50-55 minutes, until the frittata is browned and puffed and a knife inserted in the middle comes out clean. Serve hot.

1/2 cup grated pecorino cheese
2 tablespoons roughly chopped flat leaf parsley
1 1/2 teaspoons kosher salt
1 teaspoon chopped fresh oregano
8 eggs, beaten
fresh ground black pepper, to taste
2 pinches crushed red pepper flakes (optional)
3 tablespoons extra virgin olive oil
1 large yellow onion, halved and thinly sliced
3 fresh scallions, chopped fine
2 fingerling potatoes, peeled and sliced into 1/8-inch rounds
1 red bell pepper, roasted, peeled, and cut into1/4-inch strips (don't used the bottled kind, the integrity of the dish will be ruined, they are too runny!)
1 cup homemade ricotta cheese (we used Publix brand) or 1 cup store-bought ricotta cheese (we used Publix brand)

Steps:

  • Arrange a rack in the middle of the oven and heat to 425°F
  • In a large bowl, whisk together 1/4 cup of the pecorino, parsley, 1/2 teaspoons of the salt, oregano, and eggs and season with black pepper & red pepper flakes (if using); set egg mixture aside.
  • Heat the oil in a 10" nonstick ovenproof skillet over medium-high heat; add the remaining salt, onions, and potatoes and cook, stirring occasionally, until lightly browned and soft, about 20 minutes.
  • Remove skillet from heat.
  • Add the egg mixture to the skillet and stir to distribute the onions & scallions and potatoes evenly.
  • Scatter the peppers over the top, spoon the ricotta over the mixture in 6 dollops, and sprinkle with the remaining pecorino.
  • Bake until lightly browned and the center is set, about 15 minutes.
  • Run a rubber spatula around the edges of the frittata to loosen it.
  • Slide the frittata onto a serving plate; season with more black pepper, if you like.
  • Enjoy!

170 g asparagus, trimmed and cut into 2cm pieces
2 eggs
2 egg whites
2 tablespoons low fat cottage cheese
40 g baby rocket
2 tablespoons lemon juice

Steps:

  • Preheat grill.
  • Spray small frying pan with cooking oil; cook onion over heat, stirring, one minute. Add asparagus; cook, stirring, 2 minutes.
  • Meanwhile, combine eggs, egg whites, and cheese in a medium jug. pour over asparagus mixture in pan. Cook, uncovered, about 5 minutes or until frittata is browned underneath.
  • Place pan under grill for about 5 minutes or until frittata is set.

100g new potatoes
200g long-stem broccoli
200g green beans , trimmed and halved
400g can mixed beans , drained
3 tsp rapeseed oil
2 garlic cloves , crushed
pinch of chilli flakes , cumin seeds or fennel seeds
4 large eggs
50g ricotta
1 tsp sherry vinegar
½ small bunch of basil , roughly chopped (optional)

Steps:

  • Boil the potatoes for 10-15 mins until tender. Add the broccoli for the last 2 mins of cooking. Drain and thickly slice the potatoes.
  • Meanwhile, put the green beans and mixed beans in a pan and cover with water. Bring to a simmer and cook for 3-4 mins, or until the green beans are tender. Drain and leave to steam-dry in the pan.
  • Heat the grill to high. Heat 2 tsp of the oil in a medium non-stick frying pan and fry the garlic for 1 min, then add the chilli flakes or cumin or fennel seeds and cook for 1 min more. Add the potatoes, broccoli and seasoning, and toss to coat in the flavoured oil.
  • Beat the eggs in a jug, season and pour over the potato mix. Cook over a medium heat for 2 mins, or until the base is set. Dollop teaspoons of the ricotta on top, then grill for 4-5 mins until cooked through.
  • Meanwhile, drizzle another 1 tsp oil over the bean mixture with the vinegar. Stir in the basil, if using, and season. Slice the frittata into four wedges, and serve two with half the bean salad on the side. Chill the remaining wedges and bean salad to use in the lunchboxes below.

1 teaspoon olive oil
1 bunch silver beet or 1 bunch english spinach, stalks removed and cut into small pieces
250 g low-fat ricotta
1/4 cup pickled cornichon, chopped finely

2 sweet red peppers, roasted and peeled (capsicums)

Steps:

  • Preheat oven to 180 degrees Celsius.
  • Fry the onion in the olive oil until golden and slightly crispy - about 10 minutes.
  • Blanch the sliverbeet in boiling water for 2 minutes and set aside.

This recipe is from Everyday Food. The original recipe calls for 2 teaspoons chopped fresh rosemary. I choose to omit it. Being onion lovers, I added a whole onion rather than 1/2 as the recipe stipulated. NOTE: It's okay if potatoes are not cooked evenly. Some will be browned; others only transparent. The original recipe suggests using an 8-inch skillet.

1 cup baby spinach leaves, lightly packed
2 green onions, sliced
4 -6 button mushrooms, washed and sliced
1 fire roasted red pepper, diced
1 tablespoon fresh basil
1 -2 teaspoon butter
4 eggs (or egg substitute equivalent to 4 eggs)
1/3 cup ricotta cheese
2 tablespoons parmesan cheese, grated
salt and pepper

Steps:

  • Spray a non-stick 9 or 10 inch omelet pan with cooking spray.
  • Place over medium high heat, add butter.
  • When butter is melted add the prepared vegetables and basil.
  • Cook stirring often just until spinach is wilted.
  • Whisk together the eggs and ricotta cheese.
  • Pour egg mixture over cooked vegetables, cook until almost set, lifting edges frequently to allow uncooked portions to run to bottom of pan.
  • When almost set, reduce heat, cover and allow to cook covered for 1 to 2 minutes.
  • Invert onto a large plate and slip back into pan to finish cooking, top with grated parmesan cheese.
  • Cut in half and serve on warmed plates.
