Number Of Ingredients 12

2 medium yellow summer squash, cut into 1/2-inch slices
1 large sweet yellow pepper, cut into 1-inch pieces
1 large sweet red pepper, cut into 1-inch pieces
2 large carrots, cut into 1/2-inch slices
3 garlic cloves, peeled
2 tablespoons olive oil
2 packages (8 ounces each) cream cheese, cubed
1/2 teaspoon salt
1/2 teaspoon pepper
8 flavored tortillas of your choice (10 inches), room temperature
1 pound thinly sliced deli turkey
4 cups torn Bibb or Boston lettuce

Steps:

  • Place the squash, peppers, carrots and garlic in a 15x10x1-in. baking pan coated with cooking spray. Drizzle with oil; toss to coat. Bake, uncovered, at 425° for 25-30 minutes or until lightly browned and tender, stirring once. Cool slightly., Place the vegetables, cream cheese, salt and pepper in a food processor; cover and process until blended. Transfer to a large bowl; cover and refrigerate for 2-3 hours or until thickened., Spread 1/2 cup cream cheese mixture over each tortilla; layer with turkey and lettuce. Roll up tightly; wrap each in plastic wrap. Refrigerate for at least 1 hour. Unwrap and cut each into eight slices.

Turkey Pinwheels With Roasted Vegetable Spread image

Turkey pinwheels are the perfect appetizer - dainty and cute, but also delicious and satisfying. Made with a creamy roasted vegetable spread inside a tortilla, with turkey and cheese, they are sliced into circles and make a great appetizer, snack or lunch.

1 medium zucchini, sliced into circles
1 bell pepper (red, yellow or orange), seeded and cut into slices
2 tomatoes, seeded and cut into chunks
1 onion, sliced into half circles
3-5 garlic cloves, peeled
1 Tablespoon olive oil
salt, pepper, to taste
1 (8oz.) package cream cheese, softened to room temperature
8 large flour tortillas (or any kind that you like)
1 lb turkey, thinly sliced
1 lb cheese, sliced (any kind that you like, mozzarella, provolone, swiss, etc)

Steps:

  • Preheat the oven to 400 degrees. Toss the vegetables with the oil, salt and pepper and distribute evenly on a large rimmed baking sheet.
  • Roast in the preheated oven for about 30 minutes, until the vegetables are golden, some of the vegetables may even start to get charred. That's good.
  • Pulse in a food processor to puree the vegetables. You may want to peel of the skin from the tomatoes and the pepper if your food processor doesn't puree well.
  • Add the softened cream cheese and pulse to combine. Season with salt and pepper. You can also add minced fresh herbs. You can make this spread ahead of time. It's also great served on crackers, bagels, or as a dip with fresh vegetables.
  • Spread about 1 -1/2 Tablespoon of it on a large tortilla, place a few slices of turkey on top of the spread and top with slices of cheese. Roll it up tightly but without squeezing out the spread.
  • Repeat with the rest of the ingredients. When you have rolled up all the tortillas, slice them with a sharp knife into 1/2 - 1 inch pinwheels. You can make this ahead of time and refrigerate to store. Refrigerating will also held firm the wraps up and they are much easier to slice into pinwheels when they are cold.

1/2 cup light garden vegetable cream cheese (recommended: Philadelphia)
4 wrap-size flour tortillas
2 cups lettuce mix
1 (8-ounce) package turkey breast slices
1/2 cup shredded carrots

Steps:

  • Spread 2 teaspoons veggie cream cheese over entire surface of each tortilla. (Use green spinach and red sun-dried tomato tortillas to add color). Top cream cheese with 1/4 cup lettuce. Place 2 slices of turkey on 1/2 on each tortilla. Sprinkle 1 tablespoon shredded carrots on top of the turkey slices.
  • Roll the tortillas starting at the edge where you placed the turkey.
  • Use a serrated knife to cut roll into 1-inch slices. Arrange on a plate to serve.
