ROASTED TURNIPS AND APPLES WITH HONEY

Roasted Turnips and Apples with Honey image

When root vegetables are in season, take advantage of ingredients like turnips by combining them with other autumn favorites like fresh apples. I've added cider vinegar and orange blossom honey to bring even more flavor to this dish.

Provided by Michael Tusk

Categories     side-dish

Time 35m

Yield 4 servings

Number Of Ingredients 8

4 tablespoons unsalted butter
6 medium turnips, mixed varieties, peeled
4 scallions, trimmed of dark green ends
Salt
Freshly ground black pepper
2 apples, preferably Jonagold or Honey Crisp
1 tablespoon honey, preferably local orange blossom
1 teaspoon apple cider vinegar

Steps:

  • Preheat the oven to 425 degrees F. Melt the butter in a small saucepan over low heat. Quarter and slice the peeled turnips into ¼-inch slices. Place in a medium mixing bowl. Slice the scallions into 1" to 2" segments and add to the sliced turnips. Drizzle the melted butter over the turnip/scallion mixture. Season with salt and pepper, to taste. Quarter, core, peel, and cut 1 of the apples into ¼-inch to ½-inch slices. Add to the turnip mixture. Toss gently to coat. Spread the turnip mixture onto a rimmed baking sheet lined with parchment paper and place in the oven.
  • After 10 minutes, toss the mixture on the tray, to promote even browning and caramelization. Return the tray to the oven on the bottom rack for an additional 10-12 minutes.
  • Remove the tray from the oven. Drizzle the honey over the vegetables and return to the oven for an additional 1-2 minutes.
  • Remove the tray from the oven. Drizzle the apple cider vinegar over the warm vegetables. Toss gently to coat. Mound the turnips and apples on a wide platter, and shave the remaining apple over the warm vegetables. Serve immediately.

TURNIP, HONEY & ROASTED GARLIC SOUP

Turnip, Honey & Roasted Garlic Soup image

This is one of my favorite recipe from the UK brand of soup 'The Covent Garden Soup Co'. They are sold in cartons in the chilled section over there, and I used to literally live off them when I was in London! The roasted garlic in this recipe marries the turnip perfectly -- it's worth the extra effort and can be roasted in the oven up to a few days in advance (whenever you have the oven going). Enjoy on a cold winter evening...

ITALIAN TURNIP SOUP MELLOWED WITH RICE

Italian Turnip Soup Mellowed With Rice image

An Italian friend of mine had just made his yearly trip back home, and along with a bottle of wine, shared this recipe with me. I was skeptical at first, wondering how such a mild vegetable like turnips could make an interesting soup. I have since made it 5 times in a 2 week time span...this should let you know how astonishing it turned out! I even made this for a dear friend who suffers from massive food allergies, using strictly olive oil to saute the turnips and NO Parmesan cheese stirred directly into the soup; she raved about it so much that she demanded the recipe before I left her house. If you chose to make this Vegan, it takes twice as long for the turnips to brown, and the flavour isn't as deep, but it is still a wonderful soup! Try it today and amaze your friends with it's complex nature yet simple ingredients!

Time 1h

Yield 6 serving(s)

Number Of Ingredients 8

3 tablespoons unsalted butter
1 tablespoon olive oil
1 lb turnip, peeled, and cut into ½ inch diced pieces. (See Note)
6 cups chicken broth (NOT the no-fat variety!)
1 cup of unconverted long-grain rice
salt and pepper, to taste
2 tablespoons of minced fresh Italian parsley
3/4 cup of freshly grated parmesan cheese (I just buy the pre-grated type, though a high-end brand; I just can't stand to grate cups of Parmesa)

Steps:

  • Note: I treated these like apples; I cut them into quarters, used a paring knife to peel them, and then diced them; At the market, 3 large turnips= one pound; Just weigh them at the grocery store to get the right amount.
  • In a large saucepan, melt the butter with the olive oil over high heat.
  • When the foam subsides, sauté the turnips, tossing frequently, for about 5 to 7 minutes, or until golden brown.
  • Add the broth, bring to a boil, reduce heat to moderate, and cook, covered for 10 minutes.
  • After that, stir in the rice and cook the mixture, covered, until the rice is al dente, about 15 minutes.
  • Add salt and pepper to taste.
  • Just before serving, stir in the parsley and the Parmesan cheese.
  • Serve immediately.

Cream of Turnip Soup image

Because I have alot of turnips in the garden( and dont particularly like them ) I turned them into soup, and delicious it is too!! It would be very easy to sub other veggies...i.e parsnips, cauliflower etc in place of the turnips..But try it with the turnips first, you will be amazed at how great this is; could easily be served at a dinner party, garnish with drizzled heavy cream and chopped cilantro.
