ROAST TURKEY BREAST WITH GLAZED VEGETABLES

- Preheat the oven to 375 degrees F. Whisk 1 tablespoon olive oil, the honey and 2 tablespoons water in a bowl. Put the potatoes, parsnips, fennel slices, onion, dried apricots and rosemary sprigs in a roasting pan. Add 1/2 teaspoon each salt and pepper, drizzle with the honey mixture and toss. Roast until the vegetables soften, about 30 minutes, stirring once.
- Meanwhile, mix the remaining 1 tablespoon olive oil, the garlic, lemon zest and chopped rosemary in a small bowl. Rub the herb mixture under and over the turkey skin. Season with salt and pepper and bring the meat to room temperature.
- Place the turkey on top of the vegetables in the pan; roast until the skin browns and a thermometer inserted into the thickest part registers 165 degrees F, 1 hour to 1 hour, 15 minutes. (Cover with foil if the skin is getting too dark.) Transfer the turkey to a cutting board and let rest 20 minutes.
- Toss the roasted vegetables with the lemon juice and fennel fronds. Slice the turkey and serve with the vegetables.

Steps:
- Season chicken with salt and pepper.
- In a large skillet, saute chicken in 2 tablespoons of oil over medium high heat, turning once for a total of about 8 minutes or until golden brown.
- Transfer chicken to a plate.
- Add 2 remaining tablespoons of oil to the skillet and cook peppers and onions, stirring often until just softened.
- Add garlic and stir for about 1 minute.
- Stir in basil and vinegar and return chicken and juices to the skillet.
- Reduce heat to low and simmer until chicken is cooked through, about 3 more minutes.
- Taste and adjust salt and pepper seasonings.

- In a hot saucepan over a medium heat, combine red peppers, onion, oil and butter; saute for 2 minutes. Reduce heat to medium-low and continue cooking, stirring occasionally, until the onions and peppers soften.

ROASTED HERB TURKEY BREASTS WITH GLAZED ONIONS

- Preheat the oven to 375 degrees F, with a rack in the position third from the top and another just below it.
- Combine 4 tablespoons of the butter, 1 tablespoon of the parsley, the thyme and garlic in a small bowl. Season with salt and pepper.
- Place the turkey, skin-side up, on a rack set in a rimmed baking sheet. Rub the herb butter over the turkey and underneath the skin. Sprinkle liberally with salt and pepper.
- Toss together the cippolini, vinegar and oil in a 1-quart ovenproof baking dish. Season with salt and pepper.
- Place the turkey on the higher oven rack and the cippolini on the rack below. Roast until the cippolini are cooked through and tender and an instant-read thermometer inserted into the thickest part of the turkey registers 155 degrees F, 45 minutes to 1 hour. Stir the remaining 2 tablespoons butter into the cippolini. Let the turkey rest for 10 minutes before slicing.
- To serve, cut the turkey off the bone and slice thinly. Divide among plates and top with the cippolini. Garnish with the remaining 1 tablespoon parsley.
BRINED TURKEY BREAST WITH PEACH ROSEMARY GLAZE
This makes such delicious and moist turkey! I have changed the glaze before using dark cherries and cranberries instead of the peaches and that is scrumptious as well. I had to roast it longer to get to 165 degrees, about 40 minutes more, so you may want to plan on extra time. Prep time does not include brining time. This is from Sunny Anderson of Food Network.

- In a large bowl, whisk together 2 cups apple cider, salt, thyme and rosemary.
- Add turkey breast and enough water to cover the bird. Cover and let brine in the refrigerator 2 hours.
- Preheat oven to 425 degrees F.
- For the glaze:.
- In a small saucepan, saute onions in oil until softened.
- Add peaches, honey, Worcestershire sauce, brown sugar, rosemary and remaining 2 tablespoons apple cider. Bring to a boil. Lower to a simmer and cook until peaches break down and glaze thickens, about 12 minutes.
- Remove turkey from brine and throughly pat dry with paper towels. Brush with oil and season with pepper.
- Place turkey in a roasting pan. Cook 15 minutes or until skin begins to turn golden.
- Reduce the oven temperature to 350 degrees F.
- Brush the top generously with the glaze, continue cooking until an instant-read thermometer inserted in the thickest part of the breast reaches an internal temperature of 165 degrees F, about 45 minutes.
- Let the turkey rest at least 10 minutes.

- Fill a large stock pot with water, 1/2 cup of coarse kosher salt, and 1/2 cup brown sugar. Add the smashed garlic cloves. Bring the contents to a low simmer, stirring occasionally, until the salt and sugar have dissolved. Add the herbs and peppercorn. Then, squeeze the juice from the orange and lemon into the pot (don't worry about the pits); place the squeezed orange and lemon into the pot as well. Remove the pot from the heat and let the liquid cool. (Speed up the process by adding ice to the stock pot).
- Melt 1 TBSP of butter in a small saucepan over medium-high heat. Once the butter has melted, add the sliced shallot and simmer until softened—about 2-3 minutes. Stir in the cranberry sauce and the balsamic vinegar. Whisk it until cohesive and let the mixture simmer until it thickens and becomes slightly syrupy; this should take about a minute. Add 1/4 cup of room temperature water and the brown sugar. Stir well and bring to a rolling boil, then lower the heat. Let the mixture bubble and thicken; about 3-4 minutes. Season with salt and pepper, to taste. If you feel the glaze could be more tart, add the fourth TBSP of balsamic vinegar. Transfer the glaze to a serving dish and serve with the turkey.
