ROASTED TOMATOES RECIPE FOR FREEZING

Roasted Tomatoes Recipe For Freezing image

Reap the rewards of a bountiful harvest with this Simple Roasted Tomatoes Recipe Perfect For Freezing. Intense, robust flavour with little effort. Simple is best!!

Provided by Gloria Duggan | Homemade & Yummy

Categories     Roasting

Time 2h

Number Of Ingredients 8

6 pounds tomatoes ((I used Roma))
6 cloves garlic ((or more if you like))
1/4 cup olive oil
1 1/2 teaspoons salt
1 teaspoons pepper ((I used spicy garlic))
1 teaspoons Italian seasoning
1/2 teaspoons garlic powder
fresh herbs ((basil, oregano, rosemary))

Steps:

  • Preheat your oven to 400º F
  • Wash tomatoes, and cut into chunks. You can also just cut in 1/2 or leave whole if you prefer. The large the pieces, the longer they take to cook.
  • Divide the tomatoes into 2 roasting pans (you don't want to crowd them)
  • Divide the oil and seasonings between the two pans, distribute and mix well to coat.
  • Add garlic cloves and fresh herbs to each pan.
  • Roast for about 1 1/2-2 hours. **Depending on the size you have cut your tomatoes, the amount of tomatoes you have placed in your baking vessel, and the heat of your oven, you may need to reduce the temperature to 375º after 30 minutes to avoid burning**
  • Depending on the amount of moisture you still want in the tomatoes, the time will vary slightly. Also if you removed the seeds, you will have less moisture to cook out.
  • Be sure to mix several times during roasting.
  • Once done, remove from oven.
  • Remove any large stems from the herbs.
  • If you like, you can leave your tomatoes in large chunks, or mash slightly with a potato masher. Mash the garlic cloves too.
  • When cool, measure into your desired amount, place in the freezer bags, seal, date, and place in freezer.
  • DONE!

OVEN-ROASTED TOMATOES

Oven-Roasted Tomatoes image

Provided by Food Network

Categories     side-dish

Time 1h10m

Yield 2 1/2 quarts

Number Of Ingredients 12

1/2 cup balsamic vinegar
2 tablespoons Dijon mustard
1 tablespoon honey
Kosher salt and cracked black pepper
3/4 cup canola oil
5 pounds roma tomatoes, quartered
1 tablespoon dried basil
1 tablespoon kosher salt
1 teaspoon dried garlic powder
1 teaspoon onion powder
1 teaspoon cracked black pepper
1/2 teaspoon dried Italian seasoning

Steps:

  • For the balsamic vinaigrette: Combine the vinegar, mustard, honey and salt and pepper to taste. Stir with a whisk or fork, then drizzle in oil, whisking constantly, until combined.
  • For the roasted tomatoes: Preheat the oven to 400 degrees F. Line a sheet pan with foil and spread out the tomatoes evenly to ensure a proper roast on each. Sprinkle the dried basil, salt, garlic powder, onion powder, pepper and Italian seasoning over the tomatoes, making certain that each tomato is well seasoned. Drizzle 1/4 cup vinaigrette over the tomatoes, making sure not to over-coat the tomatoes.
  • Roast the tomatoes 45 minutes. (This is a fast roast, not an oven-dried tomato. Do not flip or shake the pan. The tomatoes will caramelize slightly on the top and the bottoms will remain juicy.) Turn the oven off and let sit in the oven 15 additional minutes.

EASY FREEZER-READY HOMEMADE STEWED TOMATOES

Easy Freezer-Ready Homemade Stewed Tomatoes image

Fresh peeled tomatoes may be used in place of canned, just slightly blanch in boiling water firstly for a couple minutes then peel and chop before using in this recipe, this is great to have handy in the freezer ready to use in any recipe, and much better than the canned stuff. This recipe can easily be doubled or tripled. Great to use in stews, casseroles, sauces or any recipe calling for stewed tomatoes, this is even good added to homemade pasta sauce. This is just a basic recipe, to this I like to add in a couple tablespoons tomato paste and a few drops of Tabasco sauce, just to kick it up a bit, all ingredient amounts may be adjusted to suit taste.

Number Of Ingredients 15

2 kg approximately 4lb ripe tomatoes (I use a mixture and like to roast them with the vines)
2-3 tablespoons olive oil
4-6 garlic cloves
2 sprigs fresh rosemary
small handful fresh thyme leaves
½ teaspoon chilli flakes/red pepper flakes
1 teaspoon salt
black pepper to taste
2 red onions (finely chopped)

  • Mix to combine.
  • Place in the oven and allow to roast for 30-45 minutes or until the tomatoes are soft and starting to char.
  • Remove and set aside.
  • Heat a splash of oil in a deep pot then add the onion and allow to soften for a few minutes.
  • Add the garlic and allow to saute for a minute before adding the herbs, spices and roasted tomatoes.
  • Add the sugar (if using) then pour in the stock.
  • Turn the heat down and allow to cook for 15-20 minutes until the sauce has thickened slightly.
  • At this point you can keep the sauce rustic and chunky and freeze in ziploc bags or keep in the fridge in an airtight container for up to a week.

  • If using cherry or cocktail tomatoes, you can leave the tomatoes whole. For plum or romas, I first stem the tomatoes, then slice them in half lengthwise. Remove the seeds by gently squeezing them out (if you feel like it), or remove with a spoon.
  • Lay the tomatoes, cut side up if cut in half, in a single layer on a baking sheet lined with foil. For cocktail, roma, or plum tomatoes, roast at 400°F for 40-50 minutes or until the skin softens and begins to burst. For cherry tomatoes, roast for 15-20 minutes.
  • Discard the herbs and slice, chop or add whole to salads, grains, or rice; mash and spread on toasted crostini; or add the garlic and tomatoes to a blender and whiz until smooth for an easy pasta sauce.

  • Slice or dice tomatoes as you prefer knowing that the thicker the tomato slices, the longer they will take to break down or caramelize. For drier tomatoes, slice about 1/2 inch thick. If making a big batch for sauce, cut in 1 to 2 inch pieces.
  • Lay out tomatoes on large rimmed baking sheet - skin side down/cut side up. For best roasting, leave space between tomatoes and use only a single layer. For saucing a big batch of tomatoes, it's okay to overlap and crowd tomatoes; this will steam the bottom layer while browning the top layer.
