9 cups cubed peeled sweet potatoes (about 4 medium)
4 cups water
1 can (15-1/4 ounces) pear halves, drained
1/3 cup packed brown sugar
1/4 cup butter, softened
1/4 teaspoon ground cinnamon

Steps:

  • Place the sweet potatoes in a shallow 3-qt. microwave-safe dish; add water. Cover and microwave on high for 18-20 minutes or until tender. Drain and place in a large bowl. Add the remaining ingredients; beat until combined.

2 sweet potatoes, sliced 1 1/2 inches thick
3 tablespoons olive oil
1 teaspoon dry mustard
1/2 teaspoon ground ginger
1/4 teaspoon cayenne
Coarse salt
2 Bartlett pears, cored, quartered, and halved

Steps:

  • Preheat oven to 400 degrees. Scrub potatoes. Quarter lengthwise; slice diagonally 1 1/2 inches thick. On a rimmed baking sheet, toss slices with olive oil, dry mustard, ground ginger, and cayenne; season with coarse salt. Roast, tossing occasionally, until crisp-tender, 20 to 25 minutes.
  • Core and quarter 2 Bartlett pears; halve crosswise. Add to the potatoes; toss all with another tablespoon oil. Continue roasting until potatoes are fork-tender, about 10 minutes more.

5 -6 large sweet potatoes, peeled and diced into 1 inch chunks
2 tablespoons olive oil
1 -2 tablespoon chopped fresh rosemary or 1 -2 tablespoon thyme
1 medium onion, roughly diced
1/4-1/2 teaspoon crushed red pepper flakes
1/8 teaspoon cayenne
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper

Steps:

  • Preheat oven to 400.
  • Place diced potatoes and onions in large bowl, toss with olive oil to coat.
  • Add all other ingredients, toss to coat.
  • Pour into buttered casserole dish.
  • Roast in oven for 40-45 minutes or until potatoes are tender and edges are browned and caramelized.
  • Adjust spiciness/seasonings to taste.
  • Stir gently halfway through cooking time or as needed.

This busy diva does not have time for a complicated side dish -- so out of my kitchen came these mashed sweet potatoes and pears. I may never make sweet potatoes any other way ever again.

2 pears, peeled and sliced
½ cup dry white wine
¼ cup water
3 sweet potatoes, peeled and cubed
1 cup evaporated milk
¼ teaspoon vanilla extract
¼ cup brown sugar
2 tablespoons butter
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Place the pears, wine, and water in a small saucepan and bring to a boil over high heat. Turn heat to medium-low and simmer until pears are soft, about 5-10 minutes. Remove pears from wine and reserve.
  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to potatoes to steam dry for a minute or two.
  • Stir the reserved pears, evaporated milk, vanilla, brown sugar, butter, cinnamon, and nutmeg into the sweet potatoes and mash until smooth. Transfer to a serving dish and serve hot.

This recipe was found on the internet at gumbopages.com. The original recipe called for peeling the sweet potatoes, but I much prefer them unpeeled.

4 ounces unsalted butter
3/4 cup cane syrup
1/2 cup pear nectar
1 teaspoon vanilla extract
1/4 cup bourbon whiskey
1 tablespoon orange juice
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
4 large sweet potatoes, halved lengthwise, cut into 1/3-inch slices
4 large bartlett pears, crisp, peeled halved, cored & cut into 1/4-inch slices

Steps:

  • Preheat oven to 400 degrees F & butter a 13"x9" glass baking dish.
  • In a small saucepan over medium-low heat, stir butter, cane syrup, pear nectar, vanilla, Bourbon & OJ until butter melts.
  • Increase heat & boil until mixture is slightly reduced, about 5 minutes, then remove from heat & whisk in the cinnamon, nutmeg & salt.
  • Arrange1/3 of the potato slices in the prepared baking dish, then top with half of the pear slices, & then with another 1/3 of the potato slices. Finally, arrange the remaining slices of potato & pear on top & on their edge, alternating potato & pear, & overlapping slightly.
  • Sprinkle lightly with salt, then pour the cane syrup mixture over everything.
  • Cover the dish tightly with aluminum foil & bake until sweet potatoes are nearly tender, about 1 hour.
  • Uncover & bake until completely tender, basting occasionally with the syrup, for about 20-30 minutes longer, checking with a toothpick or knife point to make sure the potatoes are completely tender.
  • Spoon the syrup over the sweet potatoes & pears one last time & serve hot.

Thanks to Martha Stewart for the inspiration in this dish. I used large yams and liked the ratio of more yams than pears or it would have been overly sweet. If you like spice add more cayenne and/or black pepper!

2 sweet potatoes
3 tablespoons olive oil
1 teaspoon dry mustard
1/2 teaspoon ground ginger
1/4 teaspoon cayenne pepper
1 dash coarse salt
2 bartlett pears

Steps:

  • Preheat the oven to 400 degrees. Cut your sweet potatoes in pieces about 1x2 inches. Place them on a baking sheet and drizzle with about 2 tablespoons of the olive oil. Sprinkle the spices over top and toss until all the pieces are coated. Roast for 18-20 minutes.
  • While the sweet potatoes roast, quarter and core your pears. Add them to the potatoes, drizzle with remaining olive oil and toss to combine. Roast about 10 minutes more. Potatoes should be tender when pierced.
  • Enjoy!

2 medium sized pears
2 tablespoons olive oil
1 tablespoon tony chacheres creole seasoning
1 teaspoon cinnamon

Steps:

  • Preheat oven to 400 degrees. Wash, dry and cut the sweet potatoes and pears into bite sized chunks. Toss with olive oil. Add seasoning, cinnamon and toss again. Pour onto jelly roll pan lined with aluminum foil. Bake for 20-25 minutes or until lightly brown and done in the center.

3 tablespoons olive oil
2 teaspoons packed brown sugar
1 ½ tablespoons paprika
½ teaspoon ground black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon poultry seasoning
½ teaspoon chili powder
1 pinch cayenne pepper

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).
  • Place the sweet potato chunks into a large mixing bowl. Drizzle with the olive oil, then sprinkle the brown sugar, paprika, black pepper, onion powder, garlic powder, poultry seasoning, chili powder, and cayenne pepper overtop. Toss until the potatoes are evenly coated with the seasoning. Spread onto a baking sheet.
  • Bake in the preheated oven for 15 minutes, then turn the potatoes over with a spatula, and continue baking until the sweet potatoes are golden and tender, 10 to 15 minutes more.

5 pounds red-skinned sweet potatoes (yams)
6 tablespoons unsalted butter, room temperature
4 large firm but ripe Bartlett pears, peeled, cored, cut into 1/3 inch-thick slices
3/4 cup (or more) pear nectar
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon (generous) ground cardamom

Steps:

  • Preheat oven to 400°F. Butter 13 x 9 x 2 - inch glass baking dish. Pierce potatoes in several places with fork. Place on baking sheet; bake until very tender when pierced with knife, about 1 hour. Remove from oven. Reduce temperature to 350°F.
  • Meanwhile, melt 2 tablespoons butter in heavy large nonstick skillet over medium-high heat. Add pears; sautée until beginning to soften, about 5 minutes. Add 3/4 cup nectar; bring to simmer. Reduce heat to medium-low; cover and simmer until pears are very tender, adding more nectar if mixture sticks to skillet and stirring often, about 4 minutes. Transfer to processor and puree.
  • Peel sweet potatoes; place in large bowl of electric mixer. Add 4 tablespoons butter; beat until smooth. Mix in pear puree, sugar, cinnamon and cardamom. Season with salt and pepper. Transfer to prepared dish (Can be prepared 1 day ahead. Cover and chill.)
  • Bake potatoes uncovered until just heated through, about 20 minutes.
