HOW TO MAKE ROASTED RED POTATOES
This is such a classic go-to potato side dish recipe. There are only a few things you have to do, and if you do those things, you're talking intense potato side dish pleasure! The best roasted red potatoes start with a heavy roasting pan, a generous amount of olive oil, and enough time to roast the potatoes dark and rich.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Pour olive oil into a heavy baking dish (such as an enameled cast iron dish). Place potatoes into the baking dish and toss to coat with olive oil. Sprinkle with fresh thyme sprigs, kosher salt, black pepper, cayenne pepper, and red bell pepper pieces.
- Bake in the preheated oven for 30 minutes. Toss vegetables to turn over. Some potatoes may stick; don't try to turn them. Return to oven and bake for 20 more minutes.
- Toss potatoes again, turning potatoes so unbrowned sides contact the bottom of the dish. Continue baking until potatoes are browned and tender, about 15 more minutes.
- Turn oven off and leave potatoes in the oven for 15 more minutes. Toss once more and adjust levels of salt, black pepper, and cayenne pepper before transferring potatoes to a serving bowl.

- Adjust oven rack to lowest position and heat oven to 450 degrees. Toss potatoes with oil, salt and pepper. Arrange, cut side down, on a large lipped cookie sheet or jellyroll pan.

This recipe is my approximation of their delicious roasted red potatoes. The combination of spices may seem a little overdone, but together they are an exciting--but not overpowering--taste sensation!

- Pre-heat the oven to 350°F.
- Wash and slice potatoes into bite-sized pieces (quarters or eighths, generally).
- Set potatoes in a glass Pyrex pan. I usually use an 8x8, but if you make lots, a 13x9x2 will do. The potatoes should cover the bottom of the pan; it's best if they aren't piled.
- Drizzle the olive oil on top of the potato pieces.
- Go crazy with the spices. I recommend a good sprinkle of all the spices listed, although you can add or subtract any savory spices you choose. The cayenne does give it an extra kick.
- Cook for 45 minutes at 350°F.
- Let cool for 5 minutes (that olive oil gets really hot), and enjoy!

- Place all spud hunks in a 4 quart saucepan and add just enough cold water to cover. Add 1 tsp salt to the pot, cover and bring to a boil over high heat.
- Meanwhile, combine the buttermilk, cream and garlic to a 2 quart saucepan and bring to simmer over low heat. Watch to make sure the mixture does not boil over. Stir occasionally.
- When the spud water boils, ditch the lid, drop the heat to simmer and cook until the taters are easily crushed with tongs. Drain the potatoes well. The less moisture, the better.
- Add the final teaspoon of salt, add 1/4 of the buttermilk mixture and start smashing.
- As the spuds break down, add more of the buttermilk mixture. Remember these are smashed potatoes, not whipped potatoes. The red potatoes will mash well, the russet potatoes will mash slightly, but also some will remain whole, leaving a nice mixture of creamy potatoes with firm hunks floating. Mash to your desired results.
