Categories     side-dish

Yield 4 servings

Number Of Ingredients 6

1 1/2 pounds sweet potatoes (4 medium), peeled and cut into 1/2-inch thick slices
6 garlic cloves
2 tablespoons olive oil
1 tablespoon unsalted butter
2 teaspoons minced fresh rosemary, or 1 teaspoon dried, crumbled
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 425 degrees.\ Arrange the sweet potatoes and garlic in a shallow flameproof baking dish large enough to hold them in a single layer. Add just enough water to cover the vegetables. Bring the water to a boil over medium high heat and simmer for 2 minutes. Drain in a colander.
  • In a baking dish, combine the oil and butter and melt the butter over medium heat. Remove from the heat, add the potatoes and garlic, rosemary, and salt and pepper to taste and toss to coat. Spread the potatoes in a single layer and roast on the lowest rack of the oven, turning them occasionally, for 25 to 30 minutes, or until golden brown. Transfer to a heated serving bowl and serve at once.

SPICY SWEET POTATO CROSTINI

Spicy Sweet Potato Crostini image

Did you think crostini could only be made from bread? Think again. These small-bite sweet potato crostini appetizers are loaded with fun and flavor and are the perfect accompaniment to other party appetizers, such as Mushroom-Stuffed Phyllo Cups and Broiled Oysters. Look for sweet potatoes that are uniform width so that when you cut them, you will have uniform round slices. This will help ensure they all cook in the same amount of time. For a rustic look, you can even leave some of the skin on when slicing the potatoes. The honey mixture can be made a day ahead and stored at room temperature. Transfer to a squeeze bottle for an easier (and mess-free), more even drizzle. This method makes a fun switch-up from your usual weeknight sweet potato dishes. Simply broil the potatoes, place them on a serving platter, add dollops of goat cheese, and the sprinkle the entire dish with nuts and honey.

Provided by Emily Nabors Hall

Time 33m

Number Of Ingredients 8

1 pound medium-size sweet potatoes (about 2 potatoes), peeled and cut into ⅓-inch-thick slices
1 tablespoon plus ½ tsp. kosher salt, divided
¼ cup honey
⅛ teaspoon cayenne pepper
⅛ teaspoon paprika
¼ cup unsalted butter, melted
1 (4-oz.) goat cheese log, at room temperature
¼ cup chopped, toasted pecans

Steps:

  • Place sweet potatoes and 1 tablespoon of the salt in a large saucepan; add water to cover by 1 inch. Bring to a boil over high. Reduce heat to medium-low, and cook until potatoes just begin to soften, about 5 minutes. Drain potatoes very well; pat dry.
  • While potatoes cook, whisk together honey, cayenne, and paprika in a small microwavable bowl. Microwave on HIGH for 30 seconds; set aside.
  • Preheat oven to broil with rack 6 inches from heat. Place potatoes in 1 layer on a lightly greased (with cooking spray) aluminum foil-lined baking sheet. Brush with melted butter, and sprinkle with remaining ½ teaspoon salt. Broil until golden, about 8 minutes. Cool 5 minutes. Using an offset spatula, spread cheese over rounds (½ heaping teaspoon per round). Transfer to a serving plate. Sprinkle with pecans; drizzle with honey mixture. Serve warm.

MASHED SWEET POTATOES WITH ROASTED GARLIC

Mashed Sweet Potatoes With Roasted Garlic image

There's no reason we can't treat sweet potatoes like regular potatoes, meaning mashing them with butter, cream and lots of salt. Roasting sweet potatoes in the oven - individually wrapped in foil to help them steam - is not just a hands-off way to cook them by avoiding large pots of boiling water, it also concentrates their flavor. Roasted garlic is an easy addition here; since the potatoes already need an hour's worth of oven time, the garlic can cook alongside. The mellowed, caramelized garlic cloves are then smashed into the silky spuds, creating a minimalist yet rich and savory side dish. Make this the night before and reheat it in a buttered casserole dish in the oven - or even in the microwave - with a couple of extra pats of butter on top, right before eating.

Provided by Eric Kim

Time 1h30m

Yield 4 to 6 servings

Number Of Ingredients 6

1 large head of garlic
1 tablespoon extra-virgin olive oil
Salt and black pepper
2 pounds sweet potatoes (see Tip)
1/2 cup heavy cream
4 tablespoons unsalted butter

Steps:

  • Heat oven to 350 degrees. Turn the garlic head on its side and carefully cut off the very top end to expose the cloves. (Discard the top.) Place the head of garlic on a sheet of foil, cut side up, and drizzle with the oil and season with salt and pepper. Wrap tightly and place on a sheet pan. Wrap each sweet potato individually in foil and place on the pan alongside the garlic.
  • Bake until the sweet potatoes are tender and the garlic is soft, fragrant and slightly caramelized, about 1 hour. Set aside, still wrapped, to cool slightly.
  • Meanwhile, heat the cream and butter in the microwave in 30-second intervals, checking after each, until the butter is melted, about 1 minute. (Alternatively, you can heat the cream and butter in a small saucepan over medium until the butter is melted.)
  • Unwrap the sweet potatoes and peel them, discarding the skin and adding the flesh to a large bowl. Squeeze the garlic head, cut side down, into the bowl to release the roasted cloves. Pour in the hot cream and butter. Using a whisk or fork, break up the potatoes and garlic and vigorously stir until smooth and fluffy, at least 30 seconds. Taste for seasoning, adjusting with salt and pepper as needed. Transfer to a serving bowl and serve warm. (To make ahead, transfer to a buttered casserole dish or cake pan, cover and refrigerate for up to 24 hours, until ready to eat. Bake in a 350-degree oven or microwave until heated through, about 15 minutes. On Thanksgiving, you should reheat this when the turkey is out of the oven and resting.)

ROASTED GARLIC SWEET POTATOES

Roasted Garlic Sweet Potatoes image

These sweet potatoes are prepared similar to roasted garlic mashed potatoes. The sweet potatoes add an interesting creamy and sweet dynamic that is balanced out with sour cream, cream cheese, and--of course--roasted garlic...mmm.

Provided by Kelly

Categories     Side Dish

Time 1h35m

Yield 8

Number Of Ingredients 8

4 sweet potatoes
2 heads garlic
2 tablespoons olive oil
2 tablespoons butter (at room temperature)
¾ cup light sour cream
½ cup reduced-fat cream cheese
½ teaspoon cayenne pepper
salt and pepper to taste

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Prick the sweet potatoes with a fork or the tip of a paring knife; set aside. Cut off the top of the heads of garlic to expose the cloves, trimming about 1/4 inch off of the top of each clove. You may need to trim individual cloves along the sides of each head. Brush the cut cloves with the olive oil, then nestle each head into a piece of aluminum foil.
  • Place the sweet potatoes and garlic cloves directly on the oven racks. Bake for about 1 hour, removing the sweet potatoes once they have softened, and removing the garlic heads once they are tender and nicely browned.
  • Peel the sweet potatoes, and place into a mixing bowl. Squeeze the individual garlic cloves into the bowl, then add the butter, sour cream, cream cheese, and cayenne pepper. Mash until smooth, then season to taste with salt and pepper. Scrape the mashed potatoes into a 1 1/2 quart baking dish, and return to the oven for about 15 minutes to reheat.
