15 cipollini onions
Extra-virgin olive oil
About 1/3 cup balsamic vinegar
1/3 cup honey
1/2 bunch thyme, leaves removed
Kosher salt and freshly ground black pepper

Steps:

  • Preheat oven to 325 degrees F.
  • Add the onions to a large bowl, cover with hot water and allow to sit for about 5 minutes. This is to help make peeling the onions much easier. Strain onions and peel.
  • In a small bowl, whisk together the 1/4 cup oil, vinegar, honey, thyme, salt and pepper until combined. Put the onions in a large bowl, pour the dressing over them and toss well to coat.
  • In a large saute pan over medium-high heat, add about 2 tablespoons olive oil and heat. Once hot, add the onions. Next place the saute pan into the preheated oven and roast for 18 to 20 minutes until the onions are soft and slightly caramelized.

1 1/2 pounds cipollini onions
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon granulated sugar
1/2 teaspoon kosher salt
1/3 cup water
1/4 cup balsamic vinegar
1 teaspoon chopped fresh thyme or rosemary leaves

Steps:

  • Bring a saucepan of water to a boil. Drop in the onions and boil 2 minutes. Drain and cool slightly.
  • Use a small, sharp knife to slice off the top of the onions, then slip off the skins. Trim any hairy roots, but leave the stem end intact so that the onions don't separate. If the onions are larger than 1 1/2-inches diameter, slice into halves or quarters.
  • Heat the butter and oil in a medium (8-10-inch) nonstick skillet over medium-high heat. When the butter stops foaming and begins to smell nutty, add the onions to the pan. Cook 5 minutes, or until the onions are browned, stirring occasionally.
  • Sprinkle the onions with the sugar and salt. Pour the water and vinegar over them (the pan will sputter). Turn the heat down to medium and cover the pan. Cook 5 minutes.
  • Uncover the pan and continue cooking until the liquid in the pan looks syrupy and has large bubbles, another 2-3 minutes. Sprinkle with the thyme and serve.

2 pounds baby carrots
2 tablespoons canola oil
1 tablespoon butter, melted
1/4 cup white wine
1/4 cup chicken stock
Salt and coarsely ground black pepper
2 tablespoons chopped fresh Italian parsley leaves

Steps:

  • Preheat oven to 400 degrees F.
  • On a sheet tray, toss onions and carrots with oil, butter, wine, and stock. Season with salt and pepper. Roast until golden and caramelized, about 25 to 30 minutes. Toss in a shallow serving bowl and garnish with parsley.

CIPOLLINI ONION AND FENNEL POT ROAST

1 tablespoon chopped fresh rosemary leaves
1 tablespoon chopped fresh thyme leaves
1 tablespoon extra-virgin olive oil
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 (5-pound) boneless beef chuck roast
1/4 cup extra-virgin olive oil
3/4 pound (about 2 cups) cipollini, boiler, or pearl onions, peeled
3 medium carrots, peeled and chopped into 3/4-inch pieces
2 medium fennel bulbs, sliced into 1/2-inch pieces
Kosher salt and freshly ground black pepper
6 cloves garlic, crushed
1 cup dry sherry
4 cups low-sodium beef broth, plus extra, as needed
2 dried bay leaves

Steps:

  • For the rub: In a small bowl, mix together the rosemary, thyme, oil, salt, and pepper until smooth.
  • Preheat the oven to 350 degrees F. Pat the beef dry with paper towels and rub on all sides with the herb rub. In a heavy 6-quart pot or Dutch oven, heat 2 tablespoons of oil over medium-high heat. Add the beef and cook until browned on all sides, about 12 minutes. Remove the beef and set aside.
  • Add the remaining oil, onions, carrots, and fennel to the pot. Season with salt and pepper. Cook, stirring frequently, until tender, about 8 minutes. Add the garlic and cook for 1 minute until aromatic. Add the sherry and scrape up the brown bits that cling to the bottom of the pan with a wooden spoon. Stir in the broth and bay leaves. Return the beef and any juices to the pot and bring the liquids to a boil. Cover the pot and transfer to the oven. Cook until the beef is fork-tender, about 4 hours, turning the beef over halfway through and adding extra broth, as needed, to keep the beef halfway covered in liquid.
  • Transfer the beef to a cutting board. Tent with foil and let stand for 15 minutes. Spoon any excess fat off the top of the pan juices. Remove the bay leaves and discard. Using an immersion blender, blend the vegetables and cooking juices together until smooth. (The vegetables can also be pureed in a blender). Season with salt and pepper, to taste. Keep warm over low heat.
  • Cut the beef into 1-inch pieces and place on a platter. Spoon some of the sauce over the meat and serve the remaining sauce on the side.

POTTED BEEF WITH PEARS AND CIPOLLINI ONIONS AND HORSERADISH CREAM



Potted Beef with Pears and Cipollini Onions and Horseradish Cream image

2 pounds cipollini onions (about 2 sacks) or 1 1/2 pounds red or yellow pearl onions
3 pounds stew beef or beef chuck, cut into 2- to 2 1/2-inch pieces
Freshly ground black pepper
2 to 3 tablespoons vegetable or olive oil
3 tablespoons butter
2 tablespoons chopped fresh thyme
1 teaspoon ground allspice
Pinch ground cloves
Freshly grated nutmeg
2 teaspoons honey
1/2 cup dry sherry
1 1/2 to 2 cups beef stock
4 large underripe brown-skin pears, peeled and cut into 4 to 6 wedges each
1 cup sour cream or creme fraiche
1/4 cup finely chopped chives
1/4 cup heavy cream
3 tablespoons prepared horseradish, such as Gold's

Steps:

  • Preheat the oven to 325 degrees F.
  • Bring a medium pot of water to boil for the onions. Salt the water and boil the onions for 5 minutes. Then drain the onions and cool to handle. Peel the onions by squishing the root end out of the skins.
  • Bring the beef to room temperature and pat dry with paper towels. Sprinkle with salt and pepper. Heat the oil over medium-high heat in a large Dutch oven and add the beef in batches, browning until deeply caramelized all over. Repeat until all the beef has been browned, adding more oil when necessary. Remove the browned meat to a plate, covered with foil and reserve for later use.
  • Reduce the heat to medium-low and add the butter to the same pot used for browning the meat. When the butter foams, add the onions to the pot. Season with salt and pepper, and add in the thyme, allspice, cloves and some nutmeg. Cook until light caramel in color, 20 to 25 minutes, stirring occasionally. Drizzle in the honey. Then add the sherry to deglaze the pan. Next, add the stock and the browned beef. Cover and roast in the oven for 1 hour 15 minutes. Add the pears and stir to combine. Roast until the beef is tender, 45 minutes to 1 hour more. Cool and store in the refrigerator for a make-ahead meal.
  • When ready to serve, reheat the potted beef in a 325 degrees F oven or on the stove-top, covered over medium-low heat.
  • Stir up the sour cream with the chives, heavy cream and horseradish. Season with salt and pepper. Serve atop the beef and onions with pears.

1/2 cup Robiolina Cheese
1/4 cup freshly grated Parmigiano-Reggiano
For the Spectacular:
White Truffles (shaved and very finely grated)

Steps:

  • Heat a large skillet oven medium-high with a few tablespoons of olive oil. Add onions, and season with salt. Sprinkle the onions all over with sugar. Cook, undisturbed for one minute, and then add the butter, continuing to cook until the onions begin to develop deep caramelization. Flip the onions, and cook for one minute, and then add the thyme, followed by the sherry. Cook for 10 minutes or until onions are lightly deeply caramelized and. Remove from heat and stir in cream. Adjust seasoning to taste. For the Special: Stir in the Robiolina and Parmigiano-Reggiano off of the heat. For the Spectacular: Shave truffles over the onions, and then sprinkle the truffles with salt. Helpful Tips: 1. You can use pearl or even frozen pearl onions instead of Cipolline. 2. Do two batches so there's no overcrowding in the pan, and all the onions have the nice dark color on the bottom. 3. You could also use Marscapone, ricotta, or even cream cheese instead of Robiolina cheese.

1 cup balsamic vinegar
1/2 cup honey
1 tablespoon unsalted butter
1 onion, minced
2 garlic cloves, minced
4 (12 ounce) bags fresh spinach, stemmed and washed
2 cups heavy cream
1 teaspoon grated nutmeg
salt and pepper, to taste
2 cups panko breadcrumbs, bread crumbs

Steps:

  • Place unpeeled onions in a bowl and cover with very hot water. Set aside for 15 minutes to soften skins. Drain onions, then peel and pat dry. Heat a large skillet over high heat and add a - count of olive oil. Add the onions and saute until golden brown all over, about 10 minutes. Add the vinegar and honey, reduce heat to medium, and cook until mixture has reduced to a syrup and onions are soft, about 20 minutes.
  • Preheat oven to 400°F.
  • Heat a large pot over medium heat. Drizzle with a 2-count of olive oil, add butter, and stir around until it melts. Add onions and garlic and saute until soft, about 5 minutes. Add spinach in batches, pushing down into pan with a wooden spoon to help it wilt and adding more spinach to the pot as soon as room is available. Cook spinach until it is dry, then reduce heat and add cream and nutmeg. Stir and cook for 10 minutes, Season with salt and pepper.
  • Pour the spinach into a baking dish and top with onions and panko. Bake until bread crumbs are golden brown, about 15 minutes. Serve hot.6.

2 lb whole Cipollini onions
Olive oil
Salt
Pepper
1/4 cup white wine
1/2 cup chicken broth
1 cup heavy cream
1 peeled Cipollini onion studded with 2 whole cloves
1/4 bay leaf
1 sprig of fresh thyme
2 tbsp butter
2 tbsp flour
1/2 cup grated sharp cheddar
Grated nutmeg

Steps:

  • Put onions in a bowl and cover with boiling water After 1 minute, drain off the water. Using a sharp paring knife trim off the root end of the onion, leaving a little of the hard pad intact. It will soften as it cooks and it will keep the onion from slipping apart. Starting at the root end, peel away the outer layer of skin, then trim the tips. You may have to remove several layers of onion. Put the peeled onions in a roasting pan large enough to hold them in a single layer. Toss onions with olive oil, salt and pepper, and roast at 350 degrees for about an hour, until soft and caramelized. Stir gently every 15 minutes to keep them from sticking and to spread the color around. While the onions are roasting, reduce 1/4 cup white wine about in half. Add chicken broth, cream onion, bay leaf and thyme. Simmer and then turn off the heat and let steep for 10-15 minutes. In another slightly larger saucepan, proceed as for basic bechamel. Heat butter and add flour, whisking constantly to allow the flour to cook until the bechamel is a caramel color, about 5-8 minutes. Whisk in a few tablespoons of the steeped liquid from above (after removing onion and herbs) to loosen up the flour mixture, then whisk in the remainder, stirring constantly until thickened. Once the sauce is thickened, whisk in cheddar cheese. Season with salt and grating of nutmeg. Using a slotted spoon, carefully transfer the onions into the sauce and stir gently to blend. May be made a day in advance and stored in the refrigerator.
