ROASTED CHICKPEA KALE SALAD WITH TAHINI DRESSING
This Roasted Chickpea and Kale Salad with delicious creamy tahini dressing is hearty, healthy and full of so much flavor!

Steps:
- Preheat oven to 400 degrees F.
- Rinse and drain chickpeas, patting them dry using paper towels. In a large bowl, drizzle olive oil over chickpeas and add seasonings, tossing until chickpeas are completely coated. Spread chickpeas out on a prepared baking sheet and roast in oven for 25 to 30 minutes, shaking pan halfway through.
- While the chickpeas are roasting, whisk together tahini, lemon juice, zest, honey, garlic, ginger, olive oil and salt/pepper. Right before serving, toss tahini dressing with the kale and top with roasted chickpeas. Serve and enjoy!

RAW KALE SALAD WITH TAHINI DRESSING
I had some kale salad from my local Ingles grocery store the other day and wanted to make something similar at home. This is what I came up with. I hope you enjoy it. The key is to chop up the kale real small. Feel free to put what you want in the salad. The dressing is used in Lebanon to use over fish, felafels, rice, etc.

Steps:
- Place all the chopped and grated veggies, nuts, and sprouts in a large bowl. Add the edamame beans and/or garbanzo beans, if using.
- Place tahini, water(start with less water and add more to get to desired consistency), lemon juice, garlic, salt and honey in food processor or blender. Blend until smooth. This makes about 1 cup.
- Add desired amount of dressing to salad and toss to mix.
- Enjoy!

- Salad: In a bowl, combine all salad ingredients.
- Dressing: In a food processor, process all dressing ingredients, except cilantro, until smooth.
- Combine with salad and cilantro; toss to coat.
- To cook dried chickpeas: Cover 2 cups chick-peas in water and bring them to a boil for 3 minutes.
- Leave covered for 1 hour, drain water, cover with fresh water and simmer for 20 - 30 minutes or until tender.

- Spread the chickpeas across 2 large two baking sheets and pan them dry with a kitchen towel or paper towel.
- Add one tablespoon olive oil to each pan along with 1 teaspoon cumin and 1 teaspoon paprika (to each pan). Use your hands to rub the chickpeas well in oil and spice. Make sure to coat everything evenly. Spread the chickpeas back out so that they aren't too crowded together.
- Place the chickpeas in the oven and roast for 30-35 minutes. About halfway through cooking, take the pans out to stir and rotate in the oven for a more even roast. After 30-35 minutes your chickpeas should be golden and crunchy.
