1 pound chicken breasts ((cut into bite sized pieces))
1 tablespoon oil
1/2 cup diced bell pepper ((any color))
1/2 cup diced onion
1 medium jalapeno, diced ((optional))
2 cloves garlic ((minced))
1 tablespoon taco seasoning
2 cups shredded melting cheese
4 medium flour tortillas

Steps:

  • Cut chicken breasts into small bite size pieces. Heat oil over medium-high heat in a large heavy duty pan. Add the chicken breasts and taco seasoning to the pan. Sautee 4-5 minutes then add the bell pepper, onion, and garlic, sautee another 5 minutes or until the chicken is cooked through. Remove mixture from the pan and set aside.
  • To the same pan, add ½ teaspoon oil and a tortilla, top with a handful of shredded cheese, and 1/4th the chicken mixture, then with more cheese. Fold the tortilla and cook on both sides until crispy and golden. Remove from the pan and repeat with remaining tortillas.
  • To serve: Slice tortillas in half or thirds and serve with sour-cream, salsa, guacamole or your favorite dipping sauce.

6 flour soft taco tortillas
2 cups diced rotisserie chicken
3 jalapeno peppers
12 oz Pepper Jack cheese

Steps:

  • Dice rotisserie chicken, grate cheese, and dice jalapeno peppers. (You can choose to discard jalapeno seeds or leave them in to make it spicier.) Combine chicken, cheese and jalapenos in a mixing bowl and mix until evenly mixed throughout.
  • Preheat a cooking pan over medium heat and grease it lightly with some cooking spray.
  • Place 1 tortilla in the cooking pan and spread a third of the filling all over the tortilla. Cover with another tortilla and and spray the top with some cooking spray.
  • Cook until cheese starts to melt and bottom tortilla is browned. Flip on the other side and cook until that side is browned as well.
  • Repeat with remaining tortillas and filling.
  • Note: if available, you can cook more than one quesadilla at a time on a griddle.Note: you can keep cooked tortillas warm in the oven heated to 200°.

1 onion (finely diced)
1 red bell pepper (seeds removed, finely diced )
1 yellow bell pepper (seeds removed, finely diced )
2 garlic cloves (crushed)
1-2 tsp jalapeno (finely chopped (to taste))
1 tsp chilli flakes
1-2 tbsp taco seasoning ((to taste))
2 tsp dried oregano
4 cups shredded chicken
1 cup grated mozzarella cheese
1 cup grated cheddar cheese
2 tbsp fresh coriander / cilantro (finely chopped)
4 large flour tortillas
Salsa
Sour cream

Steps:

  • Heat a tablespoon of oil in a frying pan then saute the onion, bell peppers, garlic and jalapeno for 2-3 minutes until the onion starts to soften.
  • Add the seasonings and cook for another minute.
  • Add the shredded chicken and stir to coat the chicken in all the aromatics. Remove from the heat and allow to cool to room temperature. (The filling can be made up to 2 days in advance and kept in a sealed container in the fridge.)
  • Once cooled, add the cheese and cilantro/coriander and stir well to combine.
  • Heat a large frying pan over medium heat. Place one tortilla in the pan, add filling to half of the tortilla then fold over the rest. I like to cook two quesadillas, side-by-side to make cooking time a little quicker.
  • Cover with a lid and cook for 1-2 minutes per side until golden brown on both sides with the cheese completely melted.
  • Remove from the pan, allow to cool for a minute then slice into wedges.
  • Serve the quesadillas with sour cream, salsa and guacamole for dipping.

2 tablespoons olive oil
1 1/2 pounds boneless, skinless chicken breasts, cut into 1/2- to 1-inch pieces
Freshly ground black pepper
8 ounces ditalini pasta
2 stalks celery, finely diced
1 yellow bell pepper, finely diced
1 onion, finely diced
1 carrot, finely diced
1 zucchini, diced
1 teaspoon red pepper flakes
One 28-ounce can diced tomatoes, with the juice
One 15-ounce can white beans, drained and rinsed
One 15-ounce can kidney beans, drained and rinsed
1 teaspoon dried basil
1 teaspoon dried oregano
Chopped fresh parsley, for serving
Jarred pesto, for serving
Grated Parmesan, for serving

Steps:

  • Add water and salt to a pot for pasta and bring to a boil. Add the stock to a pot and heat over medium-high heat until hot.
  • Put a large pot over medium heat and add the olive oil. Add the chicken, sprinkle with salt and pepper and cook, stirring, until the chicken begins to brown, 2 to 3 minutes.
  • Meanwhile, add the pasta to the boiling water and cook according to the package instructions.
  • Add the celery, bell pepper, onion, carrot and zucchini to the pot with the chicken. Add the red pepper flakes and season with salt and pepper. Cook until the vegetables begin to soften, 2 to 3 minutes. Add the tomatoes, beans, basil, oregano and hot stock. Bring to a boil and simmer for 5 minutes. Taste and adjust the seasoning with salt and pepper.
  • Drain the pasta and add it to the soup. Stir in the chopped parsley. Serve with a dollop of pesto and a sprinkling of Parmesan.

4 cloves garlic, chopped
1 tablespoon chopped fresh thyme

1 lemon, zested and halved
1 teaspoon salt, divided

1 tablespoon olive oil

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix butter, garlic, thyme, rosemary, lemon zest, 1/2 teaspoon salt, and 1/2 teaspoon pepper together in a bowl.
  • Loosen skin on chicken breast; rub butter mixture between skin and breast meat. Press on the skin to distribute evenly. Rub oil, remaining 1/2 teaspoon salt, and 1/2 teaspoon pepper all over; place lemon halves inside cavity. Set in a baking pan.

4 slices thin-cut bacon
2/3 cup grated pepper jack cheese
2 ounces cream cheese, softened
1 teaspoon cayenne pepper
1/2 teaspoon ground cumin
2 burrito-size tortillas
1 tablespoon salted butter
1 cup shredded rotisserie chicken
2 jalapenos, stemmed, quartered and seeded
1 tablespoon chopped fresh cilantro

Steps:

  • Place a large nonstick skillet over medium heat. Add the bacon and cook, turning as needed, until crisp, about 8 minutes. Remove to a paper towel-lined plate, reserving a couple of tablespoons of bacon fat.
  • While the bacon is frying, mix together the pepper jack, cream cheese, cayenne pepper and cumin in a bowl. Spread onto one of the tortillas and set aside.
  • Wipe out the skillet and return it to the heat. Heat the butter and reserved bacon fat until the butter is melted, then place the prepared tortilla in the skillet, cheese-side up. Top with the chicken and jalapenos. Crumble over the bacon and top with the second tortilla. Cook until golden on both sides, 2 to 3 minutes per side. 2 jalapenos, coarsely chopped
3 tablespoons chopped cilantro
3 cloves garlic, coarsely chopped
1/4 cup fresh lime juice
2 (8-ounce) boneless, skinless chicken breast
Salt and freshly ground pepper
2 large red onions, finely sliced
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 tablespoon finely chopped cilantro
Salt and freshly ground pepper
1 Japanese eggplant, sliced lengthwise into 1/4-inch thick slices
Olive oil
Salt and pepper
9 (8-inch) flour tortillas
3/4 cup grated monterey jack
3/4 cup grated white cheddar

8 cherry tomatoes, quartered

Steps:

  • In a blender, combine the marinade ingredients and blend until smooth. Place the chicken in a medium bowl, pour the marinade over it, cover, and refrigerate for 4 hours.
  • Heat oil in a medium saucepan over medium-high heat. Add the onions and cook until soft and caramelized, about 20 to 25 minutes. Add the balsamic vinegar and cilantro and cook for 5 minutes. Season with salt and pepper, to taste. Set aside.
  • Preheat grill pan. Brush eggplant with oil on both sides and season with salt and pepper to taste. Grill for 2 minutes on each side. Remove and coarsely chop.
  • Preheat grill pan over high heat. Remove chicken from marinade and season with salt and pepper to taste. Grill for 4 to 5 minutes on each side until cooked through. Let rest for 5 minutes and slice thinly on the bias. Set aside.
  • Preheat oven to 450 degrees F.
  • Place 6 tortillas on a large un-greased baking sheet. Divide the cheese, chicken, onions, and eggplant among the 6 tortillas and season with salt and pepper, to taste.
  • Stack the tortillas to make three 2 layer tortillas and top with the remaining 3 tortillas. Brush the tops with olive oil and sprinkle with ancho chile powder. Bake for 8 to 12 minutes, or until the tortillas are slightly crisp and the cheese has melted. Cut into quarters and garnish with the Mixed Tomato Salsa.
  • Combine all ingredients in a medium bowl and season with salt and pepper, to taste.
  • Yield: 8 servings
