- Preheat an oven to 500 degrees F (260 degrees C). Spray a baking sheet with cooking spray.
- Place cauliflower in a resealable plastic bag. Add olive oil, Cajun seasoning, and garlic salt to cauliflower; mix until evenly coated. Spread cauliflower in an even layer onto the baking sheet; season with salt. Cover cauliflower with aluminum foil.
- Roast in the preheated oven until cauliflower are slightly soft, 10 to 15 minutes. Remove foil and toss cauliflower with tongs. Continue roasting until cauliflower are browned and crispy, about 15 minutes.

- Position an oven rack in the bottom of the oven and preheat to 450 degrees F. Line a baking sheet with foil.
- Remove the leaves from the cauliflower, then trim the stem flush with the bottom of the head so the cauliflower sits flat on the prepared baking sheet. Rub the outside of each head with the cut garlic.
- Whisk together the oil, 3 tablespoons mustard, 1/2 teaspoon salt and a few grinds of black pepper in a small bowl.
- Put the cauliflower on the prepared baking sheet and brush the entire outside and inside with the mustard-oil mixture. Roast the cauliflower until nicely charred and tender (a long skewer inserted in the center of the cauliflower should pass through easily), 50 minutes to 1 hour. Let rest for a few minutes.
- Meanwhile, combine the parsley and Parmesan in a small bowl. Brush the outside of the roasted cauliflower heads all over with the remaining 1 tablespoon mustard and generously sprinkle with the Parmesan mixture.
- Cut the cauliflower into thick wedges and serve on plates with a sprinkle of salt, lemon wedges and any extra Parmesan mixture.

- Heat the peanut oil in a large cast-iron skillet over medium-high to high heat. Add the chile peppers, cauliflower, zucchini, bell peppers and scallion whites. Cook, stirring, until the cauliflower has softened slightly and begins to char, about 5 minutes.
- While the vegetables are cooking, stir together the soy sauce, rice wine vinegar, honey, chili paste, ginger, sesame oil, garlic and lime zest and juice in a small pitcher. Whisk in the cornstarch until completely dissolved.
- Reduce the heat to low and add the sauce. Cook, stirring continuously, until everything is coated in the sauce and the cauliflower is cooked through, 1 to 2 minutes, adding up to 1/4 cup water if it looks dry. CAJUN-FRIED CAULIFLOWER
This recipe originally came from my Cajun great grandmother. She didn't speak any English, but her cooking always received that universally understood "Mmmm!" I have modernized the recipe, by using purchased crab-boil and Cajun seasoning, instead of her multitude of mixed spices. (Prep. and cook times are a "guesstimate").

- Wash head of cauliflower.
- Place cauliflower in a large pot with enough water to cover.
- Add the bag of crab-boil, and the salt to the water.
- Bring to a boil; cook for about 8-10 minutes, or until cauliflower becomes "fork tender".
- When cauliflower becomes tender, remove from heat and allow cauliflower to "soak" in the spice for about 3-5 minutes (the longer it soaks, the spicier it gets).
- Remove cauliflower from the water and drain.
- Cut cauliflower into florets.
- Place breadcrumbs in a large bowl and mix in the Cajun seasoning.
- Mix together the beaten eggs and the 1/3 cup lemon juice.
- Heat enough oil to deep fry the cauliflower to 350°F.
- Coat each floret in the egg mixture, and then dredge in the breadcrumbs.
- Deep fry until breadcrumbs turn golden brown, about 2-3 minutes.
- Drain well on paper towels.
- Serve with your favorite dipping sauces if desired.
