Roasted Parsnips and Carrots image

Serve Ina Garten's Roasted Parsnips and Carrots recipe from Barefoot Contessa on Food Network as the perfect holiday or special occasion dinner side.

2 pounds parsnips, peeled
1 pound carrots, unpeeled
3 tablespoons good olive oil
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
2 tablespoons minced fresh dill or parsley

Steps:

  • Preheat the oven to 425 degrees F.
  • If the parsnips and carrots are very thick, cut them in half lengthwise. Slice each diagonally in 1-inch-thick slices. The vegetables will shrink while cooking, so don't make the pieces too small. Place the cut vegetables on a sheet pan. Add the olive oil, salt, and pepper and toss well. Roast for 20 to 40 minutes, depending on the size of the vegetables, tossing occasionally, until the parsnips and carrots are just tender. Sprinkle with dill and serve hot.

This recipe makes the most of leftover Stilton - but it could be made with any hard cheese (or even a mixture of all those end bits clinging to the rind).

Yield Serves 4 as a snack or 10 as a pre-dinner nibble

Number Of Ingredients 9

8 oz (225 g) Stilton, rind removed
1 large egg
1 large shallot, finely chopped
1 teaspoon Worcestershire sauce
¼ teaspoon English mustard powder
1 heaped teaspoon chopped fresh sage
1 oz (25 g) walnut pieces, if you like
4 thick slices of bread (or 16 slices of ciabatta 1cm thick) well toasted
1 teaspoon cayenne pepper

Steps:

  • Pre-heat the grill to its highest setting and line either the grill pan or a baking tray with kitchen foil. Put the cheese into a mixing bowl. Use a fork to finely crumble the cheese, then stir in the egg, shallot, Worcestershire sauce, mustard and sage (plus the walnuts, if using). Now spread the cheese mixture thickly over the bruschettini, making sure you take the mixture to the edge or they will burn. Sprinkle with cayenne pepper. Then place the bruschettini on to the foil-lined grill pan or baking tray and grill for 2 minutes, until the cheese is golden and bubbling. Serve warm.

HONEY-ROASTED PARSNIPS

These golden, honeyed parsnips have just the right mix of earthiness and sweet glaze to make a moreish Christmas side dish, and they're quick to prepare

500g parsnips
1 tbsp flour
1 tbsp honey
2 tbsp sunflower oil
2 tbsp butter

Steps:

  • Top and tail 500g parsnips, cutting any larger ones in half lengthways, then put in a large saucepan, cover with salted water, bring to the boil and cook for 5 mins.
  • Drain in a colander and let them steam-dry for a few mins.
  • Heat oven to 190C/170C fan/ gas 5.
  • Sprinkle 1 tbsp flour and 1 tbsp honey over the parsnips and toss to coat.
  • Put the parsnips in a roasting tin with 2 tbsp sunflower oil, 2 tbsp butter and seasoning.
  • Roast for 40 mins, turning halfway, until golden.

2 red onions , thinly sliced
4 tbsp muscovado sugar
100ml balsamic vinegar
300g stilton , crumbled
200g parmesan (or vegetarian alternative), grated
2 tbsp crème fraîche
2 eggs , beaten
2 tsp wholegrain mustard
6 slices sourdough bread or German rye bread

Steps:

  • Put the onions, sugar and vinegar into a large pan on a low heat. Cook for about 25 mins, stirring now and again, until gloopy and sticky. Cool. Mix together the cheeses, crème fraîche, eggs and mustard with some seasoning, then chill.
  • To serve, heat the grill, lightly toast the bread and cut each slice into chunks. Put onto a baking sheet, spread a tsp of chutney on each chunk, then pile on the rarebit mixture - as much as the little squares can hold. Grill for 3-5 mins until golden brown and bubbling.

A low-fat yet rustic root vegetable salad flavoured with honey and rosemary. It makes a great accompaniment a roast dinner.

500g parsnip , quartered
1 tbsp olive oil
200g pack cooked and peeled whole chestnut
2 rosemary sprigs, roughly chopped
1 tsp clear honey
140g bag mixed salad leaf (we used watercress, rocket & spinach)

Steps:

  • Heat oven to 200C/180C fan/gas 6. On a baking tray, toss the parsnips with 2 tsp of the oil, season and roast for 20 mins. Remove from the oven and stir through the chestnuts and rosemary, then drizzle over the honey and roast for 10-15 mins more. Leave to cool.
  • Toss the leaves with the remaining oil and some seasoning, and pile onto a serving plate. Top with the parsnips, chestnuts and any juices from the tray.
