A great dinner all rolled up into one and baked in a casserole dish. This is a great recipe for using up leftovers, and looks elegant too.

Number Of Ingredients 12

1 tablespoon olive oil
1/2 onion, chopped
2 garlic cloves, minced
1 (12 ounce) jar beef gravy
1 (14 1/2 ounce) can diced tomatoes
1 tablespoon italian seasoning
8 slices roast beef, cooked (sliced about 1/2-inch thick)
2 cups mashed potatoes
1 cup broccoli, cut up and cooked
1 cup diced carrot, cooked
2 tablespoons chopped parsley
2 tablespoons parmesan cheese

Steps:

  • Pre-heat oven to 350°F In a medium saucepan, heat the oil and add the onions and garlic. Cook for one to two minutes. Add gravy, tomatoes, and italian seasoning.
  • Meanwhile, heat potatoes and gently fold in broccoli and carrots. To each slice of roast beef, spread about 1/2 cup of the potato mixture and roll up. Place beef rolls, seam side down, in a baking dish sprayed with non-stick cooking spray.
  • Spoon gravy mixture over beef rolls, cover and bake for 20-25 minutes. Uncover, sprinkle with parsley and parmesan, and serve.

1 pound red potatoes (3-4 medium), cubed
1-1/2 cups fresh baby carrots
1 medium green pepper, chopped
1 medium parsnip, chopped
1/4 pound small fresh mushrooms
1 small red onion, chopped
1 beef rump roast or bottom round roast (3 pounds)
1 can (14-1/2 ounces) beef broth
3/4 teaspoon salt
3/4 teaspoon dried oregano
1/4 teaspoon pepper
3 tablespoons cornstarch
1/4 cup cold water

Steps:

  • Place vegetables in a 5-qt. slow cooker. Cut roast in half; place over vegetables. Mix broth and seasonings; pour over roast. Cook, covered, on low until meat and vegetables are tender, 7-9 hours., Remove roast and vegetables from slow cooker; keep warm. Transfer cooking juices to a small saucepan; bring to a boil. Mix cornstarch and water until smooth; stir into cooking juices. Return to a boil; cook and stir until thickened, 1-2 minutes. Serve with roast and vegetables.

1/2 small onion, minced
1 stalk celery, minced
1/4 red bell pepper, minced
1 garlic clove, minced
1/2 teaspoon Old Bay Seasoning
2 ounces lump crabmeat
2 tablespoons seasoned bread crumbs, more if needed
12 ounces flounder fillets
1 dash salt
1 dash black pepper
2 teaspoons olive oil
1/2 teaspoon paprika
1 tablespoon lemon juice
1/2 lemon, cut into wedges for garnish
2 cups broccoli, steamed
1 pear, halved

Steps:

  • Preheat the oven to 400°F In a sauté pan, spray with non-stick cooking spray. Add the onions, garlic, celery, and peppers. Sauté for 2 minutes, or until the vegetables are wilted.
  • Season with Old Bay. Sauté for 2 minutes. Remove from the heat and place mixture into a bowl. Gently stir in the crabmeat, then the bread crumbs a little at a time, adding more as needed to gently bind. Set aside to cool.
  • Season the fish with salt and pepper. Place equal amounts of filling onto each fillet and roll up. (alternatively, you can place one fillet on the baking sheet, place filling atop the fillet, then place another on top, off to the side, to resemble a pocket of stuffing).
  • Place the fish on a baking dish seam side down. Drizzle top of fish olive oil then sprinkle with paprika and a splash of lemon juice. Place the pan in the oven and bake for 20-25 minutes.
  • Remove the fish from the oven and serve with lemon wedges and broccoli sprayed with a few sprays of no-fat butter spray. Have the fruit for dessert.

1 lb lean ground beef
2 tablespoons italian seasoning
16 ounces chopped tomatoes, drained
1 (12 ounce) bag cholesterol-free egg noodles
2 tablespoons fat free butter substitute
1 teaspoon kosher salt
1/2 teaspoon black pepper
8 ounces low-fat cream cheese, cubed
4 ounces fat-free cottage cheese
8 ounces low-fat sour cream
8 ounces reduced-fat cheddar cheese, shredded

Steps:

  • Preheat oven to 350°F Saute' ground beef with Italian seasoning. Drain and add chopped tomatoes. set aside.
  • Begin making the egg noodles. While egg noodles are cooking place in a large bowl the butter, salt, pepper, cream cheese, cottage cheese, and sour cream. Set aside.
  • As soon as the noodles are cooked, drain in colander, shake water out, and immediately pour into bowl with cream cheese mixture. Mix to coat noodles and melt cheese.
  • Place 1/2 of noodle mixture into a greased 9x13x2 casserole pan. Follow with 1/2 the beef mixture, then sprinkle with 1/2 of cheddar cheese.
  • Repeat layers. Bake for 30 minutes or until cooked thru.

1 boneless beef chuck roast (1-3/4 pounds)
1 envelope taco seasoning
1 medium onion, chopped
1 cup beef broth
2 tablespoons all-purpose flour
1 tablespoon cold water
6 flour tortillas (8 inches)
1 can (4 ounces) chopped green chiles
1-1/2 cups shredded Mexican cheese blend, divided
1 can (10 ounces) enchilada sauce
Optional: Chopped lettuce and chopped tomatoes

Steps:

  • Rub roast with taco seasoning. Transfer to a greased 3-qt. slow cooker. Top with onion and broth. Cook, covered, on low 7-8 hours or until meat is tender. Remove roast; cool slightly. Reserve 1/2 cup cooking juices in a saucepan; discard remaining juices. Skim fat from reserved juices. Shred beef with 2 forks; return to slow cooker., In a small bowl, mix flour and cold water until smooth; add to saucepan. Cook and stir 2 minutes or until thickened. Stir into meat mixture., Preheat oven to 425°. Spoon 1/2 cup meat mixture off center on each tortilla; top with chiles and 2 tablespoons cheese. Roll up and place in a greased 13x9-in. baking dish, seam side down. Top with enchilada sauce; sprinkle with remaining cheese. Bake, uncovered, 15-20 minutes or until cheese is melted. If desired, top with chopped lettuce and tomatoes.

8 ounces boneless skinless chicken breasts, cut into thin strips
2 garlic cloves, crushed
1 tablespoon light soy sauce
2 tablespoons white wine or 2 tablespoons chicken broth
1 tablespoon sesame oil or 1 tablespoon olive oil
1/2 small onion, julienne
2 cups broccoli, julienne and steamed
8 baby carrots, julienne and steamed
1 teaspoon cornstarch, mixed with
1/3 cup water
1/2 cup steamed rice
1 egg, cooked scrambled
1 tablespoon light soy sauce

Steps:

  • Mix marinade ingredients in a medium bowl. Let stand 30 minutes.
  • Heat skillet (or wok) over medium-high heat. Stir-fry marinated chicken until lightly browned. Retaining juices in the pan, remove chicken with a slotted spatula and set aside.
  • To the pan of juices, add onions and saute' 3-4 minutes. Add broccoli, carrots to the pan and saute 2-3 minutes more. Add chicken back to the pan with the thickener and saute 1-2 minutes until sauce is thickened.
  • Fried rice: Mix rice ingredients together.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). If roast is untied, tie at 3 inch intervals with cotton twine. Place roast in pan, and season with salt, garlic powder, and pepper. Add more or less seasonings to taste.
  • Roast in oven for 60 minutes (20 minutes per pound). Remove from oven, cover loosely with foil, and let rest for 15 to 20 minutes.
