PIMENTO CHEESE STICKS
These cheese sticks are a spin on the beloved southern spread "pimento cheese." Made from shredded Cheddar, mayonnaise, and chopped pimento peppers from a jar, it's used on everything from sandwiches to crackers and celery to burgers.

Steps:
- Preheat oven to 350°F.
- Whisk together flour, baking powder, salt, and cayenne in a bowl. Beat together butter and cheese in a large bowl with an electric mixer at high speed until combined well, then beat in pimentos. Reduce speed to low, then add flour mixture and mix just until a dough forms.
- Roll 1 level teaspoon dough into a ball with lightly floured hands, then roll ball on a lightly floured surface into a 5-inch-long rope and transfer to a large baking sheet (ungreased). Make more ropes with remaining dough, arranging them 1 inch apart on 2 large baking sheets.
- Bake cheese sticks in upper and lower thirds of oven, switching position of sheets halfway through baking, until pale golden, 15 to 18 minutes total (sticks will flatten slightly). Carefully transfer with a metal spatula to racks to cool.

- Food processor instructions: In the bowl of a food processor fitted with the steel blade, combine the cream cheese, mayonnaise, Worcestershire sauce, 1/4 teaspoon of salt, garlic powder, and cayenne pepper. - Mixer instructions: In the bowl of an electric mixer fitted with the paddle attachment or beaters, combine the cream cheese, mayonnaise, Worcestershire sauce, 1/4 teaspoon salt, garlic powder, and cayenne pepper. Beat until smooth and evenly combined. Coarsely grate the Cheddar cheese and mix in along with the diced pimentos. Taste and adjust seasoning, if necessary. (It's a good idea to taste the pimento cheese on the crackers you plan to serve it with, as the saltiness can vary.)
- Transfer the spread to a serving bowl and serve with crackers and/or crudités. If serving later, cover and refrigerate for up to 5 days; bring to room temperature before serving.
