12 ounces rigatoni
2 tablespoons extra-virgin olive oil
12 ounces sweet Italian sausage, casings removed, crumbled
4 tablespoons unsalted butter
6 cloves garlic, chopped
1 bunch Swiss chard, stems removed, leaves chopped
1 tablespoon plus 1 teaspoon all-purpose flour
1 3/4 cups milk (not skim)
1/2 cup grated parmesan cheese (about 1 ounce)
Grated zest of 2 lemons
Freshly ground pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain the pasta.
  • Meanwhile, heat the olive oil in a large Dutch oven or wide skillet over medium-high heat. Add the sausage and cook until browned, about 5 minutes. Transfer to a plate using a slotted spoon; set aside.
  • Wipe the Dutch oven clean; add the butter and melt over medium heat. Add the garlic and cook, stirring, until slightly softened, 1 to 2 minutes. Add the chard and cook, stirring occasionally, until wilted, 3 to 4 minutes. Sprinkle in the flour and cook, stirring, until combined, 1 to 2 minutes.
  • Add the milk to the chard mixture and bring to a boil; cook 1 minute. Stir in the sausage, parmesan, lemon zest and a few grinds of pepper. Reduce the heat to medium low and simmer, stirring occasionally, until slightly thickened, about 6 minutes. Add the pasta to the pot and toss, adding enough of the reserved pasta water to loosen.

12 ounces hot Italian sausage, casings removed
1 onion, chopped
1 small bunch Swiss chard, leaves and stems chopped separately
3 cloves garlic, minced
1 28-ounce can whole peeled San Marzano tomatoes, crushed by hand
1/2 teaspoon dried oregano
Freshly ground pepper
1 cup ricotta cheese
3/4 cup shredded mozzarella cheese
Parmesan cheese, for topping

Steps:

  • Preheat the broiler. Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 1/2 cup cooking water, then drain.
  • Meanwhile, heat the olive oil in a large pot over medium-high heat. Add the sausage and cook, breaking it up into pieces, until browned, 3 to 5 minutes. Add the onion and chard stems; cook, stirring, until softened, 3 to 5 minutes. Add the garlic and cook 30 seconds. Add the tomatoes, oregano, 1/4 teaspoon salt and a few grinds of pepper.
  • Cook, stirring, until thickened, about 4 minutes. Add the chard leaves and cook, stirring, until softened, about 3 minutes. Add the pasta and 1/4 cup reserved cooking water to the sauce and stir to coat, adding more cooking water as needed to loosen; season with salt and pepper. Transfer to a 3-quart baking dish. Dollop spoonfuls of the ricotta on top, then sprinkle with the mozzarella. Broil until golden brown and bubbling, 3 to 5 minutes. Let rest 5 minutes before serving. Sprinkle with parmesan.

1/3 cup olive oil
2 sprigs rosemary
8 ounces spicy Italian sausage, casings removed
1 (15.5-ounce) can chickpeas or cannellini (white kidney) beans, rinsed, patted dry
1/4 cup dry white wine
12 ounces paccheri, rigatoni, or other large tubular pasta
Kosher salt
8 cups (lightly packed) torn escarole, kale, or Swiss chard leaves
3/4 cup finely grated Parmesan, divided
Freshly ground black pepper
2 tablespoons unsalted butter

Steps:

  • Heat oil in a large Dutch oven or other heavy pot over medium-high. Fry rosemary, turning, until crisp, about 2 minutes. Transfer to paper towels to drain.
  • Add sausage to same pot and cook, breaking up with a wooden spoon and stirring occasionally, until browned and cooked through, 8-10 minutes. Transfer with a slotted spoon to a plate.
  • Add chickpeas to pot and cook, tossing occasionally and mashing some chickpeas with spoon, until browned in spots, about 5 minutes. Transfer about half of chickpeas to plate with sausage. Add wine to pot, bring to a boil, and cook until liquid is almost completely evaporated, about 2 minutes.
  • Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until very al dente, about 3 minutes less than package directions.
  • Using a spider or a slotted spoon, transfer pasta to pot with chickpeas and add escarole and 1 cup pasta cooking liquid. Cook, tossing often, until escarole is wilted, pasta is al dente, and sauce is thickened, about 4 minutes. Add another 1/4 cup pasta cooking liquid, then gradually add 1/2 cup cheese, tossing until melted and dissolved into a luxurious, glossy sauce. Thin with more pasta cooking liquid if needed. Season with pepper, and more salt if needed. Add butter and toss to combine, then mix in reserved sausage and chickpeas.
  • Divide pasta among bowls. Crumble rosemary over top and sprinkle with remaining 1/4 cup cheese.

3 tablespoons good olive oil
3 cups chopped fennel (1 large bulb)
1 1/2 cups chopped yellow onion
1 1/4 pounds sweet Italian sausages, casings removed
2 teaspoons minced garlic (2 cloves)
1/2 teaspoon whole fennel seeds, crushed with a mortar and pestle
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 cup dry white wine
1 cup heavy cream
2/3 cup half-and-half
2 tablespoons tomato paste
1 pound rigatoni
1/2 cup chopped fresh parsley leaves
1 cup freshly grated Italian Parmesan cheese, divided

Steps:

  • Heat the olive oil in a large heavy pot or Dutch oven, such as Le Creuset, over medium heat. Add the fennel and onion and saute for 7 minutes, stirring occasionally, until tender. Add the sausage and cook for 7 to 8 minutes, crumbling it with a fork, until nicely browned. Add the garlic, crushed fennel seeds, red pepper flakes, 2 teaspoons salt, and 1 teaspoon black pepper and cook for one minute. Pour in the wine, bring to a boil, and add the heavy cream, half-and-half, and tomato paste. Bring back to a boil, lower the heat, and simmer for 20 minutes, until the sauce has thickened.
  • Meanwhile, bring a large pot of water to a boil, add 2 tablespoons salt, and cook the rigatoni according to the directions on the package. Drain and add to the sauce, stirring to coat the pasta. Cook over low heat for 5 minutes to allow the pasta to absorb the sauce. Off the heat, stir in the parsley and 1/2 cup of the Parmesan. Serve hot in shallow bowls with the remaining 1/2 cup Parmesan on the side.

1 tablespoon olive oil
1 onion (diced)
3 cloves garlic (minced)
1 1/2 pounds Italian sausage (casings removed)
28 ounce canned diced tomatoes (with their juice)
2 cups chicken broth
kosher salt
8 ounces rigatoni
1 bunch Swiss Chard (washed, drained, and coarsely chopped)
12 fresh basil leaves (thinly sliced)
1 tablespoon fresh oregano (chopped)
15 ounce can cannellini beans (rinsed and drained (about 2 cups))
sea salt and fresh ground black pepper
1/3 cup Parmesan Cheese (finely grated)

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the onion and cook for about 3-4 minutes, then add the garlic and saute for 1 minute. Add the sausage and brown for about 5 minutes, breaking up the clumps. Drain the grease from the pan and add the tomatoes with their juice and the chicken broth. Reduce the heat and simmer on low for about 30 minutes, stirring occasionally.
  • While that is simmering, cook the rigatoni per package directions. Reserve a cup of the pasta water before draining the rigatoni.
  • Add the rigatoni to the skillet. Add the chard, basil, oregano, beans, and some of the reserved water - enough to make the pasta slippery. Cook for about 3-4 minutes allowing the flavors to blend and the beans to warm up. Season with salt and pepper. Serve warm with the Parmesan cheese sprinkled on top.

2 tablespoons olive oil

1 pound rigatoni, or other tubular pasta
2 tablespoons unsalted butter
3 tablespoons extra-virgin olive oil
2 garlic cloves, thinly sliced
2 medium shallots, finely chopped
1 1/2 pounds Swiss chard, leaves cut into 1/2-inch strips and stems cut into 1/2-inch pieces
2 tablespoons finely grated lemon zest (about 2 lemons)
1/2 cup dry white wine
1/2 teaspoon red pepper flakes
1/3 cup fresh ricotta cheese
1/3 cup (about 1 1/2 ounces) pine nuts, toasted
Freshly grated Parmesan cheese, for sprinkling

Steps:

  • Bring a large pot of water to a boil. Add 2 tablespoons salt and the pasta; cook 3 minutes less than package indicates. Drain.
  • Heat butter and oil in a large Dutch oven over medium heat about 1 minute. Add garlic and shallots; cook, stirring, until fragrant, about 2 minutes. Stir in chard, lemon zest, wine, 1 teaspoon salt, and the red pepper flakes; season with pepper. Cook, covered, stirring occasionally, until chard has just wilted, 2 to 3 minutes.

I have enjoyed Swiss Chard, but never saw it magically disappear into a recipe until I tried this one, from Canadian Living Nov 2009. I am putting my version here for safekeeping.

2 tablespoons olive oil
1 lb Italian sausage, casings removed
4 garlic cloves, minced
1/2-1 teaspoon hot pepper flakes
1 (28 ounce) can diced tomatoes
1/2 cup grape tomatoes (optional -- I used yellow)
2 tablespoons dried basil
1/2 teaspoon salt
1/4 teaspoon sugar
1 (15 ounce) can navy beans, rinsed (I used pinto)
1 lb rigatoni pasta
10 cups swiss chard, chopped (stems too!)
1 cup mozzarella cheese, shredded
1/3 cup parmesan cheese, grated

Steps:

  • In large skillet, heat oil over med-hi heat; brown sausages, breaking up with spoon, about 8 minutes. Stir in garlic and hot pepper flakes; cook 2 minutes more.
  • Add tomatoes, basil, salt and sugar; bring to boil. Reduce heat and simmer 20 minutes. Stir in beans.
  • Meanwhile, cook pasta in salted water until still firm in center. Drain, reserving 1/2 c cooking liquid. Return pasta to pot with reserved liquid, sauce and chard; toss to coat. Transfer to baking dish (9x13).
  • Sprinkle with cheeses; cover with greased foil.
  • Bake in 375 oven for 20 minutes. Uncover and bake about 10 more minutes or until bubbly and brown.

  • In a large, deep skillet, heat the oil until shimmering. Add the garlic and cook over moderate heat, stirring, until golden, about 1 minute. Add the onion and sausage; break the meat up with a wooden spoon and cook until it just loses its pink color, about 7 minutes. Add the wine and cook over high heat until reduced by half, about 10 minutes. Stir in the tomatoes, their liquid and the red pepper and season with salt and pepper. Cook over moderate heat until slightly thickened, about 30 minutes.
  • Meanwhile, in a large pot of boiling salted water, cook the rigatoni until al dente. Drain well, reserving 1/2 cup of the pasta cooking water.
  • Add the rigatoni to the sauce and gently stir in the beans, 1/2 cup of Parmesan, the chopped basil and the butter. Cook, stirring gently, until heated through, about 3 minutes. Add some of the reserved pasta cooking water if the pasta looks dry. Transfer to warmed bowls, garnish with basil leaves and serve. Pass additional Parmesan at the table.
