This is an old family recipe that we've been making for decades. Make sure to use firm cooking potatoes. The amount of oats will depend on how watery your potatoes are. The mixture has to stick together.

20 medium potatoes
1 large onion, finely chopped
1 large egg
5 tablespoons rolled oats, or more as needed
4 tablespoons oil, or more as needed
salt and freshly ground black pepper to taste

Steps:

  • Peel potatoes and finely grate. Set grated potatoes onto a clean kitchen towel, twist to close, and press most of the liquid out of the potatoes, leaving only a little moisture.
  • Mix pressed potatoes, onion, egg, and oats in a large bowl and season with salt and pepper.
  • Heat oil in a large skillet. Shape small potato pancakes with 2 spoons out of the potato mixture and set into the hot oil. Bake in batches until browned, 3 to 5 minutes per side, adding more oil as necessary. Drain on paper towels before serving.

Irish cuisine originated in the kitchens of the farmers of the past from good, wholesome food made with locally grown produce. A famous Irish staple is the potato. Whip those into an old, easy standby and you have a great lunch, especially with a bit of sausage on the side. Posted for Zaar World Tour 05.

2 lbs potatoes, cut into 1-inch chunks
1 cup milk
1/3 cup chopped chives
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
3 teaspoons butter
1/2 cup sour cream

Steps:

  • Place potatoes in large saucepan; cover with cold water.
  • Bring to a boil over high heat.
  • Reduce heat; simmer uncovered until potatoes are tender, 15 to 20 minutes.
  • Drain potatoes, then return to saucepan.
  • Turn heat under saucepan to medium-low.
  • Cook potatoes until dry, about 2 minutes, stirring occasionally.
  • Add milk.
  • Using a potato masher, mash potato mixture until fairly smooth.
  • Remove from heat; stir in chives, salt and pepper.
  • Transfer to a medium bowl, cover and refrigerate until cold.
  • Potatoes will thicken as they cool.
  • Form potato mixture into 12 patties about 3 1/2 inches in diameter and 1/2 inch thick. Melt 1 teaspoon butter in a large nonstick skillet over medium heat until hot and sizzling.
  • Add three or four patties to skillet.
  • Cook until golden brown, about 2 minutes per side.
  • Keep warm in a 200 degrees F oven while cooking remaining patties in remaining butter.
  • Serve warm with sour cream.

These are great with smoked cheese but also work with any other hard cheese. Makes a nice snack. I got it from a cheese guide leaflet. It's lovely served with a poached egg.

1 lb potato
1 small onion, grated
1/2 tablespoon fresh parsley, chopped
50 g smoked cheese, grated
1 -2 tablespoon flour
oil, for frying
salt, to taste
pepper, to taste

Steps:

  • Grate the potatoes into a colander, squeezing out the excess moisture.
  • In a bowl, mix potatoes and all other ingredients, season to taste.
  • Heat oil in a large frying pan and drop 2-3 heaped tablespoons of the mixture into the pan.
  • Using a spoon flatten the mixture slightly and fry on medium heat for approx 7-10 minutes, turning halfway, until golden brown.
  • Keep the potatoe cakes warm in the oven on low heat while finishing the rest.
  • You'll need to add oil as necessary for the second batch.

2 1/2 cups potatoes, grated on medium grater
3 cups water
1 teaspoon lemon juice
1 potato, Boiled, Mashed
1 large egg, Beaten
2 tablespoons milk
1/2 teaspoon salt
vegetable oil, As Needed

Steps:

  • Grate raw potatoes into water to which lemon juice has been added.
  • Place potatoes in a strainer or cheese cloth and drain off liquid.
  • Drain well.
  • Beat raw and cooked potatoes with egg, milk, and salt to form a batter.
  • Using 3 T oil for each batch, drop batter for 3 or 4 pancakes at a time in hot oil in a large frypan.
  • When firm on the bottom side, loosen edges and turn.
  • Brown on other side.
  • Remove, drain on paper towel, and keep warm.
  • Continue until all batter is used.
  • Serve immediately.
  • NOTE:.
  • If potato cakes are served with meat, sprinkle with salt.
  • Sprinkle with sugar if served with applesauce.

GERMAN-STYLE CRISP POTATO PANCAKES



German-Style Crisp Potato Pancakes image

Another of my favorite recipes from the Sunset International Cookbook. The original recipe called for peeled and chopped raw potatoes but I've never had good luck using raw potatoes for this recipe. Therefore my adaptation is to use leftover cooked (mashed) potatoes. Can be served as a main meal sidedish or for breakfast.

2 tablespoons fresh lemon juice
4 cups leftover mashed potatoes
1/4 cup minced onion
1 teaspoon caraway seed, slightly crushed
2 tablespoons chopped fresh parsley
2 tablespoons unbleached flour
1 egg
1 tablespoon milk
salt or pepper
sour cream, if desired for topping
4 -6 tablespoons butter (for frying)

Steps:

  • In a large bowl combine the mashed potatoes with the lemon juice and stir well.
  • In a dry bowl, combine the onion, caraway seeds, fresh parsley, flour, egg and milk.
  • Stir in potatoes. Season to taste with salt and freshly ground pepper.
  • Over medium heat, melt 2 to 3 tablespoons of butter in a wide frying pan.
  • When butter starts to foam add about 2 tablespoons of the potato mixture, spreading into a 4 inch pancake. Repeat to make 2 or 3 more cakes, enough to fill the pan but not overcrowd.
  • Cook, turn once, until golden brown on both sides about 5 minutes per side. Add more butter as needed to fry pancakes.
  • Using a wide spatula, lift pancakes from pan and transfer to warming tray in low oven at 200 degrees. Continue cooking remainder of potato mixture.
  • Keep warm until ready to serve. Garnish with fresh parsley and top with sour cream if desired.
