These light and fluffy pancakes make a great weekend brunch dish. Serve with poached apples, dates and pears spiced with cinnamon

2 apples , peeled, cored and cut into wedges
2 pears , peeled, cored and cut into chunks
4 dates , stoned and chopped
1 cinnamon stick
3 oranges , 1 juiced and 2 segmented
4g 0% fat Greek yogurt
1 tsp vanilla bean paste
140g plain flour
1 tsp baking powder
2 large eggs , separated
150ml skimmed milk
175g ricotta
1 tbsp vegetable oil

Steps:

  • Place the apples, pears, dates, cinnamon stick and orange juice in a saucepan with 1 tbsp of water. Cook on a low heat for 15-20 mins until the fruit is soft and juices have thickened. In a small bowl, mix the yogurt with the vanilla bean paste. Set aside.
  • Meanwhile, make the pancakes in a large bowl, sieve together the flour and baking powder. In a jug, mix the egg yolks, milk and ricotta, then whisk until smooth. In another bowl, beat the egg whites until stiff peaks form. Next, pour the ricotta mix into the flour, whisking together briefly. Gently fold in the egg whites in two batches.
  • Heat a little of the oil in a large, non-stick frying pan. Dollop in a spoonful of the pancake mixture - you're looking to make about 12 pancakes from the batter. Fry for 1-2 mins on each side until puffed up and cooked through. Pile up on a plate with some foil placed loosely on top to keep them warm. Repeat to use up all the batter. Stir the orange segments through the compote and warm through. Serve the pancakes with a spoonful of compote and a dollop of the vanilla yogurt on the side.

This is a well loved recipe! I have an old, small crumpled piece of paper with this recipe hand written out from some years ago, not sure where it came from! I have my own scribbles and scratches on it, so I must have changed it somewhere in time, but this is how I have been making it the last 10 years. It is our favorite pancake recipe. So light, a little tangy, and very satisfying. Perfect with some fresh blueberries or strawberries.

1 cup ricotta cheese plus
2 tablespoons ricotta cheese
½ cup skim milk
2 eggs, separated
¾ cup all-purpose flour
1 teaspoon baking powder
1 pinch salt
1 tablespoon canola oil, or as needed

Steps:

  • Preheat a griddle to 325 degrees F (165 degrees C) or place a non-stick skillet over medium-low heat.
  • Stir ricotta cheese, milk, and egg yolks together in a bowl until combined.
  • Whisk flour, baking powder, and salt together in a bowl; stir in ricotta mixture.
  • Whisk egg whites in a bowl until frothy; fold into ricotta mixture.
  • Oil preheated griddle with about 1 teaspoon canola oil; pour 1/4 cup batter onto hot griddle for each pancake. Cook until evenly golden brown, 1 to 2 minutes; turn and cook until evenly golden on other side, 1 to 2 minutes more. Repeat with remaining batter, oiling griddle between batches.

This is a lovely hot fruit salad for a winter's meal. Make sure you have the ricotta, otherwise it's too sweet. You can use any type of port or sweet wine I think, I've used part port part marsala and it was fine. Cook time does not include chill time.

1 1/2 cups muscat wine
1/2 cup water
1/3 cup orange juice
1/4 cup lime juice
3/4 cup sugar
4 small carambolas, sliced
6 fresh dates, seeded, halved
7 dried figs, halved
3/4 cup dried apricot
2 cinnamon sticks
1 vanilla bean
5 cardamom pods, bruised
1/2 teaspoon finely grated lime juice
2 tablespoons shelled pistachios, chopped
200 g low-fat ricotta cheese
1 1/2 tablespoons icing sugar
1/4 teaspoon ground cinnamon
1 tablespoon skim milk

Steps:

  • Combine muscat, juices and sugar in a large pan, stir over heat without boiling until sugar dissolves. Bring to boil, simmer, uncovered without stirring for about 15 minutes or until mixture is thickened slightly.
  • Add carambola, dates, dried fruits, cinnamon, split vanilla bean, cardamom and rind to syrup, Simmer uncovered without stirring 10 minutes or until fruit is tender. Cool syrup, cover, refrigerate 3 hours or overnight. DIscard cinnamon sticks, cardamom and vanilla bean, Serve with ricotta cream and crushed pistachios.
  • Ricotta cream-.Beat cheese, icing sugar and cinnamon in small bowl with electric mixer until smooth. Stir in milk.

200 g about 1 cup ricotta cheese
3/4 cup milk
4 eggs, separated
1/2 teaspoon vanilla
1 cup all-purpose flour
1/2 teaspoon salt
1 tablespoon baking powder

Steps:

  • beat the ricotta with the milk, egg yolks, and the vanilla until smooth. In another bowl, sift or whisk together the dry ingredients. Add the ricotta mixture to the dry ingredients and stir very lightly.
  • Beat the egg whites until they are stiff and carefully fold them into the batter.
  • cook over low to medium heat on a skillet in a bit of butter, until the pancakes are lightly golden underneath. I used 1/4 cup of batter per pancake. bear in mind, the bubbles don't rise to the top of the pancake as easily as with some other recipes so you may want to peek at the underside to tell if it is ready to flip.
  • when the time is right, turn and cook for about another minute, until the cakes are cooked through.
  • Serve hot with a sweet sauce, and/or fruit. I prefer more butter, some syrup, and some fruit compote.

4 cups blueberries (fresh or frozen)
2 teaspoons cornstarch
1 cup sugar
1/2 cup water
1/4 cup prepared lemon curd (from 10-to-12 ounce jar)
1 tablespoon fresh orange juice
1 pinch salt
1 tablespoon butter
1/2 teaspoon pure vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 grated lemon, zest of
2 eggs, separated
1 cup ricotta cheese, preferably whole milk
1 1/2 cups milk, preferably whole
confectioners' sugar

Steps:

  • For the blueberry compote, in a saute pan, combine the blueberries, cornstarch, 1 cup sugar, water, lemon curd, orange juice, and a pinch of salt. Gently cook over medium heat until the blueberries are tender but not broken down, and the mixture simmers and thickens. Remove from the heat; stir in the butter and vanilla. Set aside to cool slightly.
  • For the pancakes, in a medium bowl, sift the flour, baking powder, salt, and sugar. Stir in lemon zest. Set aside. In a large bowl, mix the egg yolks and the cheese. Fold in the dry ingredients alternately with the milk. In a separate bowl, whip the egg whites until medium-stiff peaks form. Fold into the batter.
  • To complete the recipe, heat a buttered nonstick skillet or griddle over medium-high heat or to 350ºF (water drops on the skillet should skitter or sizzle when hot). For each pancake, pour 1/4 to 1/3 cup batter and cook until bubbles form on top. Turn and cook until the bottom is golden brown and the pancake is cooked through.
  • To serve, stack three pancakes on each plate with a dollop of the remaining prepared lemon curd between pancakes. Sprinkle with confectioner's sugar and pour compote over the pancakes.
