RICOTTA FILLED CORNBREAD RECIPE (MALAY)

1 1/2 Cups of Cornmeal
3/4 Cups of All Purpose Flour
1 Cup + 2 Tablespoons of sugar
1 Teaspoon of salt
2 eggs
3 cups of Buttermilk
1 Teaspoon of Baking Powder
15 oz tub of Ricotta Cheese
2 Eggs
2 Tablespoons of sugar

Steps:

  • Preheat Oven to 350 degrees Fahrenheit
  • In a mixer place all the cornbread ingredients together
  • In a bowl, place the ricotta, eggs and sugar together. Mix until combined
  • Spray a large rectangular casserole pan with nonstick spray
  • add HALF of the cornbread mixture
  • Bake in the oven until set - about 20-25 minutes
  • Remove from oven
  • Spread the WHOLE ricotta mixture on top
  • Bake for 20-25 minutes
  • Remove from the oven
  • Spread the rest of the cornbread mixture evenly
  • BAKE for 30-40 minutes or until browned on top
  • Enjoy

Homemade Ricotta image

4 cups whole milk
2 cups heavy cream
1 teaspoon kosher salt
3 tablespoons good white wine vinegar

Steps:

  • Set a large sieve over a deep bowl. Dampen 2 layers of cheesecloth with water and line the sieve with the cheesecloth.
  • Pour the milk and cream into a stainless-steel or enameled pot such as Le Creuset. Stir in the salt. Bring to a full boil over medium heat, stirring occasionally. Turn off the heat and stir in the vinegar. Allow the mixture to stand for 1 minute until it curdles. It will separate into thick parts (the curds) and milky parts (the whey).
  • Pour the mixture into the cheesecloth-lined sieve and allow it to drain into the bowl at room temperature for 20 to 25 minutes, occasionally discarding the liquid that collects in the bowl. The longer you let the mixture drain, the thicker the ricotta. (I tend to like mine on the thicker side, but some prefer it moister.) Transfer the ricotta to a bowl, discarding the cheesecloth and any remaining whey. Use immediately or cover with plastic wrap and refrigerate. The ricotta will keep refrigerated for 4 to 5 days.

1/3 cup fine yellow cornmeal
2 tablespoons sugar

1/2 cup fresh ricotta, plus more for serving
1 teaspoon orange zest, plus 1 1/2 teaspoons fresh orange juice and supremed oranges, for serving
2 large eggs
2 tablespoons unsalted butter, melted and cooled
1 teaspoon safflower oil
Warm honey, for serving

Steps:

  • In a large bowl, whisk together flour, cornmeal, sugar, baking powder, baking soda, and salt until very well combined, about 30 seconds. In a large measuring cup, beat together buttermilk, ricotta, orange juice and zest, eggs, and butter. Make a well in dry ingredients; stir in wet mixture until lumpy and just combined. Let rest 10 minutes.
  • Preheat oven to 200 degrees and place a rimmed baking sheet fitted with a wire rack inside. Heat a large nonstick or cast-iron skillet over medium; add oil, then wipe with a paper towel, leaving behind a thin film.
  • Working in batches, add heaping quarter-cups of batter to skillet, spreading lightly with the bottom of the cup. Cook until bubbles form on surface, edges have set, and undersides are golden-brown, 2 to 3 minutes. Flip and cook 2 minutes more. Transfer finished pancakes to oven to keep warm. Serve, topped with supremed oranges, warm honey, and a dollop of ricotta.

Usually I have to put tons of butter on it, because it's so dry and just doesn't have much taste to it, but this recipe is very moist, and you can eat it alone, it's got a great sweet taste to it. 1 cup milk
1/4 cup butter or 1/4 cup margarine, melted
1 large egg
1 1/4 cups white cornmeal or 1 1/4 cups blue cornmeal
1 cup all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
you might want to reduce the sugar to 1/3 cup and use 2 egg

Steps:

  • Heat oven to 400³F.
  • Grease bottom and side or round pan, 9x1 1/2 inches, or square pan, 8x8x2 inches, with shortening.
  • Beat milk, butter and egg in large bowl with hand beater or wire whisk.
  • Stir in remaining ingredients all at once just until flour is moistened (batter will be lumpy).
  • Pour into pan.
  • Bake 20 to 25 minutes or until golden brown and toothpick inserted in center comes out clean.
  • Serve warm if desired.

Steps:

  • Preheat oven to 400°. In a microwave-safe bowl, combine golden raisins, orange juice, butter and rosemary; microwave, covered, on high 1 minute. In a large bowl, whisk flour, cornmeal, sugar, baking powder and salt. In another bowl, whisk eggs, ricotta and lemon zest until blended. Add to flour mixture; stir just until moistened. 3/4 cup pancetta, small dice (cooked crisp and drained) or 9 slices bacon, chopped (cooked crisp and drained)
1 (8 ounce) jar sun-dried tomatoes, chopped (packed in oil)
1 tablespoon shallot, chopped
1 tablespoon fresh rosemary, chopped
butter, softened (optional)

Steps:

  • Preheat oven to 375°F In a medium bowl combine cornmeal, flour, sugar, baking soda, and salt; set aside. Add 1 tablespoon oil to a 10 inch cast iron skillet or 9-inch round cake pan and place in oven for 5 minutes. Remove from oven and swirl oil around to coat bottom and sides.
  • Meanwhile, in a large bowl combine half-and-half, eggs, and remaining oil. Crumble in bacon, then stir in tomatoes, shallot, and rosemary. Add dry cornmeal mixture and stir just until moistened. Pour batter into skillet or cake pan. Bake 30 to 35 minutes or until a wooden toothpick comes out clean.
  • Cut into wedges and serve with softened butter.

Ricotta Toasts With Melon, Corn and Salami image

Fresh cantaloupe and corn star in these meal-worthy toasts. They are mixed with spicy salami to complement their sweetness. You can use any cured meat with a kick, such as black pepper salami, cubed Spanish chorizo or torn soppressata. Whole-milk ricotta, made extra creamy with "milk" scraped from the corn cobs, is spread on crusty bread, then topped with the salad of melon, corn, salami, plus almonds and cilantro. Play with the balance of sweet, spicy, juicy and crunchy by adding fresh chile, thinly sliced cucumbers or snap peas or swapping the melon for stone fruit.

2 ears of corn, kernels removed, cobs reserved
1 cup whole-milk ricotta (8 ounces)
Kosher salt and black pepper
1 cup chopped cantaloupe
1/2 cup chopped spicy or black pepper salami (about 2 1/2 ounces; if using pre-sliced salami, rip into smaller pieces)
1/2 cup cilantro leaves and stems, finely chopped
6 tablespoons roasted, salted almonds or Marcona almonds, coarsely chopped
2 teaspoons Sherry vinegar, plus more as needed
1 baguette or another sturdy bread, like ciabatta

Steps:

  • Use the blunt edge of a knife to scrape any corn milk off the cobs into a medium bowl. Add the ricotta to the corn milk, season with salt and pepper, and set aside.
  • In a large bowl, stir together the corn kernels, cantaloupe, salami, cilantro, almonds and vinegar. Season generously with salt and pepper, then taste and adjust salt, pepper and vinegar until the flavors pop. (The salad will keep covered and refrigerated for up to 5 hours. Add the cilantro and almonds just before serving.)
  • When ready to eat, cut or rip the baguette into 4 pieces crosswise, then cut or rip in half lengthwise through the middle (as if you're making a sandwich). Toast if you'd like. Spoon the ricotta onto the cut sides of the baguette, then top with the salad.

  • Place a rack in middle of oven; preheat to 325°. Lightly coat an 8½x4½" loaf pan with nonstick spray, then line with parchment paper, leaving overhang on long sides.
  • Whisk flour, cornmeal, baking powder, and salt into a small bowl. Using an electric mixer, beat butter and sugar in a large bowl on medium speed until light and fluffy, about 5 minutes. Add eggs and egg yolk one at a time, mixing to fully incorporate before adding the next. Scrape down sides of bowl, add half of dry ingredients, and beat on low speed just to combine. Add sour cream and remaining dry ingredients and mix 1 minute. Scrape down sides of bowl, add ricotta and vanilla, and mix until well combined. Scrape batter into prepared pan; smooth surface.
  • Bake cake 40 minutes. Rotate pan and continue to bake cake until golden brown all over and a tester inserted into the center comes out clean, 20–30 minutes more. (Baking the cake slowly at a lower temperature yields a tender and creamy crumb and will prevent it from drying out.) Let cake cool in pan on a wire rack, at least 1 hour.
  • Carefully run an offset spatula or paring knife around sides of cake and use parchment paper to lift cake from pan; remove parchment. Cut cake into slices and serve topped with whipped cream and/or lemon curd if desired. Do ahead: Cake can be baked 2 days ahead. Store tightly wrapped at room temperature, or freeze up to 2 weeks.
