CHINESE STYLE SESAME SAUCE



Chinese Style Sesame Sauce image

This is the SAUCE for Chinese restaurant style sesame chicken and broccoli. This sauce can be poured over fried chicken, or used as a dipping sauce for fried chicken. I emphasize not using too much vinegar because it turns into a sweet-n-sour type sauce. But you do need a 'touch' of vinegar.

1 cup white sugar
¼ cup cornstarch
1 cup chicken broth
½ cup water
⅛ cup white vinegar
2 tablespoons dark soy sauce
2 tablespoons sesame oil
1 teaspoon chile paste
1 clove garlic, minced

Steps:

  • In a saucepan, mix together sugar and cornstarch. Stir in chicken broth, water, vinegar, soy sauce, sesame oil, chile paste, and garlic. Bring to a boil over medium heat, stirring constantly. Reduce heat, and simmer 5 minutes.

1/4 cup tahini
1/2 cup crunchy peanut butter
1/2 cup freshly brewed tea or water
2 tablespoons chili oil
2 tablespoons sugar
3/4 cup light soy sauce
1/2 cup sesame oil
2 tablespoons finely minced garlic
1/4 cup red wine vinegar
2 tablespoons Chinese black rice vinegar, available in Chinese and Oriental grocery stores and supermarkets
6 tablespoons corn, peanut or vegetable oil
1 1/2 tablespoons roasted Sichuan peppercorns (see note)
Freshly ground pepper to taste
1 cup finely chopped scallions, green and white parts combined

Steps:

  • Combine the sesame paste and peanut butter in a mixing bowl. Start beating with a wire whisk while gradually adding the tea or water. Stir until smooth.
  • Add all the remaining ingredients except the chopped scallions. Cover and refrigerate. This sauce may be made as far in advance as 24 hours. Stir in the scallions just before serving. This can also be used as a cold sauce on cold noodles or poached chicken.

This is a scrumptious sauce over rice or grains, vegetables, or as a marinade for tofu and tempeh(or meat).

2 tablespoons Dijon mustard
3 tablespoons honey
6 tablespoons soy sauce
6 tablespoons dark sesame oil
1/4 cup sesame seeds, toasted in a small skillet
4 -6 garlic cloves, peeled, smashed (or more to taste)
1 teaspoon ground ginger (or 1/2 tsp. minced fresh ginger)
1/4 teaspoon fresh ground black pepper

Steps:

  • Put all the ingredients in a food processor or blender and puree until smooth.
  • Varitation:.
  • Roast or fry a few raw peanuts until golden and use 1/2 cup light peanut flavored oil flavored with 2 tbls. roasted peanut oil.

1/2 cup sesame seeds
1 tablespoon sugar
3 tablespoons vinegar
4 tablespoons light soy sauce

Steps:

  • Toast the sesame seeds in a fry pan over medium low heat, stirring constantly (apprx 5 minutes).
  • Crush with mortar& pestle or in a blender.
  • Mix in remaining ingredients.
  • Store in a bottle in the fridge.

Coarse salt and ground pepper
1 cup long-grain rice, (not converted)
6 scallions, thinly sliced
1 tablespoon toasted sesame seeds
1/4 teaspoon toasted sesame oil

Steps:

  • In a medium saucepan, boil 1 1/2 cups water with 1 teaspoon salt. Stir in rice; return to a boil. Reduce heat to a simmer; cover and cook until rice is almost dry, 15 to 20 minutes. Remove from heat. Let stand, covered, until completely dry, 10 to 15 minutes.
  • Fluff with a fork; toss with scallions, sesame seeds, and sesame oil. Season with salt and pepper.

This is a wonderful sauce from a local restaurant. Its sought after and thankfully they are planning on bottling it but I just couldn't wait and happened to get the recipe from a friend who got it from a former employee. Its super tasty over rice, goes well as a dipping sauce for steak and prawns or whatever you want to try.

6 tablespoons ground sesame seeds
1 tablespoon roasted sesame seeds
1 teaspoon English mustard powder
3/4 cup yamasa soy sauce
3/4 cup vegetable oil
1 garlic clove
1/2 cup chopped onion

Steps:

  • Prepare mustard according to instructions.
  • Mix mustard, soy sauce and oil in blender. You can use any type of soy sauce you like, but tamara can get to salty, so a less salty version is better.
  • Add garlic, onion, ground seseame seeds and blend until smooth.
  • Mix roasted seeds inches.
  • You can substitute whole seseame seeds for the ground but make sure to blend on high for a long time.
  • Warm if desired over low heat.

Adapted from Vegetarian Planet, this is so good served with noodles, as a dip for raw vegetables, or as a sauce for noodles or ravioli.

1/2 cup sesame seeds
2 tablespoons dark sesame oil
2 tablespoons tahini (optional)
1 large garlic clove, minced
1 teaspoon fresh ginger, minced
3 tablespoons rice vinegar
2 tablespoons honey
5 tablespoons soy sauce
1/4 cup water

Steps:

  • Preheat the oven to 350* F.
  • Toast sesame seeds on a baking sheet 10-15 minutes, until most of the seeds turn a rich brown(watch carefully so as not to burn).
  • Let cool.
  • In a spice grinder(or coffee grinder) or food processor, grind about half the sesames seeds in a batches.
  • Combine the ground and whole sesame seeds in a bowl.
  • Add remaining ingredients, and whisk well.
  • Put the sauce into a jar and seal it.
  • Let the sauce sit for 1 hour while flavors mix.
  • You can store sauce in the fridge for up to 2 weeks.
  • Enjoy!
