- In a large bowl, beat butter until creamy. Gradually beat in confectioners' sugar, cocoa and vanilla until smooth, about 3 minutes. Add enough milk until frosting reaches spreading consistency. Beat until light and fluffy, about 5 minutes.

- In the microwave or on in a saucepan, melt together ½ cup of the butter (1 stick) cocoa and milk and stir until smooth. Cool slightly.
- In another large bowl, beat remaining butter and vanilla together, then add cooled cocoa mixture.
- Add confectioners' sugar 1 cup at a time, blending with each addition, until frosting is smooth and creamy. For a stiffer frosting for piping, use all 8 cups of sugar. For a softer frosting for swooping on a cake, use just 7 cups of confectioners' sugar.
- Use this frosting for your recipe of choice. Some suggestions are my: Almond Cake, Black Cat Cupcakes, or this Classic Yellow Cake.

- Preheat oven to 350 degrees. Butter and flour two 8-by-2-inch cake pans, tapping out excess flour. In a medium bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, using an electric mixer, beat butter and sugar until light and fluffy. With mixer on low, beat in eggs and yolks, one at a time. Beat in vanilla. Alternately beat in flour mixture and buttermilk, beginning and ending with flour mixture; mix just until combined.
- Divide batter between pans; smooth tops. Bake until cakes pull away from sides of pans, 32 to 35 minutes. Let cool in pans 10 minutes. Run a knife around edges of pans and invert cakes onto a wire rack. Let cool completely.
- Place one cake, bottom side up, on a cake stand. Tuck strips of parchment paper underneath. Using an offset-spatula or table knife, spread top with Whipped Frosting. Top with remaining cake; frost top, then sides.

CHOCOLATE FROSTING
Steps:
- Melt your butter and unsweetened chocolate in short increments in the microwave, or using a double boiler.
- In a large bowl add the powdered sugar, vanilla and the melted chocolate mixture.
- Whip together with a stand mixer or hand mixer until all combined.
- Add in half of the milk and continue mixing, adding more milk if needed to reach fluffy frosting consistency.

ANGEL FOOD CAKE WITH WHIPPED CHOCOLATE FROSTING
This Angel Food Cake with Whipped Chocolate Frosting is light as a cloud. The frosting is made with freshly whipped cream and plenty of cocoa for a rich chocolate taste. This is a simple recipe my family has been making for decades.

- You can either make the angel food cake from a mix (you just add water), or purchase pre-made from a grocery store. A few notes on making angel food cake: you need to let it cool completely in the pan and you need to let it cool upside-down or on its side. My mother also told me not to use a silicone pan because the cake can't cool property in a silicone pan. Once the cake is completely cooled, remove it from the pan. Then using a serrated knife, cut the top off of the cake, starting from about 1 inch down from the top of the cake. See the photos and this is make much more sense. Then use the knife to cut out some of the inside of the cake. Next, make the frosting. Combine the whipping cream, sugar, cocoa, salt, and vanilla. Beat with a mixer until stiff. Fill the scooped out section of the cake with frosting and raspberries. Place the top back on the cake. Frost the cake! Top with toasted almonds with you like. Keep the cake chilled until you are ready to serve it.
RICH DARK CHOCOLATE CAKE WITH RED WINE CHOCOLATE FROSTING
I was looking for a light, rich chocolate cake that wasn't too sweet and was easy to make. I couldn't find one, so I took a couple of different recipes and doctored them to make this. It came out just as I wanted; light and fluffy without being too sweet. The red wine frosting makes it for grown ups only (at least that's what you can tell any kids that are after some!). If you prefer a more traditional sweetness, simply add more sugar - I'd suggest increasing by a third (ie to 400g). The frosting should be enough to put a layer between the two cakes and some on top. You may also like to slice each cake in two to add two more layers of frosting if you're feeling decadent - just increase the quantities.

- Pre-heat the oven to 180°C Line two cake tins with parchment paper and grease.
- In a large bowl, mix together the flour, sugar, cocoa powder, bicarbonate of soda, baking powder, salt and coffee granules (ie all the dry ingredients).
- Make a well in the middle and add all the liquid ingredients.
- Use a whisk to mix together until completely blended. Don't be alarmed at how runny it is - it's much thinner than a normal cake mix!
- Pour into the two prepared tins and place in the oven for 30-40 minutes, until cooked through - the longer you leave them, the drier they will be. I found 30 minutes to be fine for a light, moist cake, but it will depend on your oven. Use a skewer inserted into the middle to make sure the cake is cooked through. If it comes out clean, you should be fine.
- Turn the cooked cakes out onto a cooling rack and place to one side.
- While they cool, make the frosting: Put the butter, icing sugar and cocoa powder in a bowl and cream together until light and fluffy. Add the cream cheese and mix well. Then, add the red wine a little at a time until it gets a little runnier. Give it a taste; you want to just be able to taste the wine without it being overpowering. Place in the fridge for a few minutes to let it stiffen up slightly.
- When the cake has cooled, spread the frosting on the top of one layer and place the other on top.
