CRANBERRY RICE WITH CARAMELIZED ONIONS
Rice provides so many options to a creative cook-the stir-in ideas are endless. In this recipe, dried cranberries star. Their sweet-tart flavor accents my rice combination and gives a festive feel to everyday meals.

- In a large saucepan, bring broth to a boil. Add the wild rice. Reduce heat; cover and simmer for 10 minutes. Add the brown rice; cover and simmer for 45-50 minutes or until rice is tender and liquid is absorbed., In a large skillet over medium heat, cook the onions and brown sugar in butter until golden brown, stirring frequently. Add the cranberries, orange zest and rice; heat through.

Steps:
- Combine chicken broth and both rices in medium saucepan.
- Bring to a boil over medium-high heat.
- Reduce heat to low.
- Cover and simmer 45 minutes or until rice is tender and the liquid is absorbed.
- Meanwhile, melt butter in a medium skillet over medium-high heat.
- Add onions and brown sugar.
- Cook 6 minutes or until liquid is absorbed and onions are soft and translucent.
- Reduce heat to low and slowly cook onion, stirring often for 25 minutes or until they are caramel color.
- Stir in dried cranberries.
- Cover and cook over low heat for 5 minutes or until cranberries swell.
- Gently fold cranberry mixture and orange zest into cooked rice.

- Bring chicken broth to a boil in a large saucepan. Add the wild rice mixture. Cover the saucepan and reduce the heat. Simmer for 10 minutes.
- Add the brown rice, simmer and cover for 45-50 minutes. The rice is done when it's tender and the liquid is absorbed.
- In a large skillet, melt the butter and add the brown sugar and onions. Cook until golden brown, stirring frequently.
- Add the cranberries, grated orange peel, and rice mixture to the onions and heat through.

- Mix all ingredients except almonds and cranberries in a crock pot.
- Cover and cook on LOW for 4 to 5 hours or until wild rice is tender.
- Meanwhile, cook almonds in ungreased heavy skillet over medium-low heat for 5 to 7 minutes, stirring frequently until they start to brown, then stir constantly until golden brown; set aside.
- When rice is tender, stir almonds and cranberries into rice mixture in crock pot.
- Cover and continue cooking on LOW for 15 minutes.

CARAMELIZED ONION RICE
I wanted a rice recipe that was easy and relatively quick to make brown rice more tasty. This is what I came up with. :-) I've used long-grain brown rice and brown basmati rice for this, but you could also use white rice. Great for any meal you would use rice in.

Steps:
- Melt butter in skillet and sauté onions until softened and lightly browned. Add garlic, sauté 1 minute.
- Add brown sugar and sauté until caramelized-looking, 3-4 minutes.
- Mix rice, broth and onion mixture and cook in rice cooker.
- Note: I like my rice slightly crunchy and not soggy so if you like yours softer add 1/4- 1/2 cup of extra broth.
