HEAVENLY RICE HASH DESSERT
A combination of rice, fruit, marshmallows and cream, this is traditional Swedish dessert and is a favorite at our house- my kids loved this growing up and still do!

- 1. Combine marshmallows, rice, fruit and nuts. Whip cream, gradually adding sugar and vanilla; fold into rice mixture. Chill.

Steps:
- Preheat oven to 350.
- Grease and flour 2 8x4 inch Baking Pans and set aside.
- Combine coffee and hot water, stirring until dissolved; set aside.
- Combine eggs, honey, and oil in a large mixing bowl. Beat at medium speed with electric mixer until well blended.
- Stir in dissolved coffee, sugar and vanilla.
- Combine flour, baking powder, baking soda, cinnamon, and nutmeg in a small bowl. Gradually add to egg mixture, beating at low speed until blended.
- Pour batter into pans, filling ech halfway.
- Bake for 45 min or until toothpick inserted in the center comes out clean.
- Turn off oven; leave cake in oven for 10 min to gradually cool (prevents cake form falling).
- Remove cake from pans and allow to completely cool.

- Heat oil in a large skillet over medium heat. Fry onion in oil until translucent. Transfer to a medium bowl, and mix with mashed potatoes and corned beef. Season with salt and pepper. Form into 8 patties. Fry patties in the skillet over medium-high heat until golden brown on both sides.

ASIAN RICE CAKES

- In a small saucepan, cook the rice with the water, covered, for 20 minutes. Stir occasionally. When rice is cooked add remaining ingredients. Let cool slightly and shape into desired shapes.
- In a hot, nonstick skillet, spray with cooking spray and brown rice cakes on both sides until golden brown. Place on sheet pan and keep in a hot oven. Serve as needed.
RICE CAKE

- Preheat the oven to 400 degrees F.
- Cook the rice until the 'al dente' stage as it will finish cooking in the oven. Allow to cool. Heat up 2 tablespoons olive oil in a saucepan. Add the pancetta, salami, and onions. Cook until golden and crispy.
- Cook the peas in a pot of salted water for approximately 2 minutes, or until soft. Add to the pan mixture and toss the ingredients together. Transfer the rice to a large bowl. Add an egg, Pecorino cheese, grated Parmigiano, diced Parmigiano, scamorza, salt, pepper, and the pancetta mixture with all its juices to the rice and thoroughly mix.
- Grease a baking dish with the remaining 2 tablespoons olive oil and sprinkle half the bread crumbs to the base of the pan. Spread the mixture onto the baking pan, packing the mixture so it serves as a solid bed. Sprinkle the remaining bread crumbs on top. Bake for 20 minutes or until the rice cake is golden.

We serve this with thick slices of Texas Toast that we lightly toast during the last several minutes that the Texas Hash is baking.

- Lightly spray a 9x13-inch baking dish with a cooking spray (Pam, or similar); set aside. Preheat oven to 375º.
- Sauté the beef, onion and celery in a large skillet over medium heat until no pink remains in the beef and the onions are clear. Place the meat mixture in a colander to let the excess grease drain.
- Return the meat mixture to the skillet. Add the tomatoes, green pepper, rice, garlic and all remaining ingredients (spices/herbs) to the skillet. Stir well.
- Pour the meat/rice mixture into the prepared 9x13-inch baking dish. Cover the baking dish, and bake in a 375º oven for 30 minutes, or until the rice is cooked and soft.

- Rinse your sticky rice and short grain rice and drain excess water. Add 2 ½ cups water and use a rice cooker to cook it. If you don’t have a rice cooker, follow the directions on the package.
- Finely mince the ground pork (really make sure it’s mashed up, almost like a paste) and transfer to a mixing bowl. Add ½ tablespoon soy sauce, ½ teaspoon 5 spice powder, ½ teaspoon salt and mix until combined. Heat a splash of oil in a wok using high heat, and stir-fry the ground pork, breaking up any clumps, until browned. Keep the pork in the wok and set aside.
- When the rice is cooked, take it out of the pot to cool until just warm and transfer to the wok with the pork, add the scallion and ¾ teaspoon salt. Using a spatula, fold and combine the mixture until everything is uniformly distributed.
- Line a small sheet pan or shallow casserole dish with plastic wrap. Pour 1 tablespoon of oil into the lined pan and coated the plastic wrap evenly. Pour the rice mixture into the pan and use the spatula to spread the rice evenly onto the pan, creating a large rectangular cake about 1 inch thick. You may have to dip the spatula in water to prevent the rice from sticking.
