RICE AND HOT DOGS SOUP
This is a great, easy to make soup, which is actually a meal in itself. Great for cold winter nights. I like to use spicy hot dogs.

Steps:
- Heat the oil in a large pot over medium heat. Add the onion and saute for 5 minutes. Add the rice and saute for 1 more minute, or until onion is tender. Add the hot dogs and the tomato paste OR diced tomatoes. Cover mixture completely with water.
- Stir in the paprika, chicken bouillon granules, turmeric, cumin and parsley and season with salt and pepper to taste. Continue to cook over medium heat for 20 minutes, or until rice is completely cooked.

- Place wok over high heat until hot. Add 2 tablespoons oil, swirling to coat sides. Add eggs, salt and pepper and lightly scramble. Remove scrambled eggs and set aside. Add sliced hot dogs and stir fry for 2 minutes. Add remaining 1 tablespoon oil. Add rice; stir fry with hot dogs for 2 minutes.
- Add peas and carrots; stir to mix well. Add soy sauce ,green onions, and scrambled eggs; stir-fry until heated throughout, about 2-3 minutes.

HOT DOG SOUP
A different twist on the hotdog soup. This is a fast, fun and very kid friendly meal. I have my daughter help me make this and she feels proud that she 'cooked' a meal with me. And then she gets to sprinkle the parmesan cheese in the bowls. The cream cheese makes the soup creamy and smooth and gives it a 'comfort food' feeling (I use a non-dairy 'cream cheese'). And for us, this is salty enough, so I don't add salt. I like to serve this with warm biscuits. Perfect for on a cold winter evening. Enjoy! :-)

- Place the onion and butter in a large saucepan over medium heat. Slowly cook and stir until the onion is soft.
- Mix in the tomato sauce, chicken broth, water, mixed veggies,frankfurters and spices.
- Bring to boil, reduce heat, cover and simmer 15 minutes.
- Add cream cheese and mix until well blended.
- Add cooked rice and simmer for 5 more minutes until warmed through.
- Remove bay leaf before serving.
