RHUBARB COFFEE CAKE
This recipe says spring. It is easy to prepare and even easier to eat. My family devours it and we are not dessert people. It is from the Company's Coming cookbook series.

Steps:
- Preheat oven to 350°F.
- Cream butter and sugar together in mixing bowl.
- Beat in eggs one at a time.
- Stir in sour cream and vanilla.
- Mix flour and baking soda together and fold into batter.
- Stir in rhubarb.
- Turn into greased 9x13-inch pan.
- Topping: Mix all ingredients together until crumbly.
- Sprinkle over top.
- Bake 30-40 minutes until done.

- In a large mixing bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla; mix well. , In a bowl, combine the flour, baking powder, baking soda and salt. Add to the creamed mixture alternately with the sour cream. Fold in rhubarb. Spread into a greased 13x9-in. baking dish. , For topping, in a small bowl, combine the brown sugar, flour and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle over the top. , Bake at 350° until a toothpick inserted in center comes out clean, 45-50 minutes. Cool on a wire rack.

RHUBARB/RASPBERRY COFFEE CAKE
I honestly don't know where I got this recipe but it's soooo good. The tartness of the rhubarb with the sweetness of the raspberry jello really wakes up the tastebuds. I use sugar free raspberry jello but you can use what you have on hand. Serve room temp or warm with ice cream.

- 1. In large bowl,whisk together the brown sugar, egg, sour cream, oil, and buttermilk. Add the flour, baking powder, baking soda, and salt to the liquid mixture and blend everything with large spoon. (I use a wooden one) Set aside. In saucepan, saute the rhubarb with 1/4 cup water and the raspberry jello. Stir and cook until rhubarb is just tender,about 5 minutes. Take off heat and drain about 1/2 the jello water off the rhubarb. Pour in the batter and mix thoroughly. Mix all the topping ingredients in a food processor (pulse). Pour batter in greased 9x13 baking dish. Sprinkle the topping evenly on top of batter. Bake in preheated 350 degree oven for 50-55 minutes. Check for doneness with toothpick in center. NOTE: The raspberry jello in the rhubarb not only sweetens the rhubarb (so don't add any sugar) BUT it gives a nice pink color to the batter and finished cake.
MADE OVER RHUBARB COFFEE CAKE
A tasty rhubarb coffee cake that is just as good for dessert as it is for breakfast! The cake is reduced fat and sugar, plus adds wheat flour for whole grain goodness. The low-fat vanilla yogurt gives the cake its moist texture. It's a snap to put together and makes enough for a crowd. I often bring it for dessert to potluck picnics in the spring during rhubarb season.

- Preheat oven to 350 degrees and grease 13x9 baking pan.
- Cream butter, baby food and sugars together.
- Beat in egg whites one at a time.
- Stir in yogurt and vanilla.
- Mix flours and baking soda together and fold into batter. (If batter seems too thin, add more wheat flour a little at a time).
- Stir in rhubarb.
- Turn into prepared pan.
- Topping: Mix brown sugar, flour and cinnamon. The cut in butter. Sprinkle over top of prepared batter.

THEY WON'T KNOW RASPBERRY COFFEE CAKE
They won't know that this raspberry coffee cake is low calorie and low fat. The only thing they will know is that you are an excellent baker and this cake is delicious. I usually do not bother with the glaze. The recipe loses nothing if you opt for a glaze free coffee cake. Enjoy! P.S. This is 3 points per slice.

- In a bowl, combine the flour sugar, baking powder, baking soda, and salt.
- Combine the egg, yogurt, butter, and vanilla: add to dry ingredients just until moistened.
- Spoon two-thirds of the batter into an 8-in round baking pan (a pie or cake pan work great for this) coated with non-stick cooking spray.
- Combine the brown sugar and raspberries; sprinkle over batter.
- Spoon the remaining batter over the top.
- Sprinkle with almonds.
- Bake at 350°F for 35-40 minutes or until cake springs back when lightly touched and is golden brown.
- Cool for 10 minutes before removing from pan to a wire rack.
- In a small bowl, combine the glaze ingredients.
- Drizzle over coffee cake.
- Serve warm or at room temperature.

- FILLING.
- Combine rhubarb, strawberries and lemon juice in saucepan.
- Cover and cook for about 5 minutes on medium heat.
- Combine sugar and cornstarch.
- Stir into strawberry mixture.
- Bring to boil, stir constantly until thickened, remove from heat.
- CAKE.
- In large bowl, combine flour, sugar, baking powder, baking soda and salt.
- Cut in butter with pastry blender until resembles coarse crumbs.
- In separate bowl, beat together buttermilk, eggs and vanilla.
- Stir into crumb mixture.
- Spread half evenly into greased 9x13x2-inch baking dish.
- Carefully spread strawberry filling over batter.
- Drop remaining batter evenly over filling with a tablespoon.
