RHUBARB SHORTBREAD STREUSEL BARS
My absolute favorite in spring: Rhubarb Shortbread Bars with Streusel Topping. So fresh and delicious!

Steps:
- Start with marinating the rhubarb. Wash and dry the rhubarb and cut into small dices. Add together with the smashed raspberries to a bowl and mix with 2 tbsp. of the sugar - cover and let sit for about 1 hour.
- p id="instruction-step-2″>2. While the rhubarb is marinating prepare the streusel. Line a 9×9 inches (22x22cm) square baking tin with some baking parchment and set aside. Add flour, sugar, and salt to a large bowl and mix to combine. Add the butter in small pieces as well as the vanilla extract and mix everything with your hands until you get different sized streusel - make sure there is no more flour on the bottom of the bowl. Take a little bit more than half of the streusel and transfer it to the prepared baking tin. Press to the bottom and into the corners to get one even layer, prick several times with a fork. Place with the remaining streusel in the fridge until the rhubarb is ready - at least 20 minutes.
- ="instruction-step-3″>3. Preheat the oven to 375°F (190°C). Bake the crust for about 15 minutes until it gets some color around the edges. Take out of the oven and lower the temperature to 350°F (180°C). Let cool down for a bit.
- struction-step-4″>4. Drain the rhubarb if there is a lot of liquid - some is ok though. Add the lemon juice and sugar and mix to combine. Sprinkle the flour on top and mix until all is well combined. Pour that filling on top of the baked crust and spread evenly. Sprinkle with the streusel from the fridge and bake for 40-50 minutes or until the streusel have a nice golden color and the filling is bubbly. Take out of the oven and let cool down completely before removing it from the tin.
- ruction-step-5″>5. If you want to add the glaze on top (optional), mix the confectioners' sugar with 1 tsp. of the milk and the vanilla extract and add more milk until the consistency is nice and thick and not too runny. Drizzle over the rhubarb bars and let harden/dry before slicing.
RHUBARB CRUMB BARS
Rhubarb and strawberries are a great match. You can substitute half the rhubarb with an equal weight of quartered berries.

- Preheat oven to 350 degrees. Butter an 8-inch square baking pan. Line with parchment paper, leaving a 2-inch overhang on two sides. Butter and flour parchment and pan, tapping out excess flour.
- Make streusel: Whisk together butter, brown sugar, and salt. Add flour and mix with a fork until large crumbs form. Refrigerate until ready to use.
- Make cake: In a medium bowl, combine rhubarb, brown sugar, and 1/4 cup flour. In another medium bowl, whisk 3/4 cup flour, baking powder, and salt. In a large bowl, using an electric mixer, beat butter and confectioners' sugar until light and fluffy; beat in eggs, one at a time. With mixer on low, beat in vanilla, then flour mixture. Spread batter in prepared pan. Sprinkle with rhubarb and top with streusel.
- Bake cake until golden and a toothpick inserted in center comes out with moist crumbs attached, 45 to 50 minutes. Let cool completely in pan. Using paper overhang, lift cake from pan. Cut into 16 bars.

- Preheat oven to 350 degrees F (175 degrees C).
- Mix 1 cup flour, butter, and confectioners' sugar together in a bowl; pack the mixture firmly into the bottom of a 9-inch square baking dish.
- Bake in preheated oven until the crust hardens slightly and is very fragrant, but not yet browned, about 15 minutes.
- Whisk brown sugar, eggs, white sugar, 1/4 cup flour, and salt together in a bowl until completely smooth; add rhubarb and stir to coat. Pour the rhubarb mixture over the crust.

- Preheat oven to 350 degrees F. Line 8x8x2-inch baking pan with heavy foil extended beyond pan edges.
- In large bowl stir together oats, the 1 cup flour, and brown sugar. Cut in butter until mixture resembles coarse crumbs. Set aside 1 cup oats mixture. Press remaining on bottom of prepared pan. Bake 25 minutes.
- Meanwhile, in medium bowl stir together granulated sugar, 2 tablespoons flour, and ground ginger. Add rhubarb; toss to coat. Spread on hot crust. Sprinkle reserved oats mixture; press lightly.
- Bake 30 to 35 minutes, until top is golden and filling is bubbly. Cool on rack. Drizzle icing, sprinkle crystallized ginger. Lift from pan; cut into bars. Store, covered, in refrigerator up to 2 days. Makes 16 bars.

RHUBARB STREUSEL PIE

- Roll out the pastry and use to line a deep 23cm/9in flan tin. Chop the rhubarb into 3cm/1in lengths and tip into a large bowl with the flour and sugar. Mix well, then tip into the pastry case, spreading the rhubarb to level it.
- To make the topping, mix together the flour, cinnamon, sugar and nuts. Add the butter, cut into small pieces, and rub in with your fingertips until the mixture resembles coarse breadcrumbs. Sprinkle evenly over the top of the rhubarb. Set aside until ready to bake, up to 6 hours.
- Preheat the oven to 190C/Gas 5/fan oven 170C. Bake the pie for 40-45 minutes until the topping is crisp and golden and the rhubarb is tender - test by spearing a piece of fruit through the topping with a knife. Serve warm or cold with single cream or vanilla ice cream.

- Preheat oven to 350°F.
- Combine butter, flour, oats and brown sugar until crumbly.

- Preheat oven to 350*.
- Generously grease a 13x9 pan or coat with nonstick spray.
- For the filling: in a medium heavy nonreactive saucepan, stir together the sugar and cornstarch till well blended. Stir in the rhubarb, jam or preserves, cinnamon and orange zest, is using. Bring to a simmer, stirring over medium high heat. Cook, stirring, for 3-6 minutes or until rhubarb softens just slightly, fresh rhubarb will take longer than thawed frozen. Set aside. For the crumb mixture; In a large bowl, thoroughly stir together the flour, oats, sugar, cinnamon and salt. Add the butter and stir or knead with your hands till the mixture is well blended and crumbly. Firmly press a scant half of the crumb mixture into the baking dish; set aside the remaining crumb mixture. Bake in the middle of the oven for 13-16 minutes or until firm but not browned. Spread the rhubarb filling evenly over the crumb layer.
- Stir together the reserved crumb mixture and 2 1/2 tbls of the egg mixture until the streusel forms small clumps; add a little more of the egg mixture if needed.
- Sprinkle the streusel evenly over the filling, breaking up any large clumps with a fork or your fingertips.
- Bake in the middle of the oven for 35-40 minutes, or until the streusel is nicely browned and the filling is bubbly.
- Transfer the pan to a wire rack and let stand until completely cooled.
- Using a large sharp knife, cut into 20 bars -- wipe the knife clean between cuts.
- Store in an airtight container for up to 2 days. The bars may be frozen for up to 1 month, but will lose their crispness.
