1 Pumpernickel Bagel OR 2 slices Marbled Rye, lightly toasted
1-2 slices Swiss cheese
1/2 cup corned beef, sliced or shredded, warmed
1/3 cup Frank's Kraut, warmed with 1/4 teaspoon caraway seeds
1 egg, scrambled or fried
1-2 Tablespoons Thousand Island Dressing

Steps:

  • Toast bread or bagel.
  • Warm corned beef and sauerkraut while you are preparing your egg. If using a "scrambled egg," prepare by whisking a couple Tablespoons of milk into the egg. Prepare egg "omelet style" -Pour into a small frying pan coated with non-stick cooking spray. Over medium-high heat, let egg cook until you can easily flip it over. Carefully fold into quarters.
  • Stack like this from bottom to top: bagel/bread, cheese, egg, corned beef, kraut, dressing, top bagel/bread slice.
  • Enjoy warm.

The Reuben Breakfast Sandwich is loaded with flavor and makes breakfast exciting again!

1/4 pound corned beef or pastrami (thinly sliced )
2 Swiss cheese (1 ounce slices, )
2 eggs
1/4 cup sauerkraut (drained)
2 tbsp Thousand Island dressing
2 sour dough Thomas' English Muffins (toasted)

Steps:

  • Heat a large skillet or griddle over medium-high heat and lightly coat with non-stick spray. Cook the corned beef or pastrami slices (in two equal size piles), turning occasionally, until slightly crisped and fragrant.
  • Just before the corned beef or pastrami is done, top each pile with a slice of Swiss cheese. Coat the skillet again with non-stick spray if needed and cook the eggs to your liking, season with salt and pepper if desired.
  • Divide the Thousand Island dressing between each toasted English muffin. Top with the cheese covered corned beef, the egg, and the sauerkraut. Enjoy!

1 slice swiss cheese
2 slices dark rye or 2 slices pumpernickel bread
4 tablespoons sauerkraut
1 1/2 tablespoons thousand island dressing
3 tablespoons butter

Steps:

  • Put two slices corn beef and 1 swiss cheese on one piece of bread.
  • Heap on sauerkraut, spread dressing over sauerkraut.
  • Put on other 2 slices of corned beef, top with other piece of bread.
  • Melt butter in skillet or on griddle over medium heat, grill sandwich on both sides
  • serve warm.

3 tablespoon bottled Thousand Island or Russian salad dressing
6 ounce thinly sliced cooked corned beef, beef, pork, or ham

1 cup sauerkraut, well drained

2 tablespoons swiss, shredded
2 tablespoons sauerkraut, squeezed and drained, coarsely chopped

1 tablespoon russian or thousand island dressing
1 egg, fried

Steps:

  • Place the corned beef on one slice of muffin, top with the swiss and broil to melt the cheese, about 1-3 minutes.

2 tablespoons butter, softened
8 slices rye bread
8 slices swiss cheese
3/4 lb corned beef brisket, thinly sliced
1/2 lb sauerkraut
1/4 cup Russian salad dressing

Steps:

  • Butter one side of four slices of bread, and place the slices buttered-side down on a large piece of wax paper on a flat surface. Top each with a slice of Swiss cheese, and then divide half of the corned beef among them.
  • Using paper towels, squeeze out excess moisture from the sauerkraut. Divide the sauerkraut among the sandwiches, and top each with one tablespoon of Russian dressing. Add another layer of corned beef and a second slice of Swiss cheese to each sandwich. Top with the remaining bread slices; butter the side facing out.
  • Preheat a griddle or frying pan to medium heat. Cook the sandwiches on one side until the bread is golden brown. Use a spatula to carefully flip the sandwiches over and finish cooking on the second side. Cut the sandwiches in half before serving.

1 cup sauerkraut, drained
1/2 cup thousand island dressing

  • 1. Preheat a large skillet or griddle on medium heat.

  • My Update Notes: I drained the sourkraut but didn't rinse it, because we like the tangy taste of the sourkraut. I buttered rye bread slices on one side and spread Thousand Island dressing on the other side. On the dressing side I placed a slice of swiss cheese, sliced Pastrami from the deli and then topped with sourkraut. I cooked them on my grill until the cheese was melted and the bread was nice and toasted. They were delicious! I only gave the four star rating because the sourkraut in the middle wasn't very warm. Next time I make these I will warm the sourkraut in the microwave first and maybe add another slice of swiss too! I made was to heat the sauerkraut in the microwave for 20 seconds before adding to the sandwich. I like my sandwich warmed all the way through. I would recommend keeping a good eye on your bread and toast it to your liking. If you like Rueben sandwiches you will love this one!

to taste swiss cheese, thinly sliced
to taste sauerkraut, well-drained (put the sauerkraut in paper towels to remove the moisture)
to taste French dressing

Steps:

  • Butter the rye bread on one side like for a grilled cheese sandwich.
  • Place thin slices of the corned beef on the bottom slice of bread, cheese then sauerkraut on top of the cheese.
  • Top with the other slice of buttered bread and grill in a skillet over med. heat until browned on one side.
  • Flip over and brown the other side until the cheese has melted.
  • Serve the French dressing either on the side or open the sandwich's and put as much as you like on. You can put as much or as little of the beef, cheese and sauerkraut as you like
