THE BEST PUMPKIN BREAD
This pumpkin bread is perfectly moist, not-too-sweet and couldn't be easier. It's perfect for toasting and slathering with butter or cream cheese, and maybe a drizzle of honey or maple syrup.

Steps:
- Preheat oven to 350 degrees F. Butter and flour two 9-by-5-inch loaf pans.
- Whisk together the sugar and oil in a large bowl until well combined. Whisk in the eggs and pumpkin until combined.
- Combine the flour, salt, baking soda, baking powder, nutmeg, allspice, cinnamon and cloves in a medium bowl and whisk until well combined. Add half the dry ingredients to the pumpkin mixture and stir to combine. Add half the water and stir to combine. Repeat with the remaining flour and water.
- Divide the batter between the prepared loaf pans. Bake until cake tester comes out clean and the loaves are golden brown, about 1 hour. Let the loaves cool in the pans on a wire rack for 10 minutes. Remove from the pans and let cool completely, about 1 hour.

- Preheat oven to 350°F.
- Cream sugar, oil and applesauce together.
- Add eggs. Mix well.
- Add spices, vanilla and pumpkin.
- Mix flour, baking soda and salt.
- Alternately add flour mixture and water or apple juice. Mix well.
- Pour into 3 greased small bread loaf pans or 1 greased large bread pan.
- Bake at 350F degrees for 30 minutes for smaller loaves or 45-55 minutes for large loaf.

- Preheat oven to 350 degrees.
- Grease and flour two 9X5 inch loaf pans.
- Combine flour, cinnamon, baking soda, and salt in large bowl.
- Combine sugar, splenda, pumpkin, eggs, applesauce and apple juice in large mixer bowl; beat until blended.
- Add pumpkin mixture to flour mixture; stir just until moistened.
- Spoon batter into loaf pans.
- Bake until toothpick inserted in center comes out clean, about 60-70 minutes.
- Cool in pans for 10 minutes then remove to wire racks and cool completely -- or eat warm.
- Makes about 2 1/2 dozen muffins if done that way.

Steps:
- Preheat oven to 350°; spray an 11x13 (jelly roll) pan with non stick pan spray.
- Place eggs, sweetener, sugar, oil, and pumpkin in a large mixing bowl and beat at medium speed until smooth, set aside.
- In a medium bowl, stir flour, cinnamon, baking powder, baking soda, and salt together to blend, then add to creamed mixture; mix at medium speed until creamy again; spread batter in the 11x14 pan and bake for 25 minutes or until a cake tester comes out clean from the center of the pan.
- Place pan on a wire rack and cool to room temperature; cut four by six.
- You may serve with low-sugar pudding or low-sugar whipped topping, if desired.

- Grease a loaf pan, and set aside.
- Combine flours, salt, pumpkin spice, and baking powder in a med sized bowl.
- Combine egg, cannola oil, splenda, pumpkin, and apple sauce in another bowl.
- Mix wet mixture until well blended, slowly add in dry mixture.
- When well mixed, pour into loaf pan.
